My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

1 lb ground beef or 1 lb ground turkey
2 onions, diced
1 green pepper, diced
1 tablespoon jalapeno, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water
sour cream
cheddar cheese
green onion

Steps:

In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
Serve with desired toppings.

Ingredients

2 pounds ground beef
1 teaspoon butter
2 large white onions, chopped
2 green bell peppers, seeded and chopped
1 habanero pepper, chopped
3 (15 ounce) cans kidney beans, drained
3 (15 ounce) cans tomato sauce
1 tablespoon chili powder
2 teaspoons salt
½ teaspoon garlic salt
1 drop super-hot hot pepper sauce

Steps:

In a large pot, cook the ground beef over medium heat until evenly browned. Drain off grease, and set aside.
Melt butter in a skillet over medium heat. Saute the onions, green pepper and habanero pepper until onions are translucent. Remove from heat. Transfer the onion mixture to the pot with the ground beef, and set the heat to medium.
Add the kidney beans and tomato sauce to the beef mixture, and season with chili powder, salt, garlic salt and hot pepper sauce. Bring to a simmer, and adjust seasonings to taste if necessary. Cover, reduce heat to low, and simmer for 1 hour, stirring occasionally.

2.5 lbs. ground beef
1 Tbsp salt
1 Tbsp Watkins Black Pepper
1 large yellow onion, diced
2 Tbsp minced garlic
1/4 cup Watkins chili powder
2 Tbsp paprika
1 Tbsp cayenne pepper
1 Tbsp sugar
1/2 Tbsp cumin
1/2 Tbsp parsley
2 Tbsp Worcestershire sauce
1 (28 ounce) can diced tomatoes
1 (32 ounce) container tomato juice
2 (14 oz) cans chili beans

Steps:

Brown ground beef in large kettle with salt and pepper. Add onions and garlic; simmer until onions are translucent. Add rest of spices and Worcestershire sauce; stir well. Add tomatoes, beans and tomato juice. Simmer for 30 minutes.

Heat a large pot over medium-high. Add the ground meat and brown all over, until cooked through. Add the red onion, garlic, and the J.R. Watkins chili seasoning to the meat and stir to combine. Let it cook about five minutes, letting the onions and garlic soften and bloom. Add the tomato paste, and stir it into the meat. Then add the beer. Stir a minute or so more, to incorporate all the flavors.
Add the tomatoes, beans, and beef stock, stirring to combine. Reduce the heat to medium-low, and simmer for about an hour, stirring once in a while. Taste it. SO GOOD. Doesn’t even need salt!
Ladle the chili into bowls, and garnish with avocado slices, cilantro, dollops of sour cream, shredded cheese, and lime wedges. Perrrrfection.
