12 ounces canned chunk solid white tuna packed in water, drained
1/2 cup celery, finely diced
2 tablespoons fresh parsley, chopped
2 tablespoons reduced-calorie mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • bine tuna, celery and parsley in a medium bowl. Add mayonnaise, mustard, salt and pepper; stir to combine. Yields about 1/2 cup per serving.
  • For a flavor boost, add 1/4 cup of diced black or green olives (does not increase the recipe's points value).

1/2 cup reduced-calorie mayonnaise
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1 cup celery, chopped
1/3 cup red onion, finely chopped
2 tablespoons fresh parsley, chopped
1/8 teaspoon table salt (or more)
1/8 teaspoon black pepper, freshly ground (to taste)

Steps:

  • Cook macaroni according to package directions; drain and transfer to a large bowl.
  • In a medium bowl, whisk together mayonnaise, vinegar, mustard and garlic powder; stir mixture into cooked macaroni.
  • Fold in celery, red onion and parsley.
  • Season to taste with salt and black pepper.
  • Serve warm or chilled.
  • Yields about 2/3 cup per serving.
