1/2 cup onion, sliced vertically
2 garlic cloves, minced
5 cups broccoli florets
cooking spray
1 1/4 cups nonfat milk
1 cup shredded reduced-fat cheddar cheese (4 ounces by weight)
2 tablespoons chopped fresh parsley
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon ground nutmeg
4 large egg whites, lightly beaten
2 large eggs, lightly beaten
1 tablespoon grated fresh parmesan cheese

Steps:

  • Preheat oven to 350°.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic; sauté 1 1/2 minutes. Add broccoli; sauté 1 minute.
  • Spread broccoli mixture into a 9-inch pie plate coated with cooking spray.
  • Combine milk, cheese, parsley, mustard, salt, pepper, nutmeg, eggs whites and eggs in a large bowl. Pour mixture over broccoli mixture; sprinkle with Parmesan.
  • Bake at 350° for 40 minutes or until top is golden and a knife inserted in center comes out clean; let stand 5 minutes before slicing.

This is a recipe I came up with because I love broccoli and I like to stick to 3-4 pts for breakfast when I am on Weight Watchers. This quiche and 1 low fat english muffin keep me full until lunch.

3/4 cup Egg Beaters egg substitute (or other egg substitute)
1 1/2 cups 1% low-fat milk
3/4 cup bisquick low-fat baking mix
1 teaspoon salt
1/4 teaspoon ground black pepper
2 garlic cloves, chopped
20 ounces frozen chopped broccoli (or spinach)
1 medium onion, chopped
1 medium red pepper, chopped
4 ounces part-skim mozzarella cheese

Steps:

  • Thaw, rinse and drain broccoli.
  • Put 1/2 of broccoli in 11x7 glass pan sprayed with Pam.
  • Put 1/2 onion, 1/2 pepper and all of cheese on top of that.
  • Put remaining broccoli, onion and pepper on top of that.
  • Blend egg beaters, milk, bisquick, salt, pepper and garlic in a blender until smooth.
  • Pour mixture over broccoli in pan.
  • Bake at 400 degrees for 50 minutes or until lightly browned.
  • Cut into 6 pieces when cool.

  • Place oven rack in lowest position of oven. Preheat oven to 350°F. Coat a 9-inch glass round pie dish with cooking spray.
  • In a large pot of boiling, salted water, cook broccoli until bright green and crisp-tender, 1-2 minutes; drain and rinse well with cold water. Dry broccoli thoroughly with paper towels; toss broccoli in prepared dish along with cheese, onion and sausage.
  • In a mixing bowl, whisk together remaining ingredients (except pecorino) until frothy; pour into pie dish (you may want to set dish on a rimmed baking sheet for ease of transport, but everything should fit with no problem). Bake until top is puffed and browned, 50-60 minutes; remove from oven. The quiche will sink as it cools - don't worry, this is normal. Sprinkle with pecorino; cool 20-30 minutes before slicing into 6 pieces.
