Steps:
- In a large bowl, mix together the oats, chocolate chips, and coconut.
- Add the peanut butter, honey, and vanilla. Mix well until evenly combined. I prefer to use my stand mixer or a hand mixer for this-stirring by hand never seems to incorporate all of the ingredients well enough for me.
- Chill mixture in the refrigerator for an hour, then roll out balls about an inch in diameter. Keeping the mixture in the fridge before rolling helps them to roll easier.
- Store in an airtight container-I prefer the refrigerator!

WEIGHT WATCHERS FRIENDLY EGG BITES
Being observant about your weight? Want to get that protein in but not go over in fats? This is the ticket. Egg Bites are not only easy to make but are highly customizable to what you like at a fraction of the cost you will pay elsewhere, PLUS! They are pretty on the plate! If you have an instant pot, google the thousand recipes for egg bites. I usually serve this with fresh fruit or sliced tomatoes. Avocados are a hit, but high in WW points. - Preheat the oven to 350. Lightly mist 12 cups in a muffin tin with cooking spray. Press a slice of ham into each cup of the muffin tin, arranging the edges to form a ham cup. Chop up the remaining ham (my slices were about ½ ounce each so I had around 3 ounces remaining) and set aside.
- In a mixing bowl, combine the eggs, egg whites, milk, salt and pepper and whisk together until yolks and whites are fully combined and beaten. Add the reserved chopped ham, the spinach and half of the shredded cheddar and stir together to combine.
- Spoon the egg mixture evenly into the ham cups and then top each cup with the remaining shredded cheese. Place the tin in the oven and bake for 18-20 minutes until the eggs are set.

- 1. Lightly mist a large skillet with cooking spray and bring over medium heat. Add the diced onions and cook for a couple minutes until the onions start to turn translucent. Add the ground beef and hamburger seasoning and cook, breaking up with a spoon or spatula, until the meat is brown and cooked through. Drain any liquid from the pan and discard.
- 2. Transfer the meat to a microwavable mixing bowl and add the ketchup, mustard and chopped Laughing Cow cheese wedges. Stir together and then heat in the microwave on high for 1 minute to soften the cheese. Stir again, mashing the cheese wedges, until the mixture is well combined and the meat is coated. Add the shredded cheddar, pickles and tomatoes and stir until well combined.
- 3. Preheat the oven to 425. Line a baking sheet with aluminum foil and lightly mist the foil with cooking spray.
- 4. Pour water into a small dish and set aside. On a clean, flat surface, place an egg roll wrapper, corner facing toward you (like a diamond) and place a scant ¼ cup of the meat mixture on the center of the wrapper. Spread the mixture in a horizontal line from the left corner to the right corner of the wonton wrapper, leaving ½ inch or so of space on each side. Fold the bottom corner closest to you up over the ingredients and give it a 90 degree roll. Fold the side corners in and tuck them as you give the filled section another 90 degree roll. Dip your finger in the dish or reserved water and lightly wet the edges of the remaining top corner of the wrapper. Finish rolling the filled egg roll over the wet corner so that it adheres. Use your finger to wet and seal the seam on the outside. Place wrapped egg roll onto the prepared baking sheet. Repeat with remaining ingredients.
