1 tablespoon I Can't Believe It's Not Butter!, Light Buttery Spread
1 tablespoon erythritol- more or less depending on your preference
1 teaspoon vanilla extract
1 tablespoon greek yogurt
80 Lilys chocolate chips
1 pinch salt
¼ teaspoon cinnamon
1 Egg
3 tablespoon flour
1 pinch baking soda

Steps:

  • In a mug place in the butter, and melt in microwave for 30 seconds.
  • Remove the mug from microwave and add in the erythritol, vanilla, yogurt, egg and mix well until combined.
  • Add in pinch of salt, cinnamon, flour, baking soda and chocolate chips.
  • Mix well and microwave back in the oven for 2 minutes on high.
  • Enjoy.

1 tablespoon brown sugar
1 tablespoon sugar
¼ teaspoon baking powder
⅛ teaspoon salt
¼ teaspoon vanilla extract
3 tablespoons flour
2 tablespoons chocolate chips
½ cup ice cream, optional

Steps:

  • Add 2 tbsp butter, 1 tbsp brown sugar, 1 tbsp sugar, ¼ tsp baking powder, ⅛ tsp salt and ¼ tsp vanilla in a bowl and mix.
  • Next, add 3 tbsp flour and 2 tbsp chocolate chips and mix thoroughly. Transfer the mix to a microwave-friendly bowl and heat for 60 seconds. Top with ice cream.
  • Enjoy!

I found this recipe in the May/June 2008 Weight Watchers Magazine and wanted to try it. 3 cookies = 3 points. They always do a recipe makeover and those are usually the best!

1 1/2 cups flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup dark brown sugar, packed
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1/4 cup nonfat sour cream
1 large egg
3/4 cup quick-cooking rolled oats (not instant)
1/2 cup mini chocolate chip

Steps:

  • Preheat the oven to 350 degrees.
  • Spray 2 large baking sheets with nonstick spray.
  • Combine the flour, baking powder, baking soda and salt in a bowl and set aside.
  • Beat the brown sugar, butter and vanilla in a large bowl until blended.
  • Beat in the sour cream and egg.
  • Add the flour mixture and beat until blended, about 1 minute.
  • Stir in the oats and chocolate chips.
  • Spoon the dough onto the baking sheets about 1 inch apart making a total of 36 cookies.
  • Dip the bottom of a glass in flour and press the floured glass against each mound to make a 2 1/2 inch round cookie.
  • Bake until light browned, about 12 minutes.
  • Transfer to racks to cool.

  • In a mini food processor, process chickpeas until almost smooth, about 30 seconds. Add water, vanilla, and vinegar; process until smooth and creamy, about 1 minute. Spoon chickpea mixture into a large bowl. Add butter and beat with a mixer at medium speed until fluffy and smooth, about 1 minute. Add sugars and beat at medium speed until well blended, about 1 minute. Beat in egg.
  • In a medium bowl, whisk together flour, oats, baking soda, salt, and cinnamon. Add flour mixture to sugar mixture. Beat at low speed until almost fully combined but some streaks of flour remain. Add chocolate chips and walnuts and beat on low speed just until combined. Scoop slightly rounded tablespoons of dough onto prepared pan, spacing 1 inch apart, to form 12 cookies. Slightly flatten dough.
  • Bake at 350°F until lightly browned around edges, 15 to 17 minutes. Repeat with remaining dough.
