SUGARED WENSLEYDALE CHEESE WITH BISCUITS



Sugared Wensleydale Cheese with Biscuits image

1/2 pound Wensleydale cheese made with cranberries
1/4 cup sugar
12 pizzelles or sweet crackers (recommended: Nabisco Honey Maid Crackers)
1 cup seedless grapes

Steps:

  • Slice Wensleydale with a cheese plane. Sprinkle with sugar and arrange on a platter with seedless grapes. Serve with sweet biscuits and with dry white wine, beer or cider.

i was served this by my father in law martin some time ago but we cant remember where he got the ricipe.

Number Of Ingredients 7

8 spring onions
8 ounces potatoes
1 1/2 pints vegetable stock
6 ounces wensleydale cheese
2 ounces butter
1 ounce walnuts (chopped)
salt and pepper

Steps:

  • cut the green tops off 4 of the onions and reserve for later.
  • then chop the remaining onions and saute in the butter until just soft.
  • add the stock and potatoes and bring to the boil,reduce heat cover and simmer for 20 minutes.
  • stir in 2/3 of the cheese and the walnuts remove from the heat and cool for 5 minutes.
  • blend in a food prcessor untill pureed.
  • add salt and pepper to taste and serve sprinkling remainding cheese over the top and the green onion tops.

This is one of the nicest salads I've ever made. In fact my husband who is very adverse to green foods loves it. It's very, very tasty! Wensleydale is a pale, mild and crumbly soft cheese - the version made with cranberries is best for this recipe. I got this recipe from a sheet of recipes handed out at a cookery demonstration.

4 slices streaky bacon, cut into strips
4 slices white bread, cubed
1 tablespoon olive oil
mixed salad green
2 ounces chopped walnuts (optional) or 2 ounces pecan nuts (optional)
2 ounces sunblush tomatoes in oil
4 ounces Wensleydale cheese with cranberries, crumbed
1 tablespoon balsamic vinegar
2 tablespoons olive oil
1 teaspoon honey
1/2 teaspoon coarse grain mustard
salt and pepper

Steps:

  • Place all the dressing ingredients in a small container and cover with a lid. Shake well and leave aside.
  • Heat the oil in a frying pan and fry the bacon until crisp, remove and fry bread cubes until golden and crisp. Drain on kitchen paper and keep warm.
  • Divide salad leaves between 4 serving plates and sprinkle over the crumbed cheese, walnuts and sunblush tomatoes.
  • Sprinkle the cooked bacon and croutons on top then drizzle over the dressing.
