LEXINGTON-STYLE BBQ SAUCE

Lexington-Style Bbq Sauce image

Editor's note: The recipe and introductory text below are adapted from Elizabeth Karmel's Web site, girlsatthegrill.com. The addition of ketchup in this slightly sweeter vinegar sauce distinguishes it from simpler Eastern North Carolina vinegar sauce. I prefer this sauce not only because I grew up with it-I like the added flavor and the pink color that the ketchup gives the sauce. To turn this sauce into an Eastern sauce, add 1 cup of water and eliminate the brown sugar and ketchup. This sauce is used to make North Carolina Style Pulled Pork and North Carolina Coleslaw . You will need to double this recipe to sauce both the meat and the slaw.

Provided by Elizabeth Karmel

Categories     Sauce     No-Cook     Backyard BBQ     Vinegar     Summer     Tailgating

Yield Makes about 3 cups

Number Of Ingredients 8

2 cups cider vinegar
1 tablespoon sea salt
1 tablespoon ground white pepper
1 tablespoon red pepper flakes
2 tablespoons white sugar
1/4 cup dark brown sugar
1 teaspoon freshly ground black pepper
1/2 cup ketchup

Steps:

  • Mix all ingredients together and let sit 10 minutes. Add to chopped barbecue when hot to season the meat and keep it from drying out.

  • Combine the vinegar, ketchup, ancho chile powder, brown sugar, salt, black pepper, and chile de arbol powder or cayenne pepper in a medium saucepan and bring to a boil over medium-high heat. Cook for 1 minute. Remove from the heat and let cool to room temperature. (The sauce is best when you cover and refrigerate it overnight to allow the flavors to meld. You can, of course, stash it in the fridge for up to a week or so. Bring to room temperature before using.)
  • Rely on the sauce both for mopping pork butt, chicken, or burgers on the grill and for slathering over just about any grilled item just before serving—just be mindful to keep your mopping sauce separate from your slathering sauce, lest you contaminate the latter with cooties from raw meat from the former.

  • Prep. Whisk together all the ingredients and let them sit for at least three hours in the fridge to allow the flavors to meld. Overnight is better. A week is best.
  • Use. Divide the sauce in two. Use one for basting. The locals mop it on the meat with a basting brush once every hour while cooking. If you do mop, a good silicon brush is best. It holds lots of fluid and is easy to clean. A lot of places still use string mops, but I think these are too hard to clean and potential sources of food poisoning.
  • Take the remaining mop and serve it in a cruet on the side so your guests can drizzle on more if they wish.

  • Do not trim any excess fat off the meat; this fat will naturally baste the meat and keep it moist during the long cooking time. Brush pork with a thin coating of olive oil. Season with salt and pepper. Set aside on a clean tray until ready to cook.
  • Before placing the meat on the grill, add the soaked wood chips. Place the chips directly on gray-ashed briquettes or in the smoking box of your gas grill. If using a charcoal grill, you will need to add charcoal every hour to maintain the heat.
  • Place the pork in the center of the cooking grate, fat-side up, over indirect low heat. Cover and cook slowly for 4 to 5 hours at 325°F to 350°F, or until an instant-read thermometer inserted into the middle of the pork registers 190°F to 200°F. The meat should be very tender and falling apart. If there is a bone in the meat, it should come out smooth and clean with no meat clinging to it. (This is the real test for doneness on the barbecue circuit.) Remember, there is no need to turn the meat during the entire cooking time.

  • Make the rub: Place the paprika, brown sugar, salt, black pepper, white pepper, mustard, garlic powder, and cayenne in a small bowl and stir to mix.
  • Set up the grill for indirect grilling and preheat to medium-low. If using a gas grill, place all of the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke, then reduce the heat to medium-low.If using a charcoal grill, place a large drip pan in the center, preheat the grill to medium-low, then toss 1 cup of the wood chips or chunks on the coals.
  • When ready to cook, place the pork, skin side up, if there is one, in the center of the hot grate, over the drip pan and away from the heat, and cover the grill.
  • Transfer the cooked pork to a cutting board, cover it loosely with aluminum foil, let it rest for 20 minutes, then pull the pork into large pieces, discarding any bones or lumps of fat (you’ll probably want to wear latex gloves or even heavy-duty insulated rubber gloves to do this).
  • To serve, have your guests mound the pulled pork onto hamburger buns. Top with Lexington Slaw and let everyone add additional vinegar sauce to taste.
