Sweet and Sour Beef Cubes image

Great baked sweet and sour beef cubes. Good used on top of rice.

½ cup all-purpose flour, or as needed
1 (3 pound) beef chuck steak, cut into 1 1/2-inch cubes
3 onions, thinly sliced
¾ cup water
¾ cup ketchup
¼ cup soy sauce
2 tablespoons vinegar
1 ½ tablespoons Worcestershire sauce
½ pinch white sugar

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Put flour into a large, sealable plastic bag; add beef cubes and seal bag. Shake bag to coat beef in flour; transfer beef to a large casserole dish.
  • Top beef with sliced onions.
  • Whisk water, ketchup, soy sauce, vinegar, Worcestershire sauce, and sugar together in a bowl; pour over the onion slices. Cover the dish with aluminum foil.
  • Bake in preheated oven until the beef is tender enough to pull apart with a fork, about 3 hours.

Braised Beef Cubes in Gravy image

This makes a kid pleasing meal if served over shoestring fries. Serve alongside steamed broccoli and peanut butter cookies for desert!

1.5-2 pounds chuck roast or stew beef
1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 Tbsp coconut oil or lard
2 cups hot water (use beef broth for extra flavor)
1/2 cup whole milk

Steps:

  • Cut the meat into large cubes and trim all visible fat. When the meat is in cubes or chunks, set it aside. In a bowl, combine the flour, salt and pepper. Place the meat in the bowl and toss it in the flour, coating it on all sides. Meanwhile, heat up the oil in a large skillet over medium heat. Place the coated chunks of beef into the hot oil. Brown them on all sides. This will take about 10 minutes of cooking. Save the leftover flour in the bowl. You will use it later for the gravy. After the meat is well browned, add the water. Bring the meat to a boil. Reduce the heat so the water barely simmers. Cover the pan and allow it to simmer for 1-2 hours. If the water simmers away, add more as you see fit. After two hours, the meat should be tender. In a pint size canning jar, or other container with a good lid, combine the remaining flour and the milk. Screw the lid to the jar on tightly and shake it until the flour is completely dissolved in the milk. Then pour this into the skillet on the stove, to thicken the gravy. Stir it up and bring it to a boil. Continue cooking for a full minute. If the gravy is too thick, add water until it is the consistency you like.

2 lbs beef stew meat, cut into small cubes
1 (1 1/4 ounce) package dry onion soup mix
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic
1 (8 ounce) can tomato sauce
1/4 cup red wine
1 onion, diced
2 teaspoons dried marjoram
2 garlic cloves, minced
1 tablespoon Emeril's Original Essence (Emeril's Essence Creole Seasoning)
1/4 cup sour cream (optional)
noodles

Steps:

  • Add all the ingredients (except sour cream) to the crock pot and stir.
  • Cover crock pot and cook 7-8 hours on low.
  • Add sour cream (if using) about 15 minutes before you're ready to serve.
  • Stir the sour cream into the meat mixture well.
  • Serve over noodles.

1/2 thinly sliced onion
1 (15 ounce) can tomato sauce
2 tablespoons brown sugar, packed
1 tablespoon Worcestershire sauce
1 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon celery seed
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon cornstarch, dissolved in
1 tablespoon cold water
hot mashed potatoes or hot buttered egg noodles

Steps:

  • Place the beef cubes and onion slices in the crock pot.
  • Combine tomato sauce, brown sugar, worcestershire, thyme, basil, celery seed, pepper and salt and pour over meat and onions.
  • Cover and cook on low for 6-8 hours.
  • Turn to high. Dissolve the cornstarch in the water and then stir into the crock pot.
  • Cover and keep on high for 10 minutes.
  • Stir again and serve over mashed potatoes or hot buttered egg noodles.

1 tablespoon vegetable oil
1 6 oz can of tomato paste
1 cup water
1/2 cup beef broth
1 large bell pepper - chopped into thin slices
2 cups frozen Oriental vegetables stir fry (any frozen vegetable medley will do)
1/4 cup soy sauce
1 tablespoon cornstarch
1/2 teaspoon sugar
1 teaspoon fresh ginger
1/4 teaspoon pepper
1 cup cooked rice

Steps:

  • Heat the vegetable oil in large skillet over medium high heat. Add beef cubes and cook until they're done, about 10-15 minutes and no longer pink inside. Remove beef from skillet and set aside.
  • Add tomato paste, water, beef broth, green pepper, Oriental vegetables, soy sauce, cornstarch, sugar, ginger and pepper in skillet.
  • Bring the sauce to a low boil, stirring occasionally for 10 minutes.
  • Add beef cubes into sauce mixture and simmer for 20 minutes.
  • Serve beef cubes and vegetables over hot rice.
