SIMPLE SOURDOUGH BREAD



Simple Sourdough Bread image

Using a sourdough starter, you can have freshly baked sourdough bread with just a few ingredients!

4-5 cups (500-625g) all-purpose flour, (I prefer unbleached)
1 1/2 cups (355g) warm water
3/4 cup (170g) active sourdough starter
1 tablespoon honey
1 teaspoon salt

Steps:

  • Add all ingredients together in the bowl of a stand mixer with dough hook.
  • Turn the mixer on 1-2 (never higher than 2 or medium-low) and let the mixer knead the dough for about 5 minutes. The dough will be sticky and doesn't quite form a ball. (If making by hand, knead for about 10 minutes.)
  • Turn off the mixer and scrape the dough into a medium bowl that has been lightly coated with oil. Cover with plastic and set aside for about 3 hours while the dough rises.
  • After 3 hours, turn the dough and gently start folding up the sides. Grab the dough at the side of the bowl and lift up and towards the center of the bowl. Press down, turn the bowl 90 degrees and repeat this several times.
  • Cover again and let it rise for an additional 2-3 hours. (This will depend on the temperature of your home. A warmer kitchen will need less time.)
  • After the 2 hours, lightly dust your countertop with flour. Press the dough down with your fingers then start pulling up the sides and pressing into the center. You may need to add more flour as this can be a loose dough. Keep pulling up the sides and pressing into the center then flip the dough over. The top should be smooth. Dust with more flour and set the dough onto a piece of parchment paper. Score the dough with a knife.
  • Place a Dutch oven (make sure you have a lid) into a cold oven and heat to 450°F. Once heated, carefully remove the hot Dutch oven from the oven. Remove the lid and set it somewhere heat resistant. (I set the lid on my stove.) Pick up the parchment paper with both hands and place inside the Dutch oven. Carefully replace the lid.
  • Place into 450°F oven and bake for 15 minutes.
  • After 15 minutes, carefully remove the lid and bake an additional 10-15 minutes, or until the top is nicely golden brown (don't worry if it is darker brown, you just don't want it burnt) and when you tap on the top the bread sounds hollow.
  • Set Dutch oven to the side and leave the bread alone for about 15-20 minutes.

1 cup (227g) "fed" sourdough started
1-1/2 cups (340g) lukewarm water
5 cups (602g) all-purpose flour, divided
1 tablespoon sugar
2-1/4 teaspoons kosher salt

Steps:

  • In a large bowl combine the starter, water, and 3 cups of flour. Beat vigorously for 1 minute.
  • Cover, and let rest at room temperature for 4 hours.
  • Refrigerate overnight, for about 12 hours.
  • After refrigeration, add the remaining 2 cups of flour, sugar, and kosher salt.
  • Knead to form a smooth dough. Knead either by hand or with a dough hook attached to a mixer.
  • Allow the dough to rise in a covered bowl until it's light and airy, with visible gas bubbles. Depending on how active your starter is this may take up to 5 hours, or even longer. For best results, gently deflate the dough once an hour by turning it out onto a lightly floured or lightly greased work surface; stretching and folding the edges into the center; turning it over, then returning it to the bowl. Adding these folds will help strengthen the dough's structure, and allow you to feel how it's progressing over time.
  • Note: sourdough bread (especially sourdough without added yeast) can be finicky and may not go exactly to the written plan. Please allow yourself to go with the flow, and not treat this as an exact to-the-minute process.
  • When the dough is ready, transfer the dough to a lightly floured or lightly greased work surface and gently divide the dough in half.
  • Gently shape the dough into two oval loaves, and place them on a lightly greased or parchment-lined baking sheet. Cover with lightly greased plastic wrap and let rise until very puffy, about 2 to 4 hours. This step could take longer but give them sufficient time to become noticeably puffy. Don't worry if the loaves spread more than they rise, they'll pick up once they hit the oven's heat.
  • Towards the end of the rising time, preheat the oven to 425°F.
  • Spray the loaves with lukewarm water.
  • Slash the loaves. If you've made round loaves, try one slash across the center, and a curved slash on each side of it; or slash in the pattern of your choice. For oval loaves, two diagonal slashes are fine. Make the slashes fairly deep, a serrated bread knife works well here.
  • Bake the bread for 25 to 30 minutes, until it's a very deep golden brown.
  • Remove it from the oven, and cool on a rack.
  • Store bread, loosely wrapped in plastic, for several days at room temperature or freeze for longer storage.

  • Start by making your leaven. Combine the sourdough starter, water and flours in a jar or bowl. Stir well, cover loosely and then let the leaven sit in a 70ºF environment until it has doubled in bulk and a small piece of it will float in water. This could be as little as 6 hours, or overnight.
  • When the leaven is ready, combine 100g of the leaven with 325g of water and both flours. Stir together with a wooden spoon or your hands until there is no trace of dry flour left. Cover the bowl and let it sit for 30 to 40 minutes.
  • Mix the salt with the remaining 25g of water. Stir to dissolve the salt a little, but don't worry if it doesn't all dissolve. Pour the salt and water over the dough and squeeze the dough through your fingers until the water has been absorbed. Continue to work the dough until it becomes a little more uniform. Pull the far side of the dough into the center on top, rotate the dough and pull the side of the dough into the center again. Do this all around the dough until it becomes a uniform ball. Transfer the dough to the bowl where it will sit to rise - a large bowl or a clear plastic container. Cover the bowl with plastic wrap or put a lid on the container. Let the dough rest for 30 minutes.
  • While the dough is rising, give it a "turn" every 30 minutes. Grab one side of the dough and folding it over on itself. Then, turn the container or bowl 90º and fold it again. Fold all four edges of the dough this way and you've completed one "turn". As the dough rises, it will change in texture, becoming lighter and airier. When it is lighter and airier, "turn" the dough more gently - picking it up in the middle and letting the ends fold under the dough instead of folding the dough onto itself. The rising time should take 4 to 6 hours, with "turns" every 30 minutes. The dough is ready for the shaping stage when it has turned into a smoother, lighter dough. With time, you'll be able to recognize this change in the dough. If you're in doubt, let the dough rise for 4 hours and then proceed to the next step.
