HORSERADISH CREAM SAUCE
Mix together Alton Brown's Horseradish Cream Sauce from Food Network for an easy condiment to go with roast beef and more.

- Place all of the ingredients into a medium mixing bowl and whisk until the mixture is smooth and creamy. Place in the refrigerator for at least 4 hours or overnight to allow flavors to meld. Sauce can be stored in the refrigerator in an airtight container for 2 to 3 weeks.
WHIPPED HORSERADISH SAUCE
This is a fabulous addition to prime rib and other cuts of beef. The whipped cream tones down the heat of the horseradish, so even kids like this. Plus it's pretty! You can substitute 1/4 cup of freshly grated horseradish for the 3 tablespoons of prepared horseradish.

- Line a fine mesh sieve with cheesecloth. Strain the horseradish for 2-3 minutes, or until reduced to 3/4 cup. Press on the horseradish with a spoon or squeeze the cheesecloth to extract all the liquid.
- In a mixing bowl, whip the cream with a wire whisk until it thickens to the consistency of sour cream. You can use an electric mixer set on medium-high, but watch carefully so that the cream does not overwhip.
- Add the horseradish, mustard, salt, pepper and Tabasco.
- Whisk until thickened using a wire whisk or electric mixer. The sauce should be moist and the consistency of whipped cream.
- Refrigerate for at least 1 hour, then serve immediately or transfer to a covered storage container and refrigerate up to an additional day.

- You can whip the cream by hand or use a stand or hand mixer with whisk accessory. I used my KitchenAid 5 Cup Chopper with Whisking Accessory.
- Whip the cream part-way. Add the salt, pepper and horseradish and continue to whip until desired consistency.
- Store in refrigerator. You can easily double or triple the ingredients for a larger batch. You can make several hours in advance. (I have made it a day in advance - it deflates a tiny bit, but is just fine.)
