WHITE CHOCOLATE AND CRANBERRY BREAD PUDDING



White Chocolate and Cranberry Bread Pudding image

Bread pudding, served warm with whipped cream, is delicious with white chocolate chips, cranberries, and cinnamon.

Number Of Ingredients 9

1 ½ cups sugar
1 cup milk
1 cup heavy cream
5 large eggs eggs
2 tablespoons ground cinnamon
6 cups cubed sourdough bread
2 cups white chocolate chips
¾ cup dried cranberries
¼ cup Whipped cream for garnish

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13-inch baking dish with nonstick spray; set aside.
  • Whisk together sugar, milk, cream, eggs, and cinnamon until completely combined.
  • Place bread in a large bowl. Pour milk mixture over bread, stirring gently. Set aside 20 to 30 minutes, occasionally pressing bread into milk mixture to soak completely.
  • Gently stir white chocolate chips and cranberries into mixture.
  • Pour mixture into prepared baking dish, spreading evenly. Cover dish with aluminum foil.
  • Bake 30 minutes, then uncover and bake 10 to 15 minutes longer, or until bread pudding is firm and top is golden brown.
  • Serve with whipped cream.

1/2 cup butter flavor shortening
1 cup granulated sugar
3 large eggs
1/2 cup buttermilk
3 tablespoons orange juice
1 teaspoon lemon zest, minced
1 teaspoon vanilla extract
1/2 cup vanilla chip, melted, cooled
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups dried cranberries

Steps:

  • Preheat oven to 350 degrees F, then grease & flour a 9-inch loaf pan.
  • In large mixing bowl, cream shortening & sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in buttermilk, orange juice, lemon zest & vanilla.
  • Stir in melted chips.
  • In another bowl, whisk together flour, salt & baking soda, then gradually add to this to creamed mixture.
  • Stir in cranberries.
  • Pour into prepared loaf pan & bake 55-60 minutes or until a toothpick inserted near center comes out clean.
  • Cool 10 minutes before removing from pan & cooling completely on wire rack.

1 cup sugar
3 large eggs, room temperature
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1/2 cup vanilla or white chips, melted and cooled
2-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup buttermilk
3 tablespoons orange juice
1 cup dried cranberries

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in lemon zest and vanilla. Stir in melted chips. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture, alternately with buttermilk and orange juice, beating well after each addition. Fold in cranberries., Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

16 slices bread, crusts removed, cubed
1-1/2 cups fresh or frozen cranberries, thawed
1 tablespoon grated orange zest
1/4 cup butter, melted
6 large eggs
4 cups whole milk
3/4 cup plus 1 tablespoon sugar, divided
1 teaspoon vanilla extract
ORANGE CUSTARD SAUCE:
3 large egg yolks
1/4 cup sugar
1 cup heavy whipping cream
1 orange zest strip (1/4 inch)
1/2 teaspoon orange extract

Steps:

  • Preheat oven to 375°. In a greased 13x9-in. baking dish, layer half of the bread cubes, cranberries and orange zest. Repeat layers. Drizzle with butter. , In a large bowl, beat the eggs, milk, 3/4 cup sugar and vanilla until blended; pour over bread mixture. Let stand for 15-30 minutes. Sprinkle with remaining sugar. , Bake, uncovered, for 65-75 minutes or until a knife inserted in the center comes out clean., For sauce, in a small heavy saucepan, whisk egg yolks and sugar. Stir in cream and orange zest strip. Cook over low heat about 15-20 minutes or until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly but gently. Do not allow to boil. Immediately transfer to a bowl., Place bowl in an ice-water bath for a few minutes, stirring occasionally. Stir in extract. Discard orange zest. Refrigerate until chilled. Serve with bread pudding.

  • Butter a 9-by-13-inch baking dish. Spread half of bread in dish, overlapping. Scatter white chocolate chips and 1 cup of cranberries over. Layer remaining bread and cranberries.
  • In a large pan, warm milk, cream and sugar over medium heat, stirring until mixture just comes to a boil. Remove from heat, add chopped chocolate; let stand 10 minutes. Stir until smooth.
  • In a bowl, whisk eggs, yolks and vanilla. Gradually whisk in cream mixture. Pour over bread; press bread down. Cover; refrigerate for at least 2 and up to 24 hours, pressing bread down occasionally.
  • Preheat oven to 350ºF. Line a large baking sheet with foil. Place baking dish on sheet, remove plastic wrap and cover with foil. Bake for 45 minutes. Remove foil and bake 30 to 40 minutes longer, until golden and puffed. Let stand 20 minutes before serving.
