COCONUT CREAMED SPINACH AND KALE



Coconut Creamed Spinach and Kale image

Sturdy kale and tender spinach are a delicious combination in this update of a classic side dish. It's terrific with roasted or grilled meats or serves alongside rice and beans. Watch our how-to video.

Number Of Ingredients 9

1 1/2 cup coconut milk
1 yellow onion, finely chopped
2 cloves garlic, finely chopped
1/2 cup regular or golden raisins
3/4 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1/4 teaspoon grated nutmeg
1 (3/4-pound) bunch kale, tough stems and ribs removed, leaves thinly sliced (about 8 loosely packed cups)
1/2 pound spinach (about 8 loosely packed cups)

Steps:

  • Combine coconut milk, onion and garlic in a large saucepan and bring to a simmer over medium heat.
  • Adjust heat and cook at a bare simmer, stirring frequently, until onion is translucent, about 5 minutes.
  • Stir in raisins, salt, pepper and nutmeg.
  • Raise the heat to medium and add kale a few handfuls at a time, stirring and adding more when it wilts.
  • Cover and cook, stirring occasionally, for 12 minutes.
  • Uncover and add spinach a few handfuls at a time.
  • Stir well and cook, uncovered, until kale and spinach are very tender and excess liquid has mostly evaporated, 6 to 8 minutes.

Garlicky Kale Recipe from Whole Foods image

Number Of Ingredients 8

1 bunch kale, de-stemmed, chopped and massaged
1 tablespoon Bragg's Amino Acid (or soy sauce)
2 tablespoons tahini paste
2 tablespoons lemon juice (or one lemon)
2 tablespoons water
4 tablespoons nutritional yeast
2 cloves garlic, minced
Black pepper, to taste

Steps:

  • Put all ingredients (except for kale) into a blender, adding nutritional yeast last. (Adding it first causes it to gum up the blades and stick to the base.)
  • Mix until smooth.
  • Transfer kale to a salad bowl, then pour dressing over the top and toss until coated.
  • Store any leftovers in the refrigerator.

3 pounds fresh kale
Kosher salt
1 tablespoon unsalted butter
1 tablespoon minced fresh garlic
3 cups heavy cream
Freshly cracked black pepper
1/2 cup finely grated Parmesan
1/8 teaspoon freshly grated nutmeg

Steps:

  • Prepare the kale by removing the center stems and tearing the leaves into bite-size pieces. Set a large pot of water over high heat and bring to a boil. Season generously with salt. When it returns to a boil add the kale. Stir well so it cooks evenly. When it turns bright green and becomes tender, 10 to 12 minutes, remove and drain in a colander.
  • To a high-sided saute pan over medium heat, add the butter and garlic. Stir in the cream with some salt and pepper. Set over high heat and bring to a simmer. Cook until the cream reduces by half, 6 to 7 minutes. Once reduced, add the kale, Parmesan, nutmeg and more salt and pepper and bring back to a simmer so the kale is heated through and the Parmesan has melted. Stir to coat everything evenly. Taste and season again if needed.
