Yield Makes 12 scones

Number Of Ingredients 9

4 cups whole-wheat flour, plus more if needed
2 tablespoons baking powder
1 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces
1 cup packed light brown sugar
1 cup raisins
1 1/2 cups buttermilk, plus more if needed
Jam (optional), for serving
Hot tea (optional), for serving

Steps:

  • 1. Preheat the oven to 325°F. Mix the flour, baking powder, and salt together in a large bowl. Add the butter and use your fingers to pinch the butter and the flour mixture together; when it's all combined, it will resemble large bread crumbs.
  • 2. Use a wooden spoon to mix in the brown sugar and raisins, and then add the buttermilk. If the dough is quite sticky, add more flour, 1 tablespoon at a time, until the dough has the texture of modeling clay. If it's too dry, add more buttermilk, 1 tablespoon at a time, until it's wet enough.
  • 3. Turn the dough out onto a floured work surface and roll it out into a rectangle 1/4 inch thick. Cut the dough into 12 (3-inch) squares. Leftover scraps can be rerolled to make more scones.
  • 4. Oil a baking sheet. Fold each square of dough in half diagonally to form a triangle, and lay it on the sheet. Bake the scones until the tops are golden brown, about 30 minutes. Serve warm, with jam and a pot of hot tea if you like.

They add the freshness of herbs, but are not too delicate to stand up to whole-wheat flour. You could use white whole-wheat flour, but the nutty taste of the darker flour makes these scones extra-hearty.

1 cup plus 2 tablespoons (4.1 ounces) whole-wheat flour
1 1/2 cups (6.5 ounces) all-purpose flour
1 tablespoon plus 1/2 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into cubes
1/3 cup chopped spring or green onions, green parts only (from about 2 spring onions)
1/3 cup (0.6 ounces) shredded Parmesan
1 tablespoon chopped fresh thyme leaves
1 large egg
1 cup reduced-fat (2 percent) milk
Nonstick cooking spray

Steps:

  • Heat the oven to 400 degrees F. Spread parchment paper on a large baking sheet and sprinkle with 1 tablespoon whole-wheat flour. Set aside.
  • Mix together the all-purpose flour, baking powder, sugar, salt and 1 cup whole-wheat flour in a large bowl, using a fork. Cut or rub in the butter into the flour mixture, with a pastry blender or your fingertips, until the mixture resembles coarse sand with a few pea-sized butter pieces remaining. Add the onions, cheese and thyme and toss gently.
  • Whisk together the egg and milk in a small bowl; add to the flour mixture and stir gently with a wooden spoon just until mixed (do not overmix). The dough will be sticky.
  • Turn the dough onto the prepared baking sheet. Sprinkle with the remaining tablespoon whole-wheat flour. Using a serrated knife that's been coated with cooking spray, divide the dough in half and shape into two 5-inch circles. Score each circle into 6 wedges with the knife.
  • Bake until firm to the touch, 20 to 25 minutes. Cut each circle into 6 wedges using the scored lines and serve.

1 tablespoon sugar

Steps:

  • In a large bowl, combine the flours, brown sugar, baking powder and baking soda.

  • Stir in blueberries.
  • Turn onto a floured surface; gently knead 10 times.

2 tablespoons raw sugar, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • Whisk flour, sugar, baking powder, salt, and cinnamon together in a bowl. Cut in butter cubes with a pastry cutter or 2 knives.
  • Mix half-and-half and egg together in a bowl. Mix into the flour-butter mixture. Fold in blueberries and oats.

2 cups white whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup fine baker's sugar
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 eggs
1/2 tablespoon vanilla extract
1/2 cup pumpkin puree
1 tablespoon heavy cream (or milk)
1/2 cup unsalted butter (cubed or grated, then placed back in refrigerator until needed)
3/4 cup chopped pecans, toasted
raw sugar (or sparkling sugar) (optional)
1/2 cup mini chocolate chip (or raisins or dried apricots) (optional)

Steps:

  • - Preheat oven to 375 degrees. Grease a cast iron scone pan or line a baking sheet with parchment paper.
  • - In a medium-sized bowl, stir together the pumpkin, cream, vanilla and one egg until combined. Place bowl in the refrigerator while preparing the dry ingredients.
  • - In a large bowl, sift together the flour, salt, baking powder, and sugar. Stir in the cinnamon, nutmeg, ginger and cloves.
  • - Using a pastry blender, two forks or your fingers, quickly work the cold butter cubes into the dry ingredients. Work until the mixture resembles a crumbly, sandy mixture.

  • - Pour the dough out onto a lightly floured surface. Shape into a 7 inch square that is approximately 1 inch thick. Using a large knife, carefully cut the square into quarters. Then cut each quarter into four even pieces. Place on lined baking sheet or prepared cast iron pan.
  • - In a small bowl, beat the remaining egg with a fork. Using a pastry brush, brush each scone lightly with the egg. Sprinkle with raw or sparkling sugar and the remaining pecans.
  • - Bake for 16-17 minutes. Be careful not to overbake or the scones will dry out. Remove from pan to a wire rack to cool. Serve warm or store in an airtight container for up to a week.

1 tablespoon (15 grams) raw brown sugar
2 teaspoons (7 1/2 grams) baking powder
1/2 teaspoon (2 grams) baking soda
1/4 teaspoon (2 grams) salt
6 tablespoons (85 grams) coconut oil
2/3 cup (155 grams) buttermilk
1 tablespoon agave nectar or mild honey
1/2 cup (70 grams) finely diced candied ginger

Steps:

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment. Sift together the flours, salt, baking powder and baking soda and stir in the sugar. Place in the bowl of a food processor fitted with the steel blade or in the bowl of a standing mixer fitted with the paddle.

3 ounces (6 tablespoons) cold unsalted butter
2/3 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment.

Cut into 6 squares, then cut the squares diagonally to give you 12 triangular scones. The dough will be tacky but should not be too sticky to work with. If it is, add a little more flour.
  • Place the scones on the baking sheet about 1 inch apart and bake 15 minutes, or until lightly browned. Remove from the heat and allow to cool, or serve warm.
