WORLD'S BEST LASAGNA
It takes a little work, but it is worth it.

- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F (190 degrees C).
- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

EASIEST LASAGNA
This is a truly simple lasagna recipe. The original recipe calls for 2lbs. of hamburger, 15oz Golden Grain marinara, and an entire box of noodles. I have always tried to tweak it just enough to make dinner for four. The secret is somewhere in the stand time, the longer the better for the noodles. This is an excellent make ahead and reheat dish. My husband says its even better the next day and I agree.

- Brown beef and strain fat. Add sauce, water and salt, bring to boil.
- In a 2-qt baking dish, layer sauce, uncooked noodles then cottage cheese and shredded cheeses. Repeat layers ending with sauce on top. Cover tightly with foil and bake at 375°F for 1 hour. Let stand for 10 minutes then garnish with parmesan cheese.

WORLD'S LAZIEST LASAGNA
This is a great make ahead, no boil lasagna. I've tried it at high altitude and low, ahead of time or that day. I've served as is, or added a layer of torn up spinach and pesto leaves on top of the cheese layers. For a wedding, I once made 3 pans of this. It's great!

- Brown the beef and garlic in a skillet.
- Drain.
- Add spaghetti sauce; heat on low.
- While meat sauce is heating, mix the cottage cheese, ricotta, mozzarella, egg, and 1/2 cup of the parmesan.
- Spread 1 1/2 cups of the meat sauce in the bottom of a 9x13 pan.
- Put a layer of noodles over the sauce, so that none overlap.
- If you have to break a noodle to fill in gaps over 1/2 inch, that's okay.
- Put a layer of cheese mix over the noodles.
- Add about 1/2 of the remaining meat sauce; spread over cheese.
- Repeat layers.
- End with cheese on top; put remaining parmesan on top of the other chesse.
- Pour 1 cup of water around inside edges of the pan, and cover with foil.
- **Bake in a 350 oven for 1 hour, then uncover and bake 15 minutes more.
- Take from oven and let cool about 10 minutes before serving.
- Can be refrigerated up to 48 hours at this point.

- Heat a large non-stick frying pan until hot. Add about half the mince and fry it over a medium heat for 4-5 minutes until browned. Stir it with a wooden spoon and press out any lumps while it is frying. Tip the browned mince into a bowl. Tip the remaining raw mince into the pan and add the garlic and oregano. Fry it as you did with the previous batch, then return all the mince to the pan and mix it together.
- Tip in the mushrooms and roasted veg sauce, and squirt in the ketchup (you can be generous). Season with black pepper and salt if you like. Stir well to mix everything together, turn the heat up under the pan and bring to the boil, then turn it down so it bubbles gently. Cover the pan and cook for 30-35 minutes, stirring every 10 minutes to mix everything together. As it cooks, the mushrooms will shrink and make the mince more saucy.
- While you're waiting for the meat to cook, break the egg into a large bowl and beat it with a whisk or fork to break up the white and the yolk. Pour the cream into the bowl, then grate about two thirds of the cheese and add to the bowl. Be careful, a grater looks innocent enough, but it's sharp so mind your fingers. Season with a good grinding of black pepper. Beat well to mix. Now turn the oven on to 180C/gas 4/fan 160C.
- Lay the lasagne in a dish and cover with boiling water. Leave for 5 minutes. Take an ovenproof dish measuring about 28-30cm x 22-23cm and 7.5cm deep. Spread about a couple of spoonfuls of meat sauce over the bottom, then cover with 3-4 sheets of lasagne (lift them out of the water with tongs) overlapping them slightly to make them fit if you need to. Drizzle over just a little of the cheese sauce - about 2-3 spoonfuls.
- Spoon over half the remaining meat and spread it out, right to the edges of the dish. Cover with 3-4 more sheets of lasagne, then spoon over the remaining meat, spreading it out evenly and almost to the edges. Cover with 3-4 more sheets of lasagne.
- Pour what's left of the cheese sauce over the top. Jiggle the dish so the sauce runs to the edges and squelch the corners of the pasta into the sauce so there's none poking up. Grate the rest of the cheese evenly all over, then grate over about 1⁄2 teaspoon of nutmeg. Bake in the oven for 30 minutes or until bubbling and golden. Leave to stand for 5 minutes before decorating the top if you like. Cut into 6 portions and serve with a salad.

This is my adaptation of a recipe from the Busy People's Low-Fat Cookbook by Dawn Hall. She uses ground meatless in hers, fat-free cheeses and Healthy Choice Super Chunky Mushroom pasta sauce. I like to use two 8x8 inch pans and put one in the freezer.

- Preheat oven to 375 degrees.
- Spray baking dish with non-fat cooking spray.
- In large bowl, mix together the pasta sauce and ground turkey.
- Line bottom of prepared dish with 1/3 of the pasta sauce mixture.
- Lay strips of uncooked lasagna noodles on top of pasta sauce.
- Spread 1/2 of the cottage cheese over noodles and sprinkle one half of the mozzarella cheese over the cottage cheese.
- Start with 1/3 of the sauce again, and repeat layers one more time, ending with the last third of the sauce.
- Cover with foil and bake at 375 for 1 hour.
- Note: To avoid a mess with the lasagna bubbling over, place dish on a cookie sheet or sheet of foil.
