LEBANESE ZAATAR SPICE BLEND RECIPE
Zaatar is a fine aromatic spice blend, fresh, tangy and nutty. Prepare this Lebanese zaatar from scratch and use on various foods (see in the post for zaatar uses) or double the recipe to make a bigger batch and store in airtight containers.

Steps:
- Place the Sesame seeds into a small pan and dry toast the sesame seeds until you can smell them toasting or see them popping up. Keep aside to cool.
- In a mortar and pestle add the thyme, savory, marjoram, and sumac. Pound all the ingredients until well mixed and you can smell the spice blend forming.
- In a small bowl or container combine the previously pound ingredient mixture with the sesame seeds and salt.
- Store in an airtight container until further use.

ZA'ATAR SPICE BLEND
Steps:
- If using fresh za'atar or oregano, arrange it on a towel-lined plate and microwave in 15-second intervals, stirring between intervals, until dry and crumbly, 2 to 2 1/2 minutes.
- Crumble the leaves by hand or in a spice grinder until almost fine (the way dried herbs look), then combine in a medium bowl with the marjoram, sesame seeds, thyme, sumac, and salt. Store in an airtight container for up to 3 months.
ZA'ATAR HERB BLEND
Za'atar (ZAHT-ar) is a class of herbs, and includes members of the thyme, oregano, and savory families. Za'atar is also a Middle Eastern herb blend, containing one or more of the za'atar herbs. As with many centuries-old dishes, za'atar blend has many regional and familial variations. Here is a basic za'atar recipe from Alton Brown. Okay, I tweeked it, like I most always do, adding in the necessary(to me) dried oregano. Enjoy sprinkled on top of flatbread, over grilled vegetables, or used in dips like hummus, baba ghanoush, or tzatziki. You can also add a few generous teaspoons to make a Middle Eastern version of pasta salad.

ZA'ATAR ZAATAR SPICE BLEND
This is a very useful spice blend for Middle Eastern Dishes. I have also found it to be good on cooked pasta, mixed with some olive oil, toasted pine nuts and olives. Also good on a bagel with cream cheese and then za'atar sprinkled on top. Try it on bruschetta with chopped tomatoes, garlic, olive oil, balsamic vinegar mixed up and then sprinkle with the za'atar - delish!

ZA'ATAR
Za'atar is the name for both a traditional Middle Eastern seasoning blend and the pungent green herb that gives the blend its intense, earthy character. The hardy herb, which grows wild, tastes like a combination of oregano, marjoram, summer savory and thyme - all of which can be used as substitutes if dried za'atar isn't available. As with all spice blends, recipes vary widely depending on the region and the cook, but this one, adapted from Lior Lev Sercarz of La Boîte in New York, includes ground sumac berries for acidity, toasted sesame seeds for their rich, earthy notes, and a little salt as well. Za'atar can be used in marinades for grilled or roasted poultry or meats, mixed into dips, salads and egg dishes, or set on the table to be sprinkled on dishes as a bright and herby condiment.

Steps:
- Place a small skillet over medium heat. Add the sesame seeds to the skillet and toast, stirring, until fragrant, 2 to 4 minutes. Pour into a small bowl and set aside to cool.
- Using a spice grinder, clean coffee grinder, or mortar and pestle, ground the za'atar leaves with the sumac and salt. Add to the bowl with toasted sesame and mix well. Store in an airtight container in a cool, dark place for up to 1 year.
