1 package (16 ounces) ziti or small tube pasta
1 large egg, lightly beaten
1 carton (15 ounces) part-skim ricotta cheese
1/2 cup grated Parmesan cheese, divided
1 jar (28 ounces) meatless spaghetti sauce
2 cups shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese. , Spread 1 cup spaghetti sauce in a 13x9-in. baking dish coated with cooking spray. Top with a third of the pasta, half of the ricotta mixture, 2/3 cup mozzarella cheese, 1 tablespoon Parmesan cheese and 1 cup sauce. Repeat layers of pasta, ricotta mixture and mozzarella cheese. Sprinkle with 2 tablespoons Parmesan cheese. Top with remaining pasta, sauce mozzarella cheese and Parmesan cheese. , Cover and bake at 375° for 45-50 minutes or until heated through.

2 tablespoons olive oil
3 cloves garlic, minced
1 large onion, diced
1 pound ground beef
1 pound Italian sausage
Two 14.5-ounce cans tomato sauce or marinara sauce
One 28-ounce can whole tomatoes with juice
2 teaspoons Italian seasoning
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper
1 pound ziti
1 1/2 pounds mozzarella, grated
One 15-ounce tub whole-milk ricotta
1/2 cup grated Parmesan
2 tablespoons chopped fresh parsley, plus more for sprinkling
2 eggs

Steps:

  • Heat the olive oil in a pot over medium heat. Add the garlic and onions and saute until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all of the fat, leaving a bit behind for flavor and moisture. Add the tomato sauce, tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25 to 30 minutes. Remove 3 to 4 cups of the cooked sauce to a bowl to cool down.
  • Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente.
  • Preheat the oven to 375 degrees F.
  • In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley, eggs and some salt and pepper. Stir together just a couple of times (do not mix completely).
  • Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine.
  • Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella.
  • Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in ziti pasta and return to a boil. Cook pasta, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
  • Combine egg, ricotta cheese, and 1/4 cup Parmesan cheese in a bowl. Spread 1/3 the spaghetti sauce in prepared baking dish. Top with 1/2 the pasta, 1/2 the ricotta mixture, 1/3 the spaghetti sauce, 1/2 the mozzarella cheese, and 1/2 the Parmesan cheese; repeat layers. Top with remaining spaghetti sauce and Parmesan cheese; cover baking dish with aluminum foil.
  • Bake in preheated oven until heated through, 45 to 50 minutes.

1 lb bulk Italian pork sausage
1 can Progresso™ (18.5 oz) heart healthy tomato soup with Parmesan
1/4 teaspoon pepper
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 egg
1 cup shredded mozzarella cheese (4 oz)
Chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 375°F.
  • Cook and drain pasta as directed on package. In 12-inch skillet, cook sausage over medium-high heat, stirring occasionally, until no longer pink; drain. Add soup, pepper and cooked pasta; stir well.
  • In small bowl, mix ricotta cheese, Parmesan cheese and egg.
  • Spoon pasta mixture into ungreased 11x7-inch (2-quart) glass baking dish. Spoon ricotta cheese mixture on top; sprinkle with mozzarella cheese. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down.
  • Bake 25 to 30 minutes, removing foil last 10 minutes of bake time, until cheese melts and mixture is hot and bubbly. Sprinkle with basil.

I came up with this recipe after starting with a basic ziti recipe I found off another website. I began adding a few more ingredients and less of others and ended up with a keeper. I've baked in my toaster oven during the warmer months. If you use your T.O. reduce baking time by 10 minutes or casserole will be on the dry side. It's an easy Italian comfort food - Hope you enjoy!

8 ounces ziti pasta
1 cup chopped onion
1 lb ground beef (90/10 works best)
2 cloves of minced garlic
1 (4 ounce) can mushrooms (drained)
1/2 cup sour cream
1/3 cup grated parmesan cheese
1/3 cup cream or 1/3 cup half-and-half cream
2 cups prepared/commercial spaghetti sauce
1/3 cup red wine
2 teaspoons oregano
1 teaspoon salt
1/2 teaspoon black pepper
4 ounces shredded mozzarella cheese

Steps:

  • Prepare oven at 350 degrees.
  • Cook ziti according to package instructions, reducing the time by 5 minutes (this is important or pasta may be overcooked after baking casserole).
  • Meanwhile, saute chopped onion with ground beef in 10-12" skillet until beef is browned.
  • Add minced garlic to meet mixture and cook on low heat for 3 minutes.
  • Drain Ziti and leave in colander for the time being.
  • Combine drained mushrooms, sour cream, grated parmesan, half& half, spaghetti sauce, red wine, oregano, salt, and pepper to the beef mixture and mix thoroughly.
  • Stir in ziti to the meat mixture until all ziti is coated with mixture.
  • Pour into an ungreased 2-1/2 quart casserole dish.
  • Sprinkle with shredded mozzarella.
  • Place in pre-heated oven and bake 35-40 minutes (or until bubbly and lightly golden brown on top).
