KETO BAKED ZUCCHINI
Keto baked zucchini in oven is perfect keto recipe for zucchini and it's perfect low carb side dish!

Steps:
- Preheat the oven to 185 C/365 F.
- Cut zucchini in slices 2.5 cm/1 inch thick and layer them on a sheet pan. You may layer the sheet pan with a parchment paper to clean it easier afterwards.
- Sprinkle zucchini with a pinch of salt and freshly ground pepper to taste.
- Generously sprinkle on top with 1 cup of parmesan cheese and 3 TBS of blanched almond meal.
- Bake in a preheated oven for 20 minutes or until baked and golden brown on top.
- Serve and enjoy!

- Grease a 9 inch baking pan with butter
- Place overlapping zucchini slices in baking dish, layering it with onions and cheese between each layer
- You can use a round dish or square
- In a small bowl combine sour cream with garlic powder, salt and pepper and just enough cream to thin the mixture.
- Spread sour cream mixture over the zucchini
- Bake at 350 degrees for 35 minutes or until casserole is brown and bubbly on top.
- Let rest in oven for 10 minutes.

Steps:
- Preheat oven to 350 degrees F.
- Heat fat of choice in medium sauté pan over medium heat. Add onions stirring occasionally until translucent, but not brown, about 7-8 minutes.
- Add garlic and allow to cook for about 1-2 minutes until fragrant.
- Add grated carrots, zucchini, thyme, and sea salt. Stir occasionally just until vegetables are soft, about 2-3 minutes. Remove from heat and set aside.
- In a large mixing bowl, add ground beef, egg, sour cream, cheese and slightly cooled vegetables. Use a fork or clean hands to mix well.
- Place meat mixture into a loaf pan, a shallow 7x11 pan or shape into a rectangle loaf on a parchment paper lined sheet pan.
- Spread ketchup over the top of the meatloaf mixture.
- Bake the meatloaf for 1 to 1 1/2 hours, or until the internal temperature is 160 degrees F and the meat is cooked through. [Note: A 7x11 shallow pan will cook in about 1 hour, a loaf pan will take closer to 1 1/2 hours.]
- Let the meatloaf rest for at least 10 minutes before serving.

- Preheat the oven to 350 °F and lightly grease a loaf pan.
- Place 1 cup of grated zucchini in a large bowl with ¾ pound of lean ground beef, 1 slightly beaten egg, ¼ cup of very finely chopped onion, 1-2 minced garlic cloves, and ¼ cup of bread crumbs.
- Season with ½ a teaspoon of paprika, ¼ teaspoon of oregano, salt and black pepper. Mix well until combined.
- Place the meatloaf mixture in the lightly greased loaf pan.
- Cook in the preheated oven for 40 minutes.
- Combine 1 tablespoon of ketchup with ¼ teaspoon of mustard and ½ a tablespoon of brown sugar.
- Remove the meatloaf from the oven and pour the sauce over the top.
- Return the meatloaf to the oven and bake for 15 more minutes.
- Serve immediately.

- Preheat oven to 350 degrees.
- In a large bowl, mix all the meatloaf ingredients until well blended, then press this mixture into an ungreased 9 1/2 inch deep dish glass pie plate.
- Bake for 35 minutes.
- Meanwhile, in a small bowl, mix all the topping ingredients well.
- After the 35 minutes remove meatloaf from the oven, and pour topping on the meatloaf, spreading evenly.
- Return the meatloaf to oven, and bake an additional 10-15 minutes or until thoroughly cooked in center, and a meat thermometer reads 160 degrees.
- Let stand 5 minutes before serving.

- Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Mix the ground beef, ground turkey, zucchini, onions, green bell pepper, egg, Worcestershire sauce, Cheddar cheese, bread crumbs, and ranch dressing mix until well combined. Form the mixture into a loaf in the middle of the prepared baking dish.
- Stir together the ketchup and steak sauce in a small bowl. Pour the sauce over the top of the meatloaf. Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
