CUCUMBER TOMATO SALAD WITH ZUCCHINI AND BLACK OLIVES IN LEMON BALSAMIC VINAIGRETTE
This is a deliciously light and fresh-tasting twist on cucumber tomato salad. It takes me to the water's edge, and begs to be served with fresh seafood. Substitute Greek kalamata olives for black olives if desired.

- In a large salad bowl, mix together the cucumbers, zucchini, red onion, tomatoes, black olives, basil, and thyme. In a separate bowl, whisk together the red wine vinegar, balsamic vinegar, lemon zest, lemon juice, kosher salt, sugar, and white pepper until thoroughly combined. Pour the olive oil slowly into the dressing mixture, whisking to combine. Pour the dressing over the salad, and serve.

ROASTED ZUCCHINI TOMATO FETA SALAD
Steps:
- Cut the feta cheese into 1cm thick slices and place in a shallow dish.
- In a small bowl, mix together 1 tablespoon of the olive oil, the balsamic vinegar, lemon juice and half of the thyme.
- Pour over the feta and leave to marinade for at least 1 hour.
- Preheat the oven to 230C/450F degrees
- Place the zucchini, garlic and onions into a roasting tin and drizzle over the remaining olive oil. Season with the salt and pepper. Roast for 30 minutes, turning occasionally.
- Add the marinated feta cheese, cherry tomatoes, olives and thyme. Cook for 10 minutes until the vegetables are tender.
- Transfer the roasted vegetables and feta cheese to serving plates and spoon over the remaining marinade.

- Trim off ends of zucchini. Cut it on bias into 12 slices of about the same size.
- Bring enough water to boil to cover zucchini slices when added. Add slices and cook 1 1/2 minutes; do not overcook. Drain.
- Cut away and discard core of tomato. Cut tomato into 1/4-inch slices.
- Cut mozzarella into 12 slices.

- In the bottom of a medium bowl, whisk together the lemon basil vinaigrette: lemon juice through pepper.
- Trim both ends of the zucchini and use a vegetable peeler to create long, wide ribbons. I find that it's easiest to place the zucchini flat on a cutting board and peel the vegetable horizontally.
- Repeat the same process with a cucumber and place both the zucchini and cucumber ribbons in the bowl on top of the vinaigrette.
- Add arugula and cherry tomatoes to the bowl and toss well until vegetables are evenly coated with the vinaigrette. Check for seasoning and adjust accordingly.

- Cut the corn off the cob by placing it upright in a deep bowl, and cut down the sides of the cob with a sharp knife.
- Dice the zucchini into 1/2-inch pieces (leave the skin on) and add it to the bowl. Add the tomatoes, and stir to combine.
- In a separate small bowl, whisk together the vinegar, olive oil, honey and lime juice. Pour the vinaigrette over the salad and toss to combine. Garnish with fresh basil.
