TURKEY BOLOGNESE SAUCE

1/3 cup extra-virgin olive oil
1 medium onion
1 medium carrot
1 small stalk celery
3 cloves garlic, smashed
12 ounces ground turkey
1/4 cup tomato paste
1 teaspoon kosher salt
Pinch crushed red pepper flakes
Two 28-ounce cans whole tomatoes
1 bay leaf
Pinch crushed fennel seeds

Steps:

  • Heat the oil over medium heat in a large electric skillet. Add the onion, carrot, celery and garlic. Cook, stirring occasionally, until the vegetables are soft but not brown, about 8 minutes. Add the turkey, tomato paste, salt and red pepper flakes; cook, stirring, until the mixture turns dark red, about 10 minutes. Add the tomatoes and their juices, breaking the tomatoes into bite-size pieces with the side of a spoon.
  • Add the bay leaf and fennel seeds. Bring to a boil, reduce the heat and simmer, uncovered, stirring occasionally, until the sauce thickens, about 1 hour. Discard the bay leaf, season with salt and serve over pasta.

1 lb ground beef
1 white onion, Diced
2 garlic cloves, Sliced
thyme
salt
pepper
Worcestershire sauce
1 (26 ounce) jar Prego spaghetti sauce
2 tablespoons olive oil
4 tablespoons butter

Steps:

  • Heat oil to temperature in the pan! When hot, add 2 tbsp of the butter!
  • Add delicious onion, and brown it. When onion is translucent, add the garlic until fragrant!
  • Add meat! Delicious meat. Begin to brown meat with onions and garlic!
  • Season meat with thyme, and a few dashes of Worcestershire sauce! The meat should taste strongly, so you can taste it through your sauce!
  • Once meat is tasty and flavorful, and cooked, add the jar of Prego! You can use any sauce you want but I find run of the mill Ragu/Prego etc works the best so your meat flavor comes through! Combine with the meat and allow to reduce a bit, to let flavors marry.
  • Serve over your favorite pasta! Tubbortons!

If you have grown up, lived, or traveled to the Midwest, this recipe is from a popular restaurant that was in Lincoln, NE. I've been told it's an acquired taste, but having grown up on them, I love them! It's a loose meat sandwich. Use a slotted spoon to portion out the meat. Serve on buns with mustard and sliced dill pickles.

4 ounces ketchup, or more to taste
5 teaspoons salt
1 tablespoon prepared mustard
1 tablespoon creamed horseradish
1 tablespoon Worcestershire sauce
¼ teaspoon ground black pepper
5 pounds 85% lean ground beef
1 cup warm water
1 cup minced onion
1 teaspoon monosodium glutamate (such as Ac'cent®)

Steps:

  • Combine ketchup, salt, mustard, horseradish, Worcestershire sauce, and ground black pepper in a 1-cup measuring cup. Add more ketchup if combined ingredients don't equal 1 cup. Stir until well mixed. Place ground beef in a stock pot; pour ketchup mixture over the ground beef.
  • Fill the same measuring cup with warm water. Stir to loosen any fine seasoning remaining; pour into stock pot. Stir onion into ground beef mixture; add monosodium glutamate. Mix until ingredients are well combined.
  • Cook and stir the ground beef mixture over low heat until the ground beef is finely crumbled, about 15 minutes. Bring to a boil; cook until flavors blend, about 25 minutes.
