2 large portobello mushrooms (4 ounces each), stems removed
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon dried basil
4 tomato slices
2 slices mozzarella cheese
2 slices Italian bread (1 inch thick)
Chopped fresh basil

Steps:

  • Place mushrooms in a shallow bowl. Mix oil, vinegar, salt and dried basil; brush onto both sides of mushrooms. Let stand 5 minutes. Reserve remaining marinade. Preheat air fryer to 400°., Place mushrooms on greased tray in air-fryer basket, stem side down. Cook until tender, 3-4 minutes per side. Remove from basket. Top stem sides with tomato and cheese; secure with toothpicks. Cook until cheese is melted, about 1 minute. Remove and keep warm; discard toothpicks., Place bread on tray in air-fryer basket; brush with reserved marinade. Cook until lightly toasted, 2-3 minutes. Top with mushrooms. Sprinkle with chopped basil.

Air Fryer Portobello Mushrooms are juicy and tender on the inside. Easy to make and flavorful with just a few simple spices, these versatile mushrooms make a great meat alternative!

4 portobello mushrooms
1 tablespoon avocado oil
1/2 teaspoon balsamic vinegar (optional)
1/2 teaspoon salt (more or less to taste)
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
1/4 teaspoon garlic powder

Steps:

  • Clean the portobello mushrooms with a damp (paper) towel. Then place the portobello mushrooms onto a large plate or into a baking dish.
  • Add the oil, balsamic vinegar, salt, Italian seasoning, black pepper, and garlic powder to a small bowl and mix well.
  • Brush both sides of the mushrooms with the spice dressing. If your portobello mushrooms are very big, you might want to add some extra salt, pepper, or garlic powder to ensure good spice coverage.
  • Preheat the air fryer to 380 degrees Fahrenheit.
  • Once it's hot, add the mushrooms to the air fryer with the cap side down. You can spoon any of the leftover dressing into them at this point. Make sure that the portobello mushrooms fit into the air fryer in one layer without overlap. If you can't fit them in all at once, cook them in two batches.
  • Cook the mushrooms for 6-7 minutes for medium-sized mushrooms, and 8-10 minutes for large portobello mushrooms. Flip them over halfway through the cooking time. Since every air fryer is slightly different, your cook time can vary.
  • When the portobello mushrooms are cooked to your liking, remove them from the air fryer and serve with dips of your choice, as a side dish or use them for a portobello burger.

Steak and cheese melts from start to finish in the air fryer. Perfectly cooked steak and veggies topped with melty cheese and served in hoagie rolls are sure to be a hit.

1 pound beef rib-eye steak, thinly sliced
2 tablespoons Worcestershire sauce
1 tablespoon reduced-sodium soy sauce
1 medium onion, sliced into petals
4 ounces sliced baby portobello mushrooms
½ green bell pepper, thinly sliced
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon ground mustard
¼ teaspoon ground black pepper
4 hoagie rolls
4 slices Provolone cheese

Steps:

  • Place steak in a bowl and add Worcestershire and soy sauce. Cover and refrigerate 4 hours to overnight. Remove from the refrigerator and let come to room temperature, about 30 minutes.
  • Preheat the air fryer to 380 degrees F (190 degrees C).
  • Combine onion, mushrooms, and bell pepper in a large bowl. Add olive oil, salt, ground mustard, and pepper; stir to coat.
  • Place hoagie rolls in the basket of the air fryer and cook until toasted, about 2 minutes. Transfer rolls to a plate.
  • Place steak in the basket of the air fryer and cook for 3 minutes. Stir and cook for 1 more minute. Transfer to a plate.
  • Add vegetable mix to the basket of the air fryer and cook 5 minutes. Stir and cook until softened, about 5 more minutes.
  • Stir steak into the vegetable mixture. Place cheese slices on top, slightly overlapping. Cook until cheese is melted and bubbly, about 3 minutes. Spoon mixture onto toasted rolls and serve immediately.

2 tablespoons olive oil
2 portobello mushroom caps, gills removed
1 teaspoon Italian seasoning
6 tablespoons pizza sauce
5 tablespoons shredded mozzarella cheese, divided
2 tablespoons sliced black olives
8 pepperoni slices

Steps:

  • Preheat an air fryer to 350 degrees F (175 degrees C).
  • Rub 1 tablespoon olive oil over each mushroom. Sprinkle 1/2 teaspoon Italian seasoning inside each. Set mushrooms in the air fryer basket, cap sides up. Air fry for 3 minutes.
  • Flip mushrooms over so that the cap is facedown in the basket. Divide pizza sauce between the 2 mushrooms. Cover with 2 tablespoons shredded mozzarella and 1 tablespoon sliced olives. Air fry for 3 minutes.
  • Place 4 pepperoni slices on each pizza and cover with remaining mozzarella cheese. It is important to weigh the pepperoni down with cheese or the fan will blow them off the pizza.
