Simple Macaroni Salad Recipe Without Mayo. image

This light and summery simple macaroni salad is delicious, flavorful, and mayonnaise free!

12 ounces gluten free macaroni
2 cups zucchini (sliced)
2/3 cup red onion (finely chopped)
1 1/2 cups carrots (shredded)
1 cup red pepper (chopped)
1 cup celery (chopped)
5 ounces light tuna (drained)
2/3 cup olive oil
1/2 cup apple cider vinegar
2 cloves garlic (minced)
1/2 teaspoon sea salt
1/4 teaspoon pepper
1 1/4 Tablespoons organic cane sugar
3 teaspoons Italian seasoning
1/4 teaspoon red pepper flakes (optional)

Steps:

  • Prepare the gluten free macaroni according to package directions. Once it's done cooking, drain in a colander and rinse with cold water to cool it down.
  • Place the cooked macaroni, all the vegetables, and the tuna in a large bowl. Toss to combine.
  • Combine the ingredients for the dressing in a bowl and whisk well. Pour over the macaroni salad and stir to coat. Refrigerate until ready to serve.
  • If you are making this ahead of time, you can keep the salad and the dressing separate until right before serving time. This will prevent the pasta from soaking up all the dressing.

This is the best macaroni salad around!! I grew up on this as a little girl with my grandma making this. It brings back old memories.

1 1/2 cups uncooked macaroni
3 hard-boiled eggs
1/2 cup chopped celery
1/4 cup chopped onion
3/4 cup salad dressing
2 tablespoons yellow mustard
1/4 cup white vinegar
1/3 cup sugar

Steps:

  • Cook and drain macaroni. Cool. Add eggs, celery, and onion. Mix salad dressing, mustard, vinegar, and sugar thoroughly, then add to macaroni mixture. Then served chilled its even better if made the night before!

I really love Amish Macaroni Salad, and this is my favorite recipe for it. Amish Macaroni Salad is somewhat on the sweet side, so if you don't mind your salads sweet, I think you'll like it too. It's even better the next day, so if you can, let it sit overnight. I got the recipe from a Berk's County website a while back. NOTE: It does make a lot of salad, so if you wanted a smaller amount, it halves easily. Just use the 3 eggs chopped up and just garnish with paprika. Time does not including cooking the macaroni.

1 lb macaroni (or small shells)
1/2 cup finely chopped celery
1/2 cup finely grated carrot
1/4 cup finely chopped onion (more if desired)
1/4 cup chopped green pepper (optional, see note at end)
6 hard-boiled eggs (reserve 1 to slice for garnish, and chop the remaining 5)
paprika, for garnish
2 cups Miracle Whip
1/4 cup vinegar
3/4 cup sugar
2 tablespoons prepared mustard

Steps:

  • Cook macaroni as directed on package; Drain& cool.
  • In a bowl, whisk together the dressing ingredients so they are well-combined and smooth.
  • In a large bowl, gently combine the macaroni, celery, carrots, onions, and remaining eggs.
  • Fold the dressing gently into the macaroni salad mixture.
  • Place into your serving bowl and garnish with the reserved slice egg and paprika.
  • Let sit overnight for the best results.
  • NOTE: It was not in the original recipe, but I sometimes add 1/4 to 1/2 cup chopped green pepper if I have it around.

2 cups uncooked elbow macaroni
3 large eggs hard-cooked eggs, chopped
1 small onion, chopped
3 stalks celery, chopped
1 small red bell pepper, seeded and chopped
2 tablespoons dill pickle relish
2 cups creamy salad dressing (e.g. Miracle Whip)
3 tablespoons prepared yellow mustard
¾ cup white sugar
2 ¼ teaspoons white vinegar
¼ teaspoon salt
¾ teaspoon celery seed

Steps:

  • Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool.
  • In a large bowl, stir together the eggs, onion, celery, red pepper, and relish. In a small bowl, stir together the salad dressing, mustard, white sugar, vinegar, salt and celery seed. Pour over the vegetables, and stir in macaroni until well blended. Cover and chill for at least 1 hour before serving.
