- Preheat oven to 350F.
- Heat oven-safe skillet over medium heat. Add apples, syrup, butter and pumpkin pie spice. Cook 2-3 minutes, or until bubbly and apples are softened.
- Whisk together pancake mix and water in separate bowl. Pour over apples.
- Place pan in oven and bake 20 minutes, or until pancake is set. Remove from oven and let cool 5 minutes.
- Use a spatula to loosen pancake from skillet. Place large plate over top of skillet and flip to release pancake onto plate.

- Preheat a skillet to medium-high heat (275 degrees).
- Whisk together the milk and vinegar and allow to rest for 5 minutes.
- While milk is curdling, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk egg and oil into milk. Add wet ingredients to dry ingredients and stir until combined (don't over-mix, it should still have some lumps).
- Spray skillet with cooking spray. Use a 1/4 cup measuring cup to pour batter onto skillet. Cook about 2 minutes until bubbles form and the edges start to look "dry". Use a spatula to flip the pancake and cook another 1-2 minutes on the other side. Set pancakes aside and repeat with remaining batter.
- Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat 3-5 minutes until apples are very tender. Stir in syrup. Serve apple topping over warm pancakes.

APPLE UPSIDE DOWN PANCAKE

- Preheat your oven to 400 F / 200 C.
- Peel, core and thinly slice the apples.
- In a 10-inch skillet, melt the butter over medium heat. Add the sugar and cinnamon and stir to distribute evenly.
- Add the sliced apples, cover, and cook for about 5 minutes, or until the apples are tender and a rich syrup has formed. Stir gently once or twice during cooking.
- Remove the pan from the heat. Push the apples to distribute them evenly over the bottom of the pan. If you like, you can take the time to arrange them in a pattern.
- In a medium-sized bowl, combine the flour with the sugar, baking powder, and salt. Add the egg yolks and milk, whisking until smooth.
- With an electric mixer, beat the egg whites to soft peaks. Gently fold the egg whites into the flour mixture, then spread the pancake batter over the cooked apples. Place the pan in the preheated oven and bake for 10 to 15 minutes, or until golden and puffy.
- Remove the pan from the oven and use a rubber spatula to loosen the pancake from the sides of the pan. Invert a serving plate over the frying pan then carefully hold the pan and plate together and flip them over so that the cake releases onto the plate.

- Preheat the oven to 250 degrees F.
- Whisk the flour, baking powder, cinnamon and salt together in a medium bowl.
- Whisk the milk, sugar, vanilla and eggs together in a large bowl until the sugar dissolves. Melt 2 tablespoons of the butter in a medium nonstick or cast-iron skillet over medium heat. Let cool slightly, then whisk the butter into the egg mixture; reserve the skillet for cooking the pancakes. Whisk the flour mixture into the milk mixture until combined with a few lumps. Grate the apple on the large holes of a box grater and stir into the batter.
- Melt 1 tablespoon of the remaining butter in the reserved skillet over medium heat. Drop 2 tablespoons of batter per pancake into the hot skillet. Cook until the surface of the batter forms bubbles and the edges are set, about 3 minutes. Flip the pancakes and continue to cook until puffed in the center, about 1 minute more. Transfer to a baking sheet and put in the oven to keep warm while making the rest of the pancakes. Cook the remaining batter, adding the remaining 1 tablespoon of butter as needed.
- Serve the pancakes with butter and maple syrup or honey.

- Preheat oven to 350 degrees F. Grease two large six-cup muffin tins.
- In a microwave safe bowl, combine apples, cinnamon and water and microwave for 3-4 minutes. The apples should be slightly tender. Drain apples and toss with 1 cup Marzetti Old Fashioned Caramel Dip.

- Preheat oven to 350 degrees. Coat bottom and side of a 9-inch round cake pan with 2 tablespoons butter; sprinkle bottom with brown sugar. In a medium bowl, toss apples with lemon juice; arrange in prepared pan in two concentric circles (you might not use all of them).
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon; set aside.

- Mix flour, 1 Tbsp sugar, baking powder and baking soda and salt in a bowl. Set aside.
- Whisk buttermilk, eggs, melted butter and vanilla.
- Mix into dry ingredients.
- Place in Fridge for 125 minutes.
- Peel, core and cut the apples into small wedges.

- To make the crust, put the flour, sugar and butter into the container of a food processor and cover with the lid. Gradually add only enough cold water so that the dough comes loose from the sides and can be shaped into a ball.
- If a food processor is not used, put the flour and sugar in a mixing bowl. Add the butter and cut it in with two knives or a pastry blender until the mixture looks like coarse cornmeal. Using a fork, toss the mixture while adding just enough water so that the pastry holds together and can be shaped into a ball.
- Remove the dough and flour lightly. Cover with plastic wrap and refrigerate until ready to use.
- To make the filling, pour the melted butter into a round dish measuring about one and one-half inches deep and nine to 10 inches in diameter.
- Sprinkle the bottom of the dish evenly with brown sugar, lemon rind and a neat dusting of the cornstarch.
- Put the currants in a small bowl and add hot water to cover. Set aside.
- Peel the apples and cut them into quarters. Cut away and discard the cores and stems. Cut each quarter into four lengthwise pieces of more or less equal size. .
- Put the pieces in a mixing bowl and sprinkle with cinnamon. Toss to blend. Put half of the apple pieces neatly in layers over the bottom of the dish. Drain the currants and sprinkle them over the apples. Arrange the remaining apple pieces in layers over the currants. Sprinkle the rum over all.
- Preheat the oven to 400 degrees.
- Roll out the pastry to more or less fit the top of the pan. If there is an overlapping edge, fold this edge over toward the center, pressing it down to fit around the filling. The pastry should fit neatly and not overlap the top and edges of the dish.
- Place in the oven and bake one hour.
- Remove from the oven and let cool briefly.
- Run a knife around the inside rim of the pie. Place a dish over the pie. Invert the pie quickly onto the plate. Serve hot.

- Preheat oven to 375º.
- Generously spray 12 muffin tins.
- Mix together the 4 tablespoons of sugar and 1 teaspoon of cinnamon; sprinkle less than a teaspoon of this mixture into each tin.
- Reserve rest for layering in the batter.
- Stir together apple and honey.
- Spoon about 2 tablespoons of the apple mixture into each muffin cup.
- In a medium size bowl, lightly spoon flour into measuring cups, and level with a knife.
- Combine flour and the next 3 ingredients (flour through salt) in this bowl, stirring well with a whisk.
- Make a well in center of flour mixture.
- In another medium size bowl, combine the yogurt, butter, milk, and egg in a bowl, stirring well with a whisk.
- Add yogurt mixture to flour mixture, stirring just until moist.
- It will be thick.
- Spoon half the batter into each tin, sprinkle on some reserved cinnamon sugar, and top with remaining batter.
- Top with the reserved cinnamon sugar.
- Bake at 375º for 20 minutes or until a wooden pick inserted in center comes out clean.
- Cool in the pan for 15 minutes.
- Flip the pan onto a wire rack WITHOUT removing the pan immediately.
- Even if the apples do stay in the pan, simply spoon them onto the top of the muffins.
