Apples simmered with sugar and cinnamon.. makes a great sundae topping over vanilla ice cream, or as a pancake topping! Adjust cinnamon and sugar to taste.

Ingredients

2 tart apples - peeled, cored, and sliced
½ cup white sugar
1 tablespoon ground cinnamon
2 tablespoons water

Steps:

In a saucepan, combine the apples, sugar, cinnamon and water. Stir to dissolve sugar, and bring to a boil. Reduce the heat to low, and simmer for 10 minutes, or until apples are soft and syrup has thickened. Serve over pancakes or ice cream.

1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1-1/4 cups unsweetened apple juice
Sugar substitute equivalent to 4 teaspoons sugar

Steps:

In a small saucepan, combine the cornstarch, cinnamon, nutmeg and apple juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in sugar substitute.
