INDIAN-SPICED SHEPHERD'S PIE



Indian-spiced shepherd's pie image

A low-fat, superhealthy shepherd's pie that can be popped in the freezer or enjoyed on the day

500g pack lean minced lamb
1 onion , chopped
2 carrots , diced
2 tbsp garam masala
200ml hot stock (lamb, beef or chicken)
200g frozen peas
800g potatoes , diced
1 tsp turmeric
small bunch coriander , roughly chopped
juice half lemon , plus wedges to serve

Steps:

  • In a large non-stick frying pan, cook the lamb, onion and carrots, stirring often, until the lamb is browned and veg is starting to soften, about 8 mins. Add the garam masala and some seasoning and cook for a further 2 mins until fragrant. Pour in the stock, bring to the boil, tip in the peas and cook for a further 2 mins until the peas are cooked and most of the liquid has evaporated.
  • Meanwhile, cook potatoes in a large pan of salted water until just tender, about 8 mins. Drain well, return to the pan and gently stir in turmeric and coriander - try not to break up the potatoes too much.
  • Heat oven to 200C/180C fan/gas 6. Transfer the mince to a baking dish and top with the turmeric potatoes. Squeeze over the lemon juice, then bake for 30-35 mins until potatoes are golden. Serve immediately with extra lemon wedges on the side.

2 tablespoons soy sauce
1 tablespoon white wine vinegar
1 teaspoon sesame oil
1 tablespoon honey
1 teaspoon Chinese five-spice powder
½ teaspoon minced garlic
½ teaspoon ground ginger
2 pounds pork short spareribs

Steps:

  • Combine soy sauce, white wine vinegar, sesame oil, honey, five-spice powder, garlic, and ginger in a large storage bag. Shake to mix well. Add ribs to marinade; refrigerate 4 to 8 hours, turning bag occasionally.
  • Preheat an oven to 325 degrees F (165 degrees C). Remove ribs from marinade and place in a roasting pan; cover tightly with aluminum foil.
  • Cook ribs for one hour, turning occasionally. Increase oven temperature to 400 degrees F. Remove foil from pan and bake an additional 20 minutes, turning once, until ribs are nicely browned.

Asian Version of Shepherd's Pie image

Adapted a shepherd's pie recipe so that it has a bit of a Asian taste to it. Something to try if you want something a little different.

300 g chicken thighs, deboned and cubed
1 big onion, sliced thinly
6 garlic cloves, chopped
2 tablespoons curry powder
250 g cauliflower, cut into pieces or chopped
250 g carrots, sliced
200 g button mushrooms, sliced thinly
3 tomatoes, chopped and pureed
2 tablespoons chili sauce
1 tablespoon oyster sauce
1/2 teaspoon sugar
1 dash pepper
salt
1 teaspoon instant chicken bouillon granules
1 kg potato, parboiled and peeled
2 tablespoons sour cream
50 g butter
1 soft hard-boiled egg

Steps:

  • To make the topping: Mash the potatoes and mix in sour cream, soft boiled egg and butter.
  • Combine well.
  • Put mixture into a piping bag fitted with a star-shaped nozzle.
  • To make the filling: Heat about 2 tbsp oil in a wok and stir-fry (A) till onions turn limp and soft.
  • Add chicken meat and stir-fry well.
  • Add curry powder and mix well to blend.
  • Stir in (B), mix in pureed tomatoes and allow to simmer till vegetables are tender and the gravy is thick.
  • Add seasoning.
  • Dish out and leave aside to cool.
  • To make the pie: Spoon the cooled filling into an oven-proof 2.5 litre pie dish.
  • Pipe out the potato topping over the filling and bake the pie in an oven preheated at 200 to 210 ºC for about 25 to 30 minutes or until pie turns golden brown.

'Shepherd's Pie' with Asian Braised Duck image

4 duck legs
1/2 tablespoon rinsed and minced fermented black beans
8 cloves garlic, chopped
1/2 tablespoon minced ginger
1 large onion, 1/4-inch dice
1 carrot, peeled and 1/4-inch dice
1 large rib celery, 1/4-inch dice
1 cup sliced shiitakes
1/2 cup shaoxing wine
1/4 cup naturally brewed soy sauce
1/4 cup brown sugar
1/2 tablespoon minced thyme
Water, to cover duck
4 cups leftover mashed potatoes (3 large baking potatoes, cooked and mashed with 2 ounces butter, salt and pepper)
Canola oil for cooking
Salt and black pepper, to taste

Steps:

  • Season the duck legs with salt and pepper. Heat a small stock pot to high. Sear the duck legs (no added oil) on both sides until brown. Remove legs and leave the rendered fat. Add the black beans, garlic and ginger and saute until soft, about 2 minutes. Add the onions and caramelize, about 4 to 5 minutes. Add the carrots, celery, shiitakes and season. Deglaze with shaoxing and reduce by 20 percent. Add the soy, sugar, thyme and duck legs and cover with water. Check for seasoning. Bring to a simmer and cook for 1 1/2 hours until soft. Strain duck legs and liquid and set aside. Bring liquid back to a boil and reduce by 50 percent. Skim if necessary. When legs are cool enough to touch, remove the meat and fat. Roughly chop up this mixture and mix in the strained vegetables/aromatics. In 4 individual oval flameproof baking dishes, place duck mixture in each. Ladle a little of the reduced liquid on top and top that with the mashers. All this can be done in advance. Bake in a preheated 400 degree oven for 30 minutes until bubbling. Change over to broiler and toast the top until brown. May serve with side salad.
  • PLATING: Place baking dish on a plate with a side salad (optional). Otherwise, you can make 8 small dishes and serve as an appetizer.

3 Tbsp (45 mL) flour
3 Tbsp (45 mL) VH® Soya Sauce
1 bottle (355 mL) VH® Asian 5 Spice Stir-Fry Sauce
1 can (398 mL) Hunt's® Tomato Sauce Original
1 cup (250 mL) frozen peas
2 ½ lb(s) (1 ¼ kg) yellow flesh potatoes, peeled and chopped
¾ cup (180 mL) milk
2 Tbsp (30 mL) butter
PAM® Original Cooking Spray

Steps:

  • Spray a large cooking saucepan with PAM® Original Cooking Spray. Add oil; heat over medium heat. Add onions and celery; cook, stirring, for 5 minutes. Add beef and pork; cook, stirring for 20 minutes or until meat is cooked through and lightly browned.
  • Add flour, stir until well mixed. Add VH® Soya Sauce, VH® Asian 5 Spice Stir-Fry Sauce, HUNT'S® Tomato Sauce and 1 cup (250 mL) water. Bring to a boil, reduce heat and simmer for 10 minutes, partially covered, until slightly thickened. Stir in peas.
  • Meanwhile, place potatoes in large pot of boiling water for 20 minutes. Drain. Add butter, milk and potatoes back into pot and mash. Season with salt and pepper. Add more milk if necessary to acheive desired consistency.
  • Spray a 9″x 9″ baking dish with PAM® Original Cooking Spray; spread meat mixture in dish and top evenly with mashed potatoes.
  • Bake in 350°F (175°C) oven until heated through and bubbling around edges, about 25 minutes.
  • Tip: The shepherd's pie can be made entirely with beef if desired, substitute pork portion with beef.
