Number Of Ingredients 6

1 level teaspoon ground cinnamon
1 level teaspoon coriander seeds
1 level teaspoon ground allspice
1 dried red chilli
4 heaped teaspoons cocoa powder
2 heaped teaspoons icing sugar

Steps:

  • This works as a gorgeous topping for all sorts of desserts, and also as a component in Jamie's Taco Party from Together - see the full collection of menus here.
  • GET AHEAD Put the cinnamon, coriander seeds and allspice into a pestle and mortar. Crumble in the chilli, add the cocoa powder and the icing sugar, and pound until fine. Sieve the mixture into an airtight jar ready to use. Delicious served with Chocolate semifreddo. Leftovers will be an absolute treat sprinkled over ice cream or used to make a lovely mug of hot chocolate.

"This recipe should make enough for SEVERAL barbecues; just store it in an airtight plastic or glass container in the fridge and in two seconds you can transform a 'plain' piece of meat into something quite different. And don't forget that it's the cayenne pepper that controls the heat."

4 tablespoons celery salt
4 tablespoons ground paprika
1 tablespoon brown sugar
1 tablespoon mustard powder
1 tablespoon ground coriander
1 tablespoon fresh ground pepper
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon dried thyme leaves
1/2 tablespoon cayenne pepper

Steps:

  • Mix all ingredients well and sprinkle some over your meat then rub in as a dry rub or mix a couple of tablespoons with a little oil to make a marinade.
