ROASTED RED POTATOES WITH BACON AND ONION



Roasted Red Potatoes with Bacon and Onion image

I have got the most perfect potato side dish for you to try! Roasted red potatoes are cooked with bacon and onion for a side full of flavor. Easy to make and perfect to serve for Thanksgiving and the holidays.

6 slices bacon
1½ pounds small red potatoes like Red Bliss (halved)
1 medium head garlic (cloves separated but not peeled)
1 medium yellow onion (peeled and cut into 1-inch wedges through root end.)
Kosher salt
Freshly ground black pepper
1½ teaspoons dried thyme

Steps:

  • Adjust an oven rack to lower-middle position and heat oven to 450°F. Place the bacon on a large, rimmed baking sheet and set it in the oven. Cook bacon just until browned and crisped about 10 minutes. Remove the bacon from the oven and cut-up or crumble it; Set aside. Remove all except 2 tablespoons bacon fat from the pan.
  • Reduce oven temperature to 400°F.
  • Place potatoes, garlic cloves and sliced onion onto the baking sheet, and toss with the bacon fat. Sprinkle vegetables with dried thyme and season liberally with salt and black pepper. Turn the potato halves cut-side-down, and separate the vegetables so there is no crowding.
  • Roast, shaking the pan every 15 minutes, and continue cooking until vegetables are tender and caramelized.
  • Taste, and if needed, season with salt & pepper.
  • Garnish with the crumbled bacon.
  • This dish can be served hot or at room temperature. Enjoy!

6 medium red potatoes, chopped in 3/4-inch (3 cm) pieces
2 oz onion soup mix, 1 packet
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 425ºF (220ºC).
  • Cook bacon in a cast iron skillet until crisp.
  • Remove any excess grease, if preferred.
  • Add the potatoes and onion soup mix to the skillet and stir. Add salt and pepper to taste.
  • Bake in the skillet for 20-25 minutes, or until potatoes are cooked through.
  • Enjoy!

I recently served these potatoes to visiting relatives from Norway, and they were a big hit. I love to cook and even wrote my own cookbook several years ago. -LaVerna Mjones, Moorhead, Minnesota

1 small onion, thinly sliced
2 medium baking potatoes, halved lengthwise
4 bacon strips

Steps:

  • Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. Bake, uncovered, at 325° for 1 hour and 20 minutes or until potato is tender and bacon is crispy. Discard toothpicks.

2 pounds potatoes, sliced into 1/2-inch-thick pieces
1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
  • Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.
