- Preheat oven to 400°. In a large skillet, cook beef, bacon and onion over medium heat until meat is no longer pink; drain. Add cheese; cook and stir until melted. Remove from heat., Flatten biscuits into 5-in. circles; top each with 1/3 cup beef mixture. Fold sides and ends over filling and roll up. Place seam side down on a greased baking sheet., Bake until golden brown, 18-20 minutes. In a small bowl, combine ketchup and mustard; serve with roll-ups.

I had something similar at a restaurant, threw these together at home, and they were pretty good! As a dipping sauce, use mayo and catsup mixed together.

- Place the ground beef and onion in a skillet over medium heat, and cook and stir for about 10 minutes, breaking up the beef into crumbles as it cooks. Drain the meat and transfer to a bowl. Stir in the chopped pickles, shredded cheese, and mustard, and mix together well.
- Line a baking sheet with parchment paper. Place a bowl of water next to your work surface. Remove an egg roll wrapper from the stack, and cover the remaining wrappers with a damp paper towel to prevent them from drying out.
- Place the wrapper on the work surface with a corner facing towards you. Place about 1/4 cup of filling on the wrapper, and fold the top corner down over the filling. Tightly roll the wrapper into a cylinder, tucking in the corners as you roll, until the wrapper completely encloses the filling. Moisten the last corner with a little water, and finish wrapping so the moistened corner tightly seals to the egg roll, and there are no gaps to let the filling leak out. Place filled egg rolls on the parchment-lined baking sheet, covered with a slightly damp paper towel, while you finish making the egg rolls.
- Heat the oil in a deep saucepan or deep fryer until a thermometer registers 365 degrees F (185 degrees C). Carefully place 2 or 3 egg rolls at a time into the hot oil, and fry for about 4 or 5 minutes, turning the egg rolls over once, until golden brown. Remove the egg rolls with a tongs, and drain on paper towels.

Found in an online search in response to a request for Bennigan's Cheeseburger Eggrolls. Looks both tasty and easy and so I plan to make 'em for the grandkids next time they're here. Times and size of the egg roll wrap packages are guesstimates.

- Cook bacon pieces in frying pan. Spoon onto paper towel-covered plate to drain grease.
- Cook ground beef in same fry pan until browned, drain grease. Add bacon bits to ground beef and mix well.
- Beat egg in bowl. (Egg is used to seal edges of egg roll wrappers; water works too).
- Take egg roll wrapper (package will tell you how to fold them up.) and put large spoonful of hamburger and bacon on one corner of wrapper. Add pinch of cheddar and Monterey jack cheese on top of meat mixture.
- Coat edges of egg roll with egg or water. Roll up wrapper and repeat until you have used all the meat or all the wrappers, whichever happens first.
- In a large deep fry pan, heat about 3/4 inch of vegetable oil. Put egg rolls inches Flip over when first side browned. When both sides browned, place on paper towel covered plate to drain grease.
- When all egg rolls are cooked, dip them in barbecue sauce (or dipping sauce of your choice) and enjoy.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Shape beef into 4 equal patties and season with salt and pepper on both sides.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels.
- At the same time, heat olive oil in a pan over medium-high heat. Saute onion slices in the hot oil until softened, 5 to 7 minutes. Remove from heat and set aside.
- Cook patties on the preheated grill until browned and no longer pink, 4 to 5 minutes per side, or to desired doneness. Top each with American cheese and allow to melt, about 1 minute more.
- At the same time, crack eggs into a nonstick skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.

BACON CHEESEBURGER PUFF ROLLS

This is not gourmet but it is easy to throw together quickly, especially if you speed the cooling time but putting the ground beef in the fridge or prepping it the night before, and it is a very forgiving recipe with omissions and substitutions and it is simple and pleasing so I love it for a quick dinner or as an appetizer! Use pizza dough, Italian sausage and mozarella cheese and omit the bacon for another variation. I dip the cheeseburger rolls into bacon ranch dressing (serve with mustard and mayo) and the Italian sausage rolls into homemade marinara sauce. For a party appetizer, slice more thinly! Enjoy! Prep time does not include cooling time.

- Preheat oven to 400°F Line a jellyroll pan with parchment paper.
- Place ground beef, bacon, and sweet onion in a large, deep skillet and saute until bacon has rendered its fat and onions are translucent. Break up chunks of ground beef as you are saute-ing,
- Add red bell pepper and garlic to the ground beef. Cook an additional 2 minutes. Remove from heat and stir in oregano, basil, green onions, and ketchup. Add salt and pepper to taste. Let cool to room temperature.
- Place one sheet of puff pastry between two sheets of plastic wrap and gently roll out to a rectangle about 12 inches by 10 inches. Remove the top piece of plastic wrap. Spread half of the ground beef mixture on puff pastry, leaving 1 inch clear on each of the four sides. Sprinkle with half of the Cheddar cheese.
- Use the bottom piece of the plastic wrap to help you roll the puff pastry and filling lengthwise into a log. Use the egg white as glue to seal the roll. Gently press both ends closed. Using the plastic wrap, lift the roll onto the prepared jellyroll pan and place seam-side down. Repeat process with the remaining sheet of puff pastry.
- Brush the tops of the bacon cheeseburger puff rolls with egg white and bake for 20 to 25 minutes until golden brown. Let rest for 10 minutes, then slice each roll on the diagonal into 4 pieces to serve.

- Prepare your frying station. If using a dutch oven, fill it with about 3 to 4 inches of oil. If using a cast-iron skillet or heavy-duty skillet, fill it with an inch and a half of oil. Don’t overfill either vessel because once you add the rolls, you may risk the oil bubbling over and causing a major fire. 2020 is already shot to hell, we don’t need to add you burning the house down to that list.
- In a large heavy-duty or cast-iron skillet, brown the chopped bacon over medium heat until crisp, about 7 to 10 minutes. Scoop out the crispy bacon, leaving just 2 tablespoons of leftover bacon fat in the skillet. With the skillet still over medium heat, add the diced onions to the skillet and season with flaky kosher salt, black pepper, and rushed red pepper flakes. Scrape up any delicious bacon bits left in the bottom of the pan. When the onions have softened, about 5 to 6 minutes, add the ground beef, breaking it up into smaller pieces. While the meat is still pink, season the mixture with granulated onion, granulated garlic, smoked paprika, dried parsley, and chili powder. Continue to cook the ground beef until browned and the juices have evaporated. A very small amount of natural fat will be left, but it won’t be enough to where you’d have to drain it. Open the package of wonton wrappers, and keep a piece of plastic wrap or moist paper towel nearby to drape over the pile of wrappers as you work to prevent them from drying out. When the oil has reached 350 degrees, gently fry 2 to 4 egg rolls at a time, until golden brown, about 3 to 4 minutes. Immediately after they come out of the oil, sprinkle them with the Everything Bagel + Salt seasoning.
