This is an elegant main dish that can be served to company or any special occasion. It doesn't take a lot of preparation or time. It is not only easy and quick it serves up beautifully as well.

8 boneless skinless chicken breast halves
1 cup brown sugar
4 fresh peaches, peeled,pitted and sliced (canned peaches can also be used)
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
2 tablespoons fresh lemon juice

Steps:

  • Preaheat oven to 350 degrees.
  • Place chicken in a lightly greased 9x13 inch baking dish.
  • Sprinkle with 1/2 cup of the brown sugar.
  • Place peach slices over chicken.
  • Sprinkle with the remaining 1/2 cup brown sugar, ginger,cloves and lemon juice.
  • Bake at 350 degrees for 30 minutes, basting with the juices, or until chicken is cooked through and the juices run clear.
  • FOR A SAUCE; mix 1/2 tablespoon cornstarch with 1/2 cup cold water; pour mixture into cooking juices,the mixture will thicken and become a sauce;Pour over chicken and peaches.

1 lb boneless chicken breasts
1/2 cup chicken broth
1/4 tsp salt
1/4 tsp pepper
1 tbsp chopped fresh thyme (or 1 tsp dried thyme)
2 peaches, sliced
1/3 cup low fat Ricotta cheese
1/2 tsp thinly sliced green onions

Steps:

  • Preheat oven to 350F. Sprinkle both sides of chicken breasts with salt, pepper and thyme. Place in a baking dish and add chicken broth. Top with foil. Bake for 25 minutes or until internal temp reaches 165 F.
  • Meanwhile, heat a non-stick skillet to medium high heat. Add sliced peaches. Let cook about 6 minutes, stirring occasionally.
  • Add low-fat ricotta cheese to skillet. Stir in with peaches until cheese melts and a sauce begins to form.
  • Remove chicken from oven and plate. Add peach topping to chicken. Sprinkle on green onions and serve.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1/4 cup reduced-sodium chicken broth
1/4 cup sherry or additional reduced-sodium chicken broth
1/3 cup peach preserves
2 garlic cloves, thinly sliced
2 teaspoons minced fresh tarragon
1 tablespoon balsamic vinegar

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, brown chicken on both sides in butter. Remove from the skillet and keep warm., Add broth and sherry to the skillet, stirring to loosen browned bits from pan. Stir in the preserves, garlic and tarragon. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes, stirring occasionally. Stir in vinegar. Return chicken to the skillet; cover and cook over medium heat for 8-10 minutes or until a thermometer reads 165°.
