½ cup butter
2 ¼ cups all-purpose flour
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon baking soda
⅛ teaspoon ground cloves
3 ripe bananas, mashed
1 teaspoon baking powder
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add one cup of the flour, the sugar, eggs, baking powder, vanilla, cinnamon, soda, and cloves. Beat until thoroughly combined.
  • Stir in the remaining flour. Beat in bananas and nuts. Drop by rounded teaspoons 2 inches apart onto a greased cookie sheet. Bake for 8 to 10 minutes or until edges are lightly browned. Cool cookies on a rack.

1/2 cup shortening
1 cup brown sugar, packed
2 large eggs
1 cup banana, mashed ripe (3 med)
2 cups flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup raisins

Steps:

  • In a large bowl, cream shortening and brown sugar.
  • Add eggs and bananas; mix up well.
  • In another bowl combine dry ingredients; then add to creamed mixture and mix well.
  • Stir in raisins.
  • Chill (dough will be very soft).
  • Drop by round teaspoonfuls onto greased baking sheets.
  • Bake at 350° for 8-10 minutes or until lightly browned.

  • Preheat the oven to 375. Line the cooking sheets with a silicone baking mat or parchment paper.
  • In a mixing bowl, cream together the butter and sugar (approximately 5 - 10 minutes) until smooth and creamy. Next slowly incorporate the eggs and vanilla on slow speed. Then turn the mixer up to allow the ingredients to get mixed together thoroughly.
  • Mash the bananas together in a medium-sized bowl and then add them into the sugar mixture. With the mixer on low, add in the baking soda, salt, cloves, and cinnamon until everything is combined.
  • Then turn the mixer on low and slowly add in the flour, 1/2 cup at a time. After the flour is mixed into the batter, turn off the mixer, scrape the sides of the mixing bowl with a spatula and then turn the mixer back on and let the ingredients thoroughly incorporated together (approximately 3 - 4 minutes).
