- Preheat a round waffle iron. Spray with nonstick baking spray.
- In a small bowl, whisk together Bisquick, buttermilk, melted butter, and 1 teaspoon vanilla paste.
- Cook waffle in preheated waffle iron until golden brown.
- In a large bowl or stand mixer, beat whipping cream until soft peaks form. Add mascarpone. Whip again until stiff peaks form. Transfer to a piping bag fitted with a large star tip. Pipe mascarpone cheese on top of waffle. Top with berries.
- In a microwave-safe small bowl, heat honey and remaining 1/2-teaspoon vanilla paste together until runny, about 20 seconds. Drizzle honey over the fruit.
- Serve waffle immediately and enjoy!

BELGIAN BIRTHDAY WAFFLES
Make these yeasted waffles for someone special's birthday, and they'll forget all about cake! Letting the batter ferment gives the waffles a malted flavor and makes them extra golden and crispy. The pop of confetti sprinkles mimics the crunchy pearl sugar found in some Belgian waffles.

- Heat the milk in a medium saucepan until just warm (about 110 degrees F). Sprinkle the yeast over the milk, and let it sit until dissolved, about 5 minutes. Pour the mixture into a large bowl, and stir in the butter, 1/2 cup of the sugar, egg yolks, 1 tablespoon of the vanilla and the salt. Fold in the flour (it's OK if there are a few lumps). Cover and set aside in a warm place until the mixture is bubbly and rises by about half its original volume, 1 to 2 hours. (The batter can be made a day ahead and refrigerated after it rises.)
- Once the batter is ready, preheat the waffle iron and preheat the oven to 250 degrees F. Whip the egg whites and the remaining 1 tablespoon sugar with an electric mixer to soft peaks in a medium bowl. Fold the whites and sprinkles into the batter.
- Brush the top and bottom of the preheated waffle iron with butter, and pour the batter into each compartment (this varies from 1/4 to 1/2 cup, depending on the size of your waffle maker). Cook until the waffles are golden brown and crisp; remove them to a plate, and transfer to the oven to keep warm. Repeat with the remaining batter.
- Meanwhile, warm the maple syrup in a small saucepan over medium-low heat. Remove the saucepan from the heat, and stir in the remaining 1 tablespoon vanilla. Set aside and keep warm.
- To serve, stack 2 waffles on a serving dish, drizzle with some of the maple-vanilla syrup and top with a dollop of whipped cream. Serve the remaining syrup on the side.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

- In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
- Preheat a lightly greased waffle iron.
- Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
- To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

- In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Fold in strawberries and blueberries.

- In large bowl, whisk together flour, baking powder, baking soda and salt.
- In medium bowl, whisk together eggs, buttermilk and vanilla until blended. Stir egg mixture into flour mixture until just combined. Whisk in butter. Let batter rest for 10-15 minutes.

BERRY WAFFLES
Steps:
- Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.
SUMMER BERRY WAFFLE TRIFLE

- Heat waffle maker; grease with vegetable oil. In large bowl, stir together all Waffles ingredients until well blended. To make each waffle, pour amount of batter recommended by waffle maker manufacturer into hot waffle maker; close lid. Bake about 5 minutes or until steaming stops. Carefully remove waffle to plate; set aside to cool.

- Pour remaining Filling in center of berries. Top with reserved waffle quarter and berries. Dust with powdered sugar. Refrigerate until serving time. Store in refrigerator.

- WAFFLES: Sift together dry ingredients in a medium mixing bowl.
- Beat egg whites until stiff and set aside.
- Whisk egg yolks, milk, agave nectar, and oil together. (You may have to gently warm the milk before adding the coconut oil as it solidifies when combined with very cold milk -- it is just like working with melted butter).
- Add to dry ingredients and mix together thoroughly.
- Fold egg whites into the batter.
- Add batter to your heated waffle maker in amount recommended by your waffle maker's instructions and also cook per its instructions.
- BERRY SAUCE: Combine ½ cup blueberries, preserves, and orange juice in a sauce pan over medium heat.
- Bring to a boil, reduce and cook for 5 minutes until thickened, stirring occasionally.
- Add remaining blueberries, strawberries, and orange liqueur. Stir and let stand a few minutes.
- ASSEMBLY: Top each waffle with berry sauce and a dollop of whipped cream.
- For birthday waffles, add one candle to the top of the whipped cream and light after you have placed the waffle in front of your birthday boy/girl. (or yourself) Keeping the candle straight in your whipped cream could prove to be a little tricky (use a light weight candle) but I made my own homemade and stiff enough to pull it off. Or, use a fresh strawberry to anchor your candle.
- Notes: During recipe testing, frozen blueberries were used (picked locally and frozen this summer) while strawberries were always fresh.
- The sauce was sweetened with mainstream tastebuds in mind. If you prefer something less sweet and a little tart as I do, you may want to skip the OJ and go with water and a couple of teaspoons of lemon juice.
- I got 8-10 square (Belgian style) waffles out of each batch using my Chefmate Waffle Maker.
- Agave nectar is a syrup made from the agave plant whose sugars are mainly the fructose type. Coconut oil got a bad rap for years but make no mistake, it is good stuff. Your skin and hair will thank you for it.
