2 eggs
⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I found this recipe at a Estate Sale. I have not tried this recipe, but I'm posting it for safe keeping.

2 teaspoons accent flavor enhancer
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried leaf thyme
1/4 cup ketchup
2 teaspoons prepared mustard
1 1/2 cups soft breadcrumbs
2 beef bouillon cubes
1 cup boiling water
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 cup shredded cheddar cheese or 1 cup swiss cheese
2 lbs ground chuck

Steps:

  • Beat egg lightly in medium bowl, add Accent, salt, pepper, basil, thyme, ketchup, mustard and bread crumbs. Dissolve boullion cubes in boiling water, add to bowl and mix well until all ingredients are very well blended. Mix in celery, onion and cheese. Break up ground beef and add to bowl, mix lightly but thoroughly with fork.
  • In a shallow baking pan, shape mixture into a 12"x5" oval loaf, or press meat mixture lightly into a 9x5x3-inch loaf pan.
  • Bake uncovered in 375 oven 1 hour to 1 hour and 10 minutes.

1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
1 (8 ounce) can tomato sauce
2 tablespoons chopped parsley
1 1/2 lbs ground beef
1/2 cup plain breadcrumbs
1 egg, lightly beaten
1 teaspoon salt
1/4 teaspoon pepper
4 slices bacon

Steps:

  • Preheat oven to 350 degrees.
  • In a medium skillet heat oil over medium heat.
  • Add onion and garlic and cook until softened.
  • Stir in tomato sauce and parsley and cook for 2 minutes.
  • In a large bowl stir together ground beef, bread crumbs, egg, salt, pepper, and half of the tomato mix, until well combined.
  • Shape meat into a loaf shape in a large roasting pan.
  • Brush with remaining tomato mix.
  • Arrange bacon over meat.
  • Bake until no longer pink inside, about 1 hour, 30 min.
  • Let stand 10 min before serving.

2/3 cup milk
3 slices bread, torn into pieces
1/2 cup chopped onion
1/2 cup grated carrot
4 ounces cheddar cheese or 4 ounces mozzarella cheese
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon thyme (optional) or 1 teaspoon sage (optional)
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
1/2 cup packed brown sugar
1/2 cup tomato sauce
1 teaspoon mustard

Steps:

  • In a large bowl, beat eggs.
  • Add milk and bread; let stand a few minutes or until the bread absorbs the liquid.
  • Stir in the onion, carrot, cheese, herbs and seasonings.
  • Add beef; mix well.
  • In a shallow baking pan, shape beef mixture into a 7 1/2 inches x 3 1/2-in. x 2 1/2-in. loaf.
  • Bake at 350 degrees for 45 minutes.
  • Meanwhile, combine topping ingredients. Spoon some of the topping over meat loaf.
  • Bake for about 30 minutes longer or until no pink remains, occasionally spooning some of the remaining topping over loaf.
  • Let stand 10 minutes before serving.

2 tablespoons unsalted butter
1 1/4 cups onions, finely diced
1/2 cup celery, finely diced
1/2 teaspoon dried thyme
1 teaspoon finely chopped garlic
1/2 cup grated carrot
1 cup fresh breadcrumb
1/2 cup half-and-half
2 eggs
1 1/2 lbs ground chuck
1 1/2 lbs ground pork
4 slices bacon, finely chopped
1 3/4 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons cider vinegar

Steps:

  • Preheat oven to 350°F
  • In large skillet heat butter until melted and foaming. Add onions and celery. Season to taste with salt and pepper. Cook three minutes, being careful not to brown.
  • Sprinkle thyme over onion mixture. Rub garlic and pinch of salt into paste; add garlic. Cook and stir until onions are tender and translucent. Stir in grated carrot; remove from heat. Cool completely. Meanwhile, soak bread in half-and-half. Lightly beat eggs.
  • In large mixing bowl combine ground meats, bacon, cooled vegetables, and bread crumb mixture. sprinkle the 1-3/4 teaspoon of salt and the pepper. Using hands, mix until well blended.
  • Turn mixture into rectangular baking dish. Using hands, shape into a 9x5 inch loaf. Make shallow indentation around sides.
  • For Ketchup Topping: Combine ketchup, brown sugar, and vinegar. Spoon over top of loaf. Bake on middle rack for 1 hour or until meat thermometer reaches 155°F Let rest 10 minutes.
