BLEU CHEESE AND BACON BURGERS

4 tablespoons butter
2 tablespoons bleu cheese crumbles (recommended: Treasure Cave)
1 1/2 pounds lean ground beef
1/2 cup bleu cheese crumbles (recommended: Treasure Cave)
1/4 cup real bacon pieces (recommended: Hormel)
1 tablespoon Montreal steak seasoning (recommended: McCormick Grill Mates)
Salt and freshly ground black pepper
4 onion rolls, toasted
Lettuce, tomato, onion
Sliced avocado, optional

Steps:

  • For bleu cheese butter:
  • In a small bowl with a fork, smash together butter and 2 tablespoons bleu cheese crumbles; set aside.
  • In a mixing bowl, stir to combine ground beef, 1/3 cup bleu cheese crumbles, bacon pieces, and steak seasoning. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns. Cover with plastic and set aside in refrigerator.
  • Set up grill for direct cooking over high heat. Brush and oil grate before cooking. Salt and pepper burgers and place on hot grill. Cook for 4 to 5 minutes per side for medium. Serve hot on toasted onion roll. Spread with bleu cheese butter, lettuce, tomato, onion, and sliced avocado, if using.
  • INDOOR: Follow instructions for preparing burgers. Preheat broiler. Place burgers on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium.

2 pounds ground chuck
1 pound ground sirloin
1/2 cup seasoned dry bread crumbs
1/4 cup steak sauce (recommended: Crosse and Blackwell)
3 extra-large eggs
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
8 to 10 hamburger buns
8 ounces blue cheese, sliced (recommended: Danish Blue)
Arugula and sliced tomatoes, for serving, optional

Steps:

  • Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
  • Prepare a charcoal or a stove-top grill.
  • Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

Steps:

  • In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into about 12 patties.
  • Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

1 cup dry bread crumbs
¾ cup crumbled blue cheese
1 extra large egg
¼ cup onion, chopped
⅓ cup buffalo wing sauce
4 hamburger buns, split and toasted

Steps:

  • Mix together the chicken, bread crumbs, blue cheese, egg, onion, and wing sauce in a mixing bowl until evenly combined. Form into 4 patties and place between sheets of waxed paper or plastic wrap. Place into an airtight container and refrigerate overnight for best results.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Cook the patties on the preheated grill until no longer pink in the center and the juices run clear, about 3 minutes per side. Serve on toasted buns with condiments of your choice.

4 ounces blue cheese, crumbled (Stella brand)
1 egg, beaten
1/2 cup seasoned bread crumbs

Steps:

  • Cook hamburgers using preferred method.

Bleu cheese is tops in my book, making this burger total aces with me. Amp up your next cookout or tailgate with a couple of these and you'll definitely score big points!

1 - ground beef patty -- sirloin is a treat
1 large slice dark russian rye or pumpernickel cut in half
3 tablespoon(s) bleu cheese heaping
1 slice(s) raw onion choice
1 dash(es) salt and pepper
1/4 teaspoon(s) kitchen bouquet or gravy master to char (optional)

Steps:

  • Cook Hamburger in very hot fry pan or on outside grill. I sear mine both sides and then turn heat down, so burgers remain moist. Salt and pepper slightly. I like mine just past pink, cooked through but not over done. If you like char put 1/4 teaspoon of Kitchen Bouquet on burger 2/3 way through cooking, turn a couple of times and move around to coat burger. It provides a great char due to sugar content. An alternative is sprinkle 1/8 teaspoon sugar, just a tad, on burger, flip to both sides. You won't taste the sugar.
  • Lightly toast bread. I use 1 slice cut in half, so the burger fills the slice, and you don't have an overly amount of bread.
  • When Burger is cooked place on 1/2 slice of bread, top with bleu cheese and place in microwave for 30 to 40 seconds to melt cheese.
  • Option: You could put Bleu Cheese on before removing burger from pan and allow to heat. The microwave speeds the process.
  • Compliment with Fries, Chips, Potato Salad or your choice. Enjoy.
  • Note: Many people like Bleu Cheese with their steaks. I prefer a little Butter and Lemon at times, or leave the steak bare.
  • Note: The lightly toasted dark bread makes this sandwich. A Hamburger Bun is a No No. Plain Rye would work.
