Blackened Sirloin with Southwestern Butter image

Number Of Ingredients 12

SOUTHWESTERN BUTTER
6 tablespoons butter, slightly softened
1/4 teaspoon cumin
1/4 teaspoon dried oregano leaves
1/4 teaspoon chili powder
1/8 teaspoon dried thyme leaves
1/8 teaspoon pepper
dash ground red pepper (cayenne)
STEAK
1 pound boneless beef sirloin steak, (1 to 1 1/2 inches thick)
1 tablespoon butter, melted
2 teaspoons blackened steak seasonings

Steps:

  • 1. GRILL DIRECTIONS: In small bowl, combine all butter ingredients blend well. Place butter on piece of plastic wrap. Shape into 4-inch log. Refrigerate 1 hour or until firm.2. Meanwhile, brush each side of steak with 1 tablespoon melted butter rub each side of steak with 1 teaspoon blackened steak seasoning. Let stand at room temperature for 30 minutes.3. Heat grill. When ready to grill, place steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 20 minutes or until of desired doneness, turning once.4. If necessary, allow butter to stand at room temperature for about 15 minutes to soften. To serve, cut steak into 4 serving pieces place on serving plates. Cut butter into 4 slices place on center of hot steaks. 1/2 cup crumbled blue cheese
1/4 cup butter, softened
1/4 cup chopped walnuts, toasted
2 tablespoons minced fresh parsley
1-3/4 teaspoons minced fresh rosemary, divided
6 large garlic cloves, peeled
1/4 teaspoon salt
1/4 teaspoon pepper
2 beef top sirloin steaks (6 ounces each)

Steps:

  • In a small bowl, combine the blue cheese, butter, walnuts, parsley and 3/4 teaspoon rosemary. Shape into a 5-in. log; wrap and refrigerate until firm, 30 minutes., In a small food processor, combine the garlic cloves, salt, pepper and remaining rosemary. Cover and process until blended. Rub over both sides of steaks. , Grill steaks, covered, over medium heat or broil 4-6 in. from the heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Unwrap blue cheese butter; cut two 1/2-in.-slices from log. Place one slice on each steak. Rewrap remaining butter; refrigerate for 1 week or freeze for up to 3 months.
