- 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
- 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
- 3. When the yeast is bubbly, add 1 cup flour and beat well.
- 4. Then add eggs, salt, and another cup flour. Beat well.
- 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
- 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
- 7. Work until the dough is only slightly sticky.
- 8. Set in a warmed oven covered by a tea towel, to rise.
- 9. When the dough is doubled in size, remove from oven.
- 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
- 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
- 12. When out of the oven, brush with melted butter.

- Dissolve yeast into lukewarm water.
- Sift together flour, salt, soda, powdered buttermilk, and white sugar.
- Add half the flour mixture to the water and yeast mixture and beat well.
- Beat in melted butter.
- Add remaining flour mixture and mix lightly.
- Turn upside down on a floured board leaving bowl on top to cover.
- Let rise for 10 minutes.
- Remove bowl and knead until smooth.
- Cover with bowl again and let rise for 20 minutes.
- Roll dough out into a rectangle.
- Spread cream onto dough.
- Sprinkle cinnamon, brown sugar, and chopped nuts.
- Roll up and slice into 1 inch slices.
- Preheat oven to 425.
- Place in pan and let rise for 30 minutes.
- Bake for 7-10 minutes.
- Top with cream cheese or powdered sugar icing.

- 1. Scald milk in a saucepan; add shortening, sugar, and salt. Cool to lukewarm.
- 2. Sprinkle yeast on warm water; stir to dissolve.
- 3. Add 1 1/2 cups of the measured flour to the milk mixture; beat well. If not using a mixer, beat with a wooden spoon.
- 4. Beat in eggs and yeast.
- 5. Gradually stir in enough remaining flour, a little at a time, to make a soft dough that leaves the sides of the bowl. Dough will be slightly sticky.
- 6. Turn onto lightly floured board cover and let rest for 5 minutes.
- 7. Knead, incorporating a little more flour as necessary, until smooth, satiny, and no longer sticky, about 8 to 10 minutes. Keep your hands dusted with flour to prevent sticking. Kneading is necessary to produce the great texture of these rolls.
- 8. Place in a lightly greased bowl, invert to grease top, cover, and let rise until doubled, for 1 to 1 1/2 hours. Punch down and turn onto a board.
- 9. Divide in half. Lightly grease counter or board. Roll each half into a 14 x 6-inch rectangle.
- 10. For the filling, combine 1 cup of sugar, 1/2 cup of melted butter, and 1 Tbsp ground cinnamon.
- 11. Spread half of the mixture on each rectangle. Scatter 1/2 cup of raisins on each rectangle (optional).
- 12. Roll up the rectangle lengthwise as for jelly roll. Seal the edges and cut dough into 1-inch slices. Put cut side down in 2 well-greased square baking pans. Cover and let rise until doubled. Brush butter on the tops very lightly.
- 13. Bake 25-30 minutes in a preheated oven at 350 degrees. Makes 32 rolls, however, the exact number will depend on the size you cut them.
- 14. For the icing, mix 1 cup confectioners' sugar with milk or cream to enable spreading consistency. Add 1/2 tsp vanilla and a dash of salt.
- 15. Frost while rolls are still warm. Note 1: Though this dough can be made by hand mixing, I mixed the dough in my Kitchen Aid mixer. I let the Kitchen aid mixer knead the dough for 10 minutes on low and then I hand-kneaded the dough another 5 minutes before placing them in the bowl to rise. Note 2. I like to let my dough rise in the oven. I cover it with a lightweight cloth and put it in the oven. I put a shallow pan of hot water beneath the bowl of dough on a lower rack in the oven. Note 3: I cut the rolls between 1 1/2 inches and 2 inches because Grandma's cinnamon rolls were always big. These can be baked in a round, rectangle, or square pan.
- 16. Every time I bake these for my family, my first memory of these rolls come back to me. I was 4 years old and I was out on the tractor with Grandpa one chilly morning. We had just left the barn and were moving hay to the pasture for his cows. I caught a whiff of something in the air. I said," Grandpa what is that good smell?" He lifted his head and said, "Oh wee! Grandma's baking cinnamon rolls." I was sitting on top of this lap and he turned that tractor around so fast that I almost fell off. We got to the house and raced inside the kitchen door and I guess Grandma had been watching us from the window. She was standing there with her rolling pin, slapping it in her hand. She looked sternly at Grandpa and said, "If you're ever going to drive the tractor like that again while that child is with you, you're going to be seeing stars." Grandpa and I sat down and Grandma placed a glass of milk and one of her big cinnamon rolls in front of us. When Grandma had her back to us, I leaned in and whispered, "Grandpa, this is so yummy I think it's worth seeing the stars." Grandpa smiled back at me and winked. From then on when I was with Grandpa on the tractor I would say, "Go faster Grandpa." He would reply, "No siree, Grandpa don't want to see stars today." We would laugh and giggle.

- 1. Dissolve the yeast in 1 cup of WARM water. Allow to sit about 5 minutes. Stir to make sure all of the yeast is dissolved.
- 2. In a large bowl, add the yeast mixture to the powered milk, sugar, oil and egg.
- 3. Slowly add in 1 1/2 cups flour and work in until smooth. Gradually add 2 - 2 1/2 cups more flour until you get the dough to a good working consistency so that it is easy to handle. Cover and let rest for 5 minutes.
- 4. Knead the dough onto a floured surface until smooth. Put dough in a large bowl with lightly oiled sides. Cover and set in a warm place. Allow to rise until the dough has doubled in size.
- 5. On a floured surface, knead the dough until smooth and then roll it out into a large rectangle. Generously spread the room temperature butter over the top of the rectangle of dough.
- 6. In a small bowl, mix together the cinnamon and the sugar and sprinkle evenly over the top of the buttered dough.
- 7. Sprinkle the chopped pecan pieces evenly over the sugar-cinnamon mixture. (OPTIONAL)
- 8. Beginning at the widest side, roll up as evenly and tightly as possible. Cut into rolls at 1 inch intervals with kitchen twine.
- 9. Place on a greased cookie sheet or baking dish. Cover and set in a warm, dry place until doubled in size.
- 10. Bake in a preheated 350 degree oven for 20-30 minutes. Remove from the oven to begin to cool. While still warm , drizzle with the glaze.
- 11. TO PREPARE THE GLAZE: In a small mixing bowl, add vanilla to the sifted confectioner's sugar. VERY SLOWLY add warm water a teaspoon at a time until the mixture gets to a consistency to allow you to drizzle it over the warm cinnamon rolls. If you get it too thin, simply add more sugar.

- 1. Combine butter, salt, sugar, hot water, hot potato water, and hot mashed potatoes into a bowl and stir until the butter melts.
- 2. In a separate bowl, combine the yeast with the warm water and allow time to activate. Add yeast mixture to the potato water mixture and stir. Stir in beaten eggs. Next, add flour to the water mixture, one cup at a time, stirring after each cup, until a soft dough forms.
- 3. Turn out onto a floured surface and start kneading until smooth, about seven minutes. Place dough into a greased bowl, turning o grease all sides. Cover, and let rise until double, about 1 hour.
- 4. Roll dough into a long rectangle and spread softened butter over top. Combine cinnamon and sugar and sprinkle over top of dough. Roll up jelly-roll style, long way, and cut into 24 equal pieces. Place rolls into two 9x13 pans. Cover and let rise until double, about 30 minutes. Bake in a 350-degree oven until golden brown, about 25-30 minutes.
- 5. Let rolls cool for about 10 minutes. Combine frosting ingredients and spread over rolls.

- Sprinkle yeast in water, stir to dissolve. Mix first 5 ingredients and 2 cups flour. Beat until smooth gradually add remaining flour to make a soft dough. Place in greased bowl and turn to coat. Cover and let rise for 1 1/2 hours. Combine syrup, butter and sugar. Heat until sugar is dissolved. Cool slightly. Pour syrup evenly into 2- 13"x9" pans. SINFUL CINNAMON ROLLS
I agree with Kim. This cinnamon roll recipe IS sinful! They're soft and fluffy and the balance of cinnamon and sugar is spot on. The icing drizzle on top of the cinnamon rolls is creamy with a hint of vanilla and butter. Oh, these are good!

- 1. Turn oven on to 200 degrees for 3 minutes and then turn off. Dissolve yeast in water in a small bowl, mix and let sit for about 10 minutes or till bubbly. Beat eggs, sugar and salt in a mixing bowl. (I used my Kitchenaid with the paddle attachment). Then add the yeast mixture. Add 1 cup of flour and beat on high for about a minute or until smooth. Add 1 stick of melted butter, mix well. Then add 3 1/2 cups of flour in 1/2 cup increments (I switch to my dough hook at this point, or you can mix in flour and knead by hand). Knead the dough 5 minutes with a mixer or 8-10 minutes by hand.
- 2. Place the dough in a greased bowl and cover. Place a towel on oven rack and put covered bowl in warm oven on top of towel. Let dough rise until doubled, about 45 minutes to an hour.
- 3. Remove from oven and punch down dough. On a lightly floured surface, roll dough into a rectangle until its about 3/4-in thick.
- 4. Mix cinnamon and brown sugar together. Spread remaining 1/2 stick of melted butter over the dough and sprinkle the sugar mixture over the butter. (At this point you could add raisins, or chopped pecans if you wish). Roll dough into a log shape and cut into pinwheels according to how thick you want them.
- 5. Put close together in a greased 9x13 pan and brush lightly with butter. Cover and let sit for 30 minutes. Bake at 375 degrees for about 20 - 25 minutes or until they start to brown. Start checking them at 20 minutes. They won't rise much while sitting in the pan, but they bake up beautifully.
- 6. Mix glaze ingredients together and drizzle over hot rolls. You may want to double the glaze if you like a little more.

- 1. For the dough: In a standing mixer fitted with the paddle attachment, beat the eggs, granulated sugar, and salt. Combine the warm milk and margarine and add to the egg mixture. While mixing slowly, gradually add 4 cups of the flour; beat to combine. Add the yeast and mix thoroughly. Add the remaining 4 cups flour and mix on medium speed for about 7 minutes to make a soft dough.
- 2. Turn the dough out of the bowl. Knead briefly and form into a ball. Put the dough in a lightly oiled bowl. Cover with plastic wrap and set aside at room temperature until doubled in size, about 1 hour.
- 3. Preheat the oven to 350 degrees F.
- 4. For the filling: Turn the dough onto a work surface and roll into a 1 1/2 by 2-foot rectangle. Spread the margarine over the dough and sprinkle the entire surface with the brown sugar, cinnamon, and chopped pecans. Roll the dough up into a cylinder starting with a long edge, and then cut into 12 slices. Lay the slices in an oiled baking pan and bake until golden brown, about 15 minutes. Let cool.
- 5. For the icing: Whisk the confectioners' sugar, salt, and almond extract together in a large bowl. Whisk in a tablespoon of margarine at a time until combined. (This will look a little crumbly.) Slowly whisk in the milk to make a thick glaze. Drizzle the glaze over the rolls; set aside for a couple minutes for the glaze to set. Serve.
