Healthy low carb and gluten free blueberry jam cheesecake bars made with chia jam. These sugar free crumb bars can be made with any fresh or frozen berries.

1 1/2 cups fresh or frozen blueberries
1/4 cup low carb sugar substitute (or Swerve)
1 tablespoon water
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
1/2 cup almond flour
1/2 cup oat fiber (see note)
1/3 cup low carb sugar substitute (or Swerve)
2 tablespoons coconut flour
1/2 teaspoon baking powder
1/2 cup cold butter (cubed)
4 ounces cream cheese (softened)
1 1/2 tablespoons low carb sugar substitute (or Swerve)
1/4 teaspoon vanilla extract

Steps:

  • Add blueberries, sweetener, and water into small sauce pan.
  • Bring berry mixture to a boil then reduce heat to simmer.
  • Stir in chia seeds and simmer for about 15 minutes or until thickened.
  • Remove from heat and add vanilla.
  • Allow to cool.
  • Preheat oven to 375°F. Line an 8x8 baking pan with aluminum foil or parchment paper and grease.
  • Pulse together almond flour, oat fiber, sweetener, coconut flour, and baking powder in a food processor until combined.
  • Add cubed butter and pulse until mix forms into coarse crumbs. Set aside half the mixture.
  • Press remaining crust mixture into prepared pan.
  • If desired, bake the crust for about ten minutes before proceeding. (totally optional)
  • Spread cooled blueberry chia jam on top of crust.
  • Beat cheese topping ingredients with an electric mixer until well blended.
  • Drop small scoops of cheese mixture on top of jam.
  • Sprinkle reserved crust mixture evenly on top.
  • Bake 30-35 minutes or until top is browned.
  • Cool on rack then place in refrigerator until set.
  • Cut into bars. Store in refrigerator.

1 cup (120g) all-purpose flour
1/2 cup (100g) firmly packed light brown sugar
1/3 cup (67g) granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (226g) cold unsalted butter, cut into 1/2-inch pieces
2 cups (198g or 160g) oats (regular or quick)

Steps:

  • Preheat oven to 375°F. Grease a 9" x 13"x 2" baking pan. Line with aluminum foil or parchment paper. Lightly grease the lining.
  • Place the flour, brown sugar, sugar, baking powder, and salt in the bowl of a food processor. Pulse until combined (about 4 pulses). Add the butter and pulse until mixture is crumbly. Add the oats and pulse until blended.
  • Set aside 1 & 1/2 cups of oat mixture.
  • Press the remaining oat mixture evenly into the bottom of prepared pan. Bake 10 minutes.
  • Spread the jam evenly on top of the crust, leaving about 1/4-inch border around the edges.
  • Using an electric mixer on medium speed, beat the cream cheese, sugar, and vanilla extract until well-blended and smooth.
  • Drop small dollops (a teaspoonful or less) of the cream cheese mixture on top of the jam. Sprinkle the remaining oat mixture over the top of the bars.
  • Bake 30-35 minutes, or until bars are golden brown and set.
  • Cool completely before cutting into bars.

1 ¼ teaspoons baking powder
½ cup shortening
¾ cup white sugar
3 eggs
¾ teaspoon almond extract
⅓ cup milk
1 ½ cups fresh blueberries
⅓ cup confectioners' sugar
6 tablespoons cream cheese, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking dish.
  • To make the crust: Cream shortening, sugar, one egg, milk and almond extract in a large bowl. Mix in flour and baking powder, stirring constantly. Spread crust evenly in baking pan. Top with blueberries.
  • To make the topping: In a medium bowl, beat two eggs, and cream cheese until smooth. Stir in powdered sugar and almond extract. Spread over blueberries.

3/4 cup sugar

Steps:

  • Preheat oven to 350°F Combine butter and graham cracker crumbs and press firmly and evenly onto bottom of 9 X 13-inch baking pan.
  • Beat cream cheese until smooth. Add sugar, eggs and vanila, beating until well blended. Set aside.
  • Stir jam until softened and spread evenly over crust; sprinkle with blueberries. Top with cream cheese mixture.

½ (14.4 ounce) package graham crackers, coarsely broken
3 tablespoons white sugar
¾ teaspoon ground cinnamon
6 tablespoons unsalted butter, melted
3 (8 ounce) packages cream cheese, at room temperature
¾ cup white sugar
3 medium lemons, zested and juiced
3 large eggs
2 ½ cups fresh blueberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease the bottom of an 8-inch square baking pan. Place parchment paper over the top of the pan and press down at the corners so you have a slight overhang.
  • Combine graham crackers, sugar, and cinnamon for crust in the bowl of a food processor; process until combined and has the consistency of bread crumbs. Pour melted butter in slowly and pulse a couple of times to fully incorporate; the mixture will look like wet sand. Scrape into the prepared baking pan and pat firmly with the bottom of a glass.
  • Bake in the preheated oven until set, about 12 minutes.
  • Combine cream cheese, sugar, lemon zest, and lemon juice for filling in the bowl of a food processor; pulse until well combined. Add eggs, one at a time, blending to combine between each addition; process until smooth.
  • Remove crust from the oven. Pour filling on top and sprinkle evenly with blueberries; they will sink slightly into the filling, this is okay.
  • Bake until filling is mostly set and only slightly jiggly in the center, about 45 minutes. Remove from the oven and let cool completely, about 30 minutes. Refrigerate until set, at least 3 hours.
  • Remove from the pan using the parchment lining and slice into 12 bars.

1/4 cup granulated sugar (49.5 grams)
1/2 lemon, zested
1 lemon, juiced
2 1/2 teaspoons cornstarch
Pinch kosher salt
Cooking spray, for greasing
2 sticks unsalted butter, at room temperature (226 grams)
1/2 cup granulated sugar (100 grams)
1/2 cup packed light brown sugar (106 grams)
1 teaspoon pure vanilla extract
2 cups all-purpose flour (240 grams)
1 1/2 cups old-fashioned rolled oats (133 grams)
1 teaspoon kosher salt
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 cup chopped pecans (57 grams)

Steps:

  • For the quick blueberry jam: Stir together the blueberries, sugar, lemon zest and juice in a medium saucepan over medium heat and cook until the berries release some liquid and soften, 1 to 2 minutes. Mash the mixture with a potato masher until the berries break down, decrease to medium-low heat and cook until the sugar dissolves, 3 to 5 minutes. Sprinkle the cornstarch over top, stir and cook until the jam thickens enough to coat the back of a spoon nicely, about 1 minute. Remove from the heat and allow to cool completely, 30 minutes.
  • For the crumble: Preheat the oven to 350 degrees F. Grease a 9-inch square baking dish with cooking spray and line with parchment paper.
  • Cream the butter, granulated sugar and brown sugar in a stand mixer fitted with the paddle attachment until light and fluffy, 2 to 3 minutes. Add the vanilla and mix gently until combined.
  • Add the flour, 1 cup oats, salt, baking powder and cinnamon and mix on low speed until just combined, scraping down the sides of the bowl as needed. Transfer 1/2 cup of the mixture to a medium bowl and set aside. Press the remaining mixture evenly into the bottom of the prepared baking dish.
  • Stir the remaining 1/2 cup oats and chopped pecans into the reserved mixture in the medium bowl. Refrigerate the mixture until the jam is cooled completely.
  • Spread the cooled jam evenly over the crust and sprinkle the crumble on top. Bake until golden brown and set, 30 to 35 minutes. Transfer the baking dish to a wire rack and allow to cool completely, about 1 hour. Slice and serve.
