This is quite good whether served over toast or rice. I haven't tried it but it could be served over pasta also.

1/4 cup butter
6 mushrooms, sliced
1 (10 3/4 ounce) cream of shrimp soup
1 cup sour cream
1 teaspoon soy sauce
1/4 teaspoon black pepper
1 1/2 lbs shrimp

Steps:

  • Make sure shrimp are cooked, shelled and deveined.
  • Melt butter and saute mushrooms until wilted. Stir in soup, sour cream, soy sauce and pepper.
  • Cook, stirring, until sauce bubbles and becomes smooth. Fold in shrimp.
  • Heat until bubbly.
  • Serve over toast points, rice or pasta.
  • This can also be spooned into small casseroles; top each casserole with 1/3 cup grated sharp cheddar cheese. Place under broiler and broil until bubbly and golden brown.

In 1803, the United States purchased the Louisiana Territory from France. Soon after, Rue Bourbon was renamed Bourbon Street, but the French influence over food and culture remains. The Cajun seasoning on these succulent shrimp adds just the right amount of "ooo-wee!" while the tomato sauce with fresh veggies is classic Creole all the way. Cook up this low-calorie beaut tonight and let the good times roll!

14½ oz. Diced Tomatoes, Canned
Info 8 oz. Shrimp
1 Green Bell Pepper
¾ cup Parboiled White Rice
1 Celery Stalk
3 Tbsp. Cajun Seasoning
2 Green Onions
2 Garlic Cloves

Steps:

  • Before You Cook If using any fresh produce, thoroughly rinse and pat dry Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Cook the Rice Bring a small pot with rice and 1 1/2 cups water to a boil. Reduce heat to low, cover, and cook until tender, 18-20 minutes. While rice cooks, prepare ingredients. 2 Prepare the Ingredients Trim ends off celery and cut into 1/4" dice. Stem, seed, and cut green bell pepper into 1/4" dice. Mince garlic. Trim and thinly slice green onions on an angle, keeping white and green portions separate. Rinse shrimp, pat dry, and season with 2 tsp. Cajun seasoning (reserve remaining for sauce). 3 Sear the Shrimp Heat 2 tsp. olive oil in a medium non-stick pan over medium-high heat. Add shrimp to hot pan and sear on one side until browned, 2-3 minutes. Remove to a plate. Reserve pan; no need to wipe clean. Shrimp will finish cooking in a later step. 4 Cook the Tomato Sauce Add 2 tsp. olive oil to pan used to cook shrimp. Reduce heat to medium and add celery and green bell pepper. Cook, stirring occasionally, until vegetables are tender, 4-5 minutes. Add garlic, white portions of green onions, and half the remaining Cajun seasoning and cook 1 minute. Add diced tomato, bring to a boil, and cook 2 minutes. Taste, and add remaining Cajun seasoning if desired. Sauce should be chunky, but not too thick. Add 1-2 Tbsp. water if needed. 5 Finish the Shrimp Add shrimp to tomato sauce and cook until shrimp reaches a minimum internal temperature of 145 degrees, 3-4 minutes. Remove from burner. 6 Plate the Dish Place a serving of rice on a plate. Spoon shrimp and tomato sauce around rice. Garnish with green portions of green onions.

1 (16 ounce) box fettuccine pasta
2 tablespoons olive oil, divided
1 medium tomatoes, diced
2 teaspoons cajun seasoning
1 teaspoon garlic powder
1/2 lb cooked shrimp, peeled, deveined, tails removed or 6 ounces baby shrimp
1 (1 lb) jar alfredo sauce

Steps:

  • Add 1/2 tablespoon olive oil to the water for cooking the pasta. Cook pasta according to package directions.
  • While pasta cooks, add 1 1/2 tbsp olive oil, Cajun seasoning, garlic powder, and tomatoes to a small saucepan. Cook over medium-high heat until tomatoes have sort of melted. Maybe ten minutes.
  • Add shrimp and cook until hot.
  • Add Alfredo sauce and bring to a low boil. Simmer until pasta is done.
  • If desired you can add a small can of finely diced olives.
  • Serve hot sauce over hot pasta.

1 1/2 lbs small shrimp, shelled,reserving the shells,and deveined
1/4 cup butter
2 cloves garlic, halved
1/3 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
3 ounces chopped mushrooms
1/4 cup finely chopped celery
2 teaspoons sweet paprika
3 tablespoons all-purpose flour
1 tablespoon tomato paste
2 tablespoons sour cream
1/4 teaspoon Tabasco sauce, to taste
rice, ring (recipe is in my cookbook)
1/4 cup minced fresh parsley

Steps:

  • Rinse shrimp well and pat dry on paper towels.
  • In a bowl, rinse reserved shells well in several changes of water, drain them in a colander.
  • Combine them with 2 cups water in a saucepan.
  • Bring to boil and simmer mixture for 20 minutes.
  • Strain broth through a sieve lined with a dampened paper towel (there should be about 1 ¼ cups of broth, if not, add enough water to measure, or reduce).
  • Reserve.
  • In a large skillet, melt 2 tblsps butter over moderately-low heat and in it cook the garlic, stirring, until it is pale golden.
  • Discard garlic and add shrimp to the oil.
  • Cook over moderate heat, stirring, for 3 minutes, or until barely pink, but not cooked through.
  • Transfer shrimp to a bowl, add remaining 2 tblsps of butter to the skillet and cook onion, peppers, mushrooms and celery, stirring, for 5 minutes.
  • Add paprika and flour and cook over moderately-low heat, stirring, for 3 minutes.
  • Stir in tomato paste and reserved shrimp broth and bring to boil.
  • Add shrimp mixture and simmer, stirring occasionally, for 3 minutes, or until shrimp are cooked through.
  • Stir in sour cream and Tabasco.
  • Bring mixture to a simmer, stirring, and season with salt and pepper (may be made 1 day in advance and kept covered and chilled. Reheat in skillet over moderately-low heat, stirring, until heated through, but do not let boil.) Spoon Shrimp Creole in center and around edge of rice ring and garnish with parsley.

Steps:

  • In a 2 quart saucepan, melt butter or margarine over medium heat. Add onion, green pepper, celery, and garlic; cook until tender.
  • Mix in cornstarch. Stir in stewed tomatoes, tomato sauce, Worcestershire sauce, chili powder, and red pepper sauce. Bring to a boil, stirring frequently. Stir in shrimp, and cook for 5 minutes.
