A FIREFIGHTER'S MEATLOAF

Firefighters all across Canada can't get enough of this Dijon mustard and salsa meatloaf. Serve with baked beans and greens. Leftover sandwiches are great the next day.

Number Of Ingredients 10

2 slices whole wheat bread
2 pounds ground beef
1 green onion, chopped
2 tablespoons chopped onion
1 cup medium salsa
2 tablespoons whole grain Dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons minced garlic
salt and pepper to taste
1 tablespoon barbeque sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Soak the bread in warm water in a small bowl. Place the beef in a large bowl. Drain bread and add to beef along with green onion, onion, salsa, Dijon mustard, Worcestershire sauce, garlic, salt and pepper. Mix by hand until well blended. Form into a loaf and place in a greased loaf pan.
  • Bake for 1 hour in the preheated oven. Drain off excess fat and top with barbeque (Diana) sauce. Return to the oven and bake for an additional 15 minutes.

2 (2-pound) cans peeled tomato, chopped
1/2 pound cubed cheddar
1 cup Sauteed mushrooms
1 teaspoon chili powder
1 package cooked noodles

Steps:

  • In a skillet brown the beef and the onions. In a bowl combine browned beef, onions, tomatoes, 1/4 pound cheese, mushrooms, chili powder and noodles. Transfer to baking dish. Sprinkle with remaining 1/4 pound cheese. Bake in preheated 300 degree oven for 1 hour.

FILLING:
1/2 cup finely chopped onion
1/2 cup diced celery
1/2 cup butter, cubed
6 slices bread, toasted, cubed
1 large egg, beaten
1/2 cup water
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
MEAT LOAF:
1 large egg, beaten
2/3 cup evaporated milk
1/4 cup dry bread crumbs
1 teaspoon salt
1-1/2 pounds lean ground beef

Steps:

  • In a skillet, saute onion and celery in butter until tender. In a large bowl, combine the bread cubes, egg and water. Stir in the onion mixture, poultry seasoning, salt and pepper; set aside. , In another large bowl, combine the egg, milk, bread crumbs and salt. Crumble beef over mixture and mix well. Pat two-thirds of the meat mixture onto the bottom and up the sides to within 3/4 in. of the top of a 9x5-in. loaf pan. Spoon filling into meat shell; cover top with remaining meat mixture and seal edges. , Bake at 350° for 1 hour or until meat is no longer pink; drain. Let stand for 10 minutes before serving.

Onion to taste
Salt, pepper, savory salt
1 cup cracker crumbs
1 cup milk
1 egg, slightly beaten
1/4 cup tomato soup (optional)
1/4 cup ketchup
3 tablespoons brown sugar
1/4 teaspoon nutmeg
1 teaspoon dry mustard
Little water

Steps:

  • Mould beef, onion, seasonings, cracker crumbs, milk, egg and tomato soup into a loaf shape.
  • Place in a pan and over the top pour the ketchup, brown sugar, nutmeg, dry mustard mixed with a little water.
  • Bake 1 hour in a preheated 350 degrees F oven.

1 medium onion, grated
3 cloves garlic, minced
1/2 cup ketchup
1 large egg, beaten
1/2 pound ground pork
1/2 pound ground beef
3/4 cup Italian-seasoned dry breadcrumbs
3/4 cup freshly grated Parmesan cheese
3 slices bacon (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Place the onion, garlic, ketchup, and egg in a large bowl; stir to combine. Add meat and mix until well combined. Add breadcrumbs and cheese and continue mixing until thoroughly incorporated.
  • Transfer meat mixture to an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan. Top with bacon strips, if desired, and cover with parchment-paper-lined aluminum foil. Transfer to oven and bake until meat is no longer pink, about 55 minutes. Uncover, and continue baking an additional 30 minutes. Let meatloaf stand, loosely covered, about 10 minutes before slicing and serving.
