- In a large nonstick skillet, brown pork chops in oil over medium heat. Sprinkle with salt and pepper. Transfer to an ungreased 13-in. x 9-in. baking dish. , In the drippings, saute onions until tender. Spoon over chops; add broth. Cover and bake at 325° for 10-15 minutes or until a thermometer reads 145°. Remove pork chops and onions; keep warm. Let meat stand for 5 minutes before serving., In a small saucepan, combine cornstarch and water until smooth; stir in pan juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with pork and onions.

BREADED PORK CHOPS SMOTHERED WITH ONIONS.
Have been making this for along time and did not see it posted anywhere here. I thought I'd share. My family loves when I make this. Pork comes out really moist and good. Hope you enjoy it.

Steps:
- Preheat oven to 350.
- Place chops first in egg and than in bread crumbs. Wet your hands a little with water and dampen each side of chop alittle(this prevents burning) fry each side for a few minutes until golden brown.
- If you use chicken broth, add 1 chicken bouillon cube. If you use water add 2 bouillon cubes.
- Place chops with broth and chopped onion.
- Cover and cook for 1 hour.
- I like to serve with mashed potatoes and corn.

- Heat skillet to med/medium high temp with oil.
- In separate shallow bowls (1 bowl for each item) place the 2 eggs (beaten), milk, flour, and crackers. Dip the pork chop in milk, then flour, then egg and lastly the cracker crumbs.
- Place in heated skillet and cook until outer crust is golden brown (should only take a couple minutes per side).
- Remove pork chops from skillet and place into a baking pan. Sprinkle each chop with garlic powder and pepper. Slice onion (fairly thin) and place two slices on each pork chop.
- Bake at 350 degrees for 20-30 minutes. If you prefer a crispy breading do not cover with foil, if you prefer a softer breading cover with foil and bake for 20 minutes then remove foil for the last 10 minutes of baking.
- I like to serve this with potatoes I have boiled. I remove the pork chops from the baking dish, put a little oil or butter in the baking dish to deglaze then toss the potatoes in the baking dish, stir in some seasoning salt and pepper then remove.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly coat a wire rack with cooking spray and set in a rimmed baking sheet.
- Whisk eggs and water together in a shallow dish. Place bread crumbs in a second shallow dish.
- Season pork chops evenly with salt and pepper. Dip and coat chops in egg, allow excess to drip off, then dip in bread crumbs until well coated.
- Heat 1/2 of the oil in a large skillet over medium-high heat. Place 2 chops in the skillet and cook until golden and crisp, about 2 minutes. Flip and cook until crisp on the other side, 1 to 2 minutes more. Transfer to the prepared rack. Heat remaining oil in the skillet and repeat to sear remaining chops.
- Bake pork chops in preheated oven until no longer pink in the center, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 155 degrees F (68 degrees C).

ONION-AND-PEPPER PORK CHOPS

- Dust the pork chops on both sides with the flour; season with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over high heat. Add the pork chops and cook until golden brown, 4 minutes. Flip; cook until lightly golden on the other side, 2 more minutes. Remove to a plate.
- Reduce the heat to medium high; heat the remaining 1 tablespoon olive oil in the skillet. Add the bell peppers, onion, chopped garlic, pepperoncini, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are softened, 10 minutes. Stir in the pepperoncini brine and chicken broth. Return the pork to the skillet. Reduce the heat to medium low; cook, flipping the pork halfway through, until cooked through and the liquid is reduced, 5 minutes.
- Meanwhile, preheat the broiler. Combine the butter, grated garlic and 1/4 teaspoon salt; spread on the bread. Transfer to a baking sheet and broil until toasted, 1 minute. Slice the bread and sprinkle with the parsley. Serve with the pork chops and vegetables.

- Preheat an oven to 400 degrees Fahrenheit. Lightly grease a baking sheet.
- In a shallow dish (like a pie plate) mix one egg and the milk together.
- In another shallow dish, mix together- bread crumbs, salt, pepper, paprika, onion powder and garlic.
- Dip each pork chop into the wet mixture and then into the dry mixture and then place on the baking sheet.
- Drizzle the pork chops with melted butter.

- Preheat the oven to 350 degrees F (175 degrees C).
- Season pork chops with garlic powder and seasoning salt. Dredge chops in flour; shake off excess. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into bread crumbs to coat both sides. Place the breaded chops, unstacked, onto a plate.
