Steps:
- Preheat oven to 350° and line a baking sheet with parchment paper
- Melt butter on medium-high heat until it boils, stirring constantly. Then, turn off the heat until the butter resembles an amber color. Let cool completely while making the cookie dough (next steps).
- In a large bowl, combine the wet ingredients; brown sugar, white sugar, vanilla extract, and egg with a whisk. When the brown butter is completely cooled, mix into the wet/sugar mixture.
- Then, in a small bowl combine the dry ingredients; flour, baking powder, and salt.
- Add the dry ingredients into the wet in 4 intervals, until fully combined.
- Fold in chocolate chips using a spatula.
- Using your hands, roll the batter into small balls and place on a prepared baking sheet.
- Bake at 350° for 8-10 minutes.
- Cool and serve.

- Add the pecans to a large, high-walled skillet. Toast over medium heat for 5-8 minutes, until fragrant and beginning to darken slightly, stirring continuously to prevent burning.
- Pour in the melted coconut oil and stir to combine. Bring to a low simmer and steep the pecans for 8-10 minutes, until the coconut oil is tinted brown and there is a strong nutty aroma. Stir occasionally to prevent burning. Remove the pan from the heat and let cool for 5-10 minutes, until warm to the touch but cool enough to handle. Strain out the pecans and reserve for another use. You should have about ½ cup of infused coconut oil.
- Add the warm coconut oil to a large microwave-safe bowl, along with the brown and granulated sugars, non-dairy milk, and vanilla. Whisk well to combine. Microwave for 20 seconds, just until the sugars have begun to dissolve.
- In a medium bowl, combine the flour, baking soda, and salt. Mix with a fork to combine.
- Sift the flour mixture into the wet ingredients and fold with a spatula to combine, being careful not to over-mix.
- Fold in the chopped chocolate and chocolate chunks until evenly distributed.
- Scoop the dough with a 2-ounce scoop onto 2 parchment-lined baking sheets, spacing at least 2 inches apart. Chill in the refrigerator for 30-60 minutes.
- Preheat the oven to 375°F (190°C).
- Bake the cookies for 15-18 minutes, until browned. Let cool for 10 minutes on the pans, then transfer to a wire rack to cool completely.

- Make the toffee: Line a baking sheet with parchment paper.
- In a medium nonstick saucepan over medium heat, melt the butter, brown sugar, and salt, stirring until evenly incorporated. If there are grainy lumps or if the fat starts to separate, add a couple splashes of water and stir vigorously to emulsify. Continue to cook, stirring constantly, until the mixture reaches 290°F (143°C), about 10-15 minutes.
- Pour the toffee onto the prepared baking sheet and spread out slightly with a spatula. Freeze until ready to use, about 30 minutes.
- Make the cookie dough: Add the butter to a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty. Watch carefully so the butter does not burn. Remove the pot from the heat.
- Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining 3 ice cubes and gently stir until melted.
- In a large bowl, combine the granulated and brown sugar, espresso powder, salt, and baking soda.
- Pour the brown butter into the sugar mixture and mix until combined. Don't worry if it looks separated.
- In a small bowl, whisk together the eggs and vanilla. Pour into the sugar and butter mixture and whisk until glossy and smooth.
- Add the flour and fold with a rubber spatula to incorporate until the dough has no visible flour streaks.
- Remove the toffee from the freezer (it should be a frozen disc) and break it into chunks that will fit inside a gallon zip-top bag. Double bag the toffee and seal both bags. With a rolling pin, break the toffee into small pieces.
- Fold the crushed toffee and chopped chocolate into the dough until evenly distributed.
- Using a large ice cream scoop or a ½ cup (65 g) measure, scoop the dough onto a parchment-lined baking sheet. Wrap the baking sheet in plastic wrap, but leave a small opening at the corner of the tray. Let the dough rest in the refrigerator for at least 36 hours. This will allow the flavor to develop and the dough to dry out a little as it rests, which will result in less spread when it bakes.
- When ready to bake, preheat the oven to 325°F (163°C). Line 2 baking sheet with parchment paper.
- Arrange the cookies on the baking sheets, leaving at least 2 inches (5 cm) of space between the cookies and away from the edges of the pan.
- Bake until the cookies are golden brown with crispy edges, but are still slightly soft in the center, 18-20 minutes.
- Immediately sprinkle the cookies with flaky sea salt. then let cool completely. The cookies will be very soft at first but will set after they are fully cooled.

- First make brown butter: place butter in a small saucepan over medium heat and stir until completely melted. Allow butter to come to a boil and then continue to cook while stirring occasionally while it bubbles and crackles as the moisture boils off. Keep cooking with frequent stirring until it reaches a deep golden colour. It will progress from golden yellow to tan and finally, brown. The crackling noises will fade, the bubbles will subside and a dense foam will form at the surface as the last bit of water squeezes out. Stir constantly until you see brown flecks come up through the foam. This whole process takes around 8-10 minutes. Immediately pour it into a large mixing bowl, then place it in the freezer for about 10 minutes until cool and thick. It should be cool enough that it is opaque and firm, but not hard. If you freeze it for too long, just leave it at room temperature for 10-20 minutes until it softens up.
- Beat butter with both sugars and vanilla in the bowl of a stand mixer fitted with the paddle attachment and beat on medium-high speed for 2 minutes until creamy, lightened and a bit fluffy. Scrape down the sides and bottom of the bowl halfway through mixing. Beat in egg until well incorporated and creamy. Beat in milk. Add flour mixture and mix on low just until mostly combined then mix in chocolate chunks and nuts (if you’re using them). Refrigerate the dough for 1-2 hours.
