Steps:
- Crack the egg into a microwave-safe cereal bowl and whisk in the milk. Season with salt and pepper. Cook in the microwave on 100% power for 1 to 2 minutes, or until cooked through.
- While the egg is cooking, toast the bread. Use a spoon to remove the cooked egg from the bowl and set it on one piece of toast. Top with a slice of cheese and the other piece of toast. Cook in the microwave until cheese is melted, about 15 seconds.

EGGS BENEDICTWICH

- Heat a nonstick skillet over medium heat. Fry the ham in 1 tablespoon of the butter until slightly charred, 2 to 4 minutes per side. Wipe the skillet clean and add the remaining tablespoon butter. When the butter is melted, fry the eggs over easy, and season with some salt and pepper.
- In a small bowl, toss together the baby spinach, lemon juice and some salt and pepper. Stack the ham on the bottom of the English muffin. Top with some of the dressed spinach, and then slide 1 fried egg on top. Ladle on some of the Easy Hollandaze sauce, close the muffin and serve.
- Place the eggs, lemon juice, Dijon and hot sauce in a blender and blend until just combined, about 1 minute. While the blender is still running, slowly stream in the warm, melted butter through the top hole, until thickened, about 15 seconds. Adjust seasoning with more lemon juice and some salt. Hold in a thermos if necessary.
BUNDESTAG EGG SANDWICH
Steps:
- Place butter in pan and heat on med-high. While pan is heating, prepare the plate. Break the braunschweiger and arrange on the pumpernickel. Top the braunschweiger with the onion. The butter should have browned by now, add the eggs, salt and pepper to taste, then water (to the side of the eggs), and cover. While the eggs are cooking, microwave the plated ingredients on high for 30 to 40 seconds, just enough to warm everything. The eggs are done when the whites are set. Place on top and serve.
ITALIAN EGG SANDWICH

- Heat 2 teaspoons of oil in a heavy small skillet over medium heat. Crack the egg into the skillet. Sprinkle with salt and pepper. Cover and cook until the white is firm and the yolk is almost set, about 4 minutes. Season with salt.
- Meanwhile, toast the bread until golden brown. Rub the garlic over the toast. Sprinkle with the Parmesan. Spoon the drained marinara sauce over the Parmesan. Top with the egg. Place the open-faced sandwich on a plate and serve.
- In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

- Heat butter in a small nonstick skillet until melted. In a small bowl, whisk the egg with a pinch of salt. Add egg mixture to skillet.
- Using a heatproof rubber spatula, gently pull the egg away from the sides of the skillet toward the center. As the eggs start to set, stir them gently until curds form, about 2 minutes.
- When egg is completely set, fold the egg into quarters and place on the bottom half of the English muffin or baguette. Add cheese, bacon, sausage, or herbs, as desired; top with remaining half of English muffin or baguette.
