Buttery Almond Pound Cake is one of the easiest from scratch cakes that I've ever made. Easy enough to mix up for a weeknight dessert and delicious enough for special occasions.

1/2 cup butter, softened plus more for pan
1 1/4 cups all purpose flour plus more for pan
1 1/4 cups sugar
2 eggs
1 1/2 teaspoons almond extract
1/4 cup milk
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1 tablespoon butter, melted
1 cup powdered sugar
1 1/2 tablespoons milk
1/2 teaspoon almond extract
1/2 cup sliced almonds (optional)

Steps:

  • Preheat oven to 325 Arrange oven rack to the center of the oven. Thoroughly grease and lightly flour a 6 cup loaf pan with butter.
  • To make the cake, combine the butter and sugar together in a large bowl. Beat with an electric mixer until fluffy crumbs form. Add the eggs and almond extract and beat until smooth. Add the milk and beat on low speed to combine. Add the flour, baking powder and salt. Beat until just combined.
  • Pour the batter into the prepared pan. Bake for 45- 55 minutes, or until golden on top and light brown on the edges. Cool in the pan on a wire rack for 15 minutes. Then place the cooling rack on top of the cake, hold the sides firmly, and invert the pan over the rack. The cake should drop smoothly out of the pan. Tap firmly on the pan with a wooden spoon, if necessary, to free the cake from the pan. Let the cake cool complete before slicing.
  • If you'd like to make the glaze, melt the butter in a small glass bowl in the microwave, about 15 seconds. Add the powdered sugar, milk and almond extract. Whisk together until smooth. The glaze should pour off the spoon in a white stream. Add 1 teaspoon more of milk to thin it or 1 or 2 tablespoons more of powdere

2 cups butter, softened
4 cups confectioners' sugar
6 eggs
1 teaspoon almond extract
3 cups all-purpose flour
1/2 teaspoon salt
Fresh raspberries and whipped cream, optional

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and confectioners' sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour and salt; gradually add to creamed mixture. Beat just until combined., Transfer to two greased 8x4-in. loaf pans. Bake 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pans to wire racks. Serve with raspberries and whipped cream if desired.

Very rich! One of my favourite cakes. This is good dressed up with frosting, served plain, or with fruit. I quadrupled this recipe, and baked it in two 9"x13" pans to make a cake for my father's 65th birthday party. Note: be sure the almonds are finely ground; if they seem somewhat coarse you should run them through the food processor until quite fine.

1 cup sugar
3/4 cup butter
3 large eggs
1 teaspoon almond extract
3 tablespoons water
1 cup flour
1 cup blanched ground almonds
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 325°F.
  • Butter and flour a loaf pan or small square pan (8"x8").
  • Cream the butter and sugar.
  • Beat in the eggs one at a time.
  • Beat in the almond extract and the water.
  • Stir together the flour, ground almonds and baking powder.
  • Stir this into the wet ingredients.
  • Pour evenly into the prepared pan.
  • Bake for 45 minutes for a loaf pan.
  • Bake for 50 minutes in the square pan, or in either case until a toothpick inserted in the centre comes out clean.

3 tablespoons sliced almonds, toasted
1 tablespoon sugar

Steps:

  • Blend 1 1/2 cups sugar and melted butter.
  • Beat in eggs.
  • Stir in almond and vanilla extracts.
  • Add salt and flour and mix well.
  • Spread batter evenly in a greased-and-floured, 9-inch round pan.
  • Sprinkle with toasted almonds and sugar for garnish.
  • Bake at 350 degrees for 30 to 35 minutes.

1 cup buttermilk

  • Preheat oven to 350°F.

  • Bake 1 hour or until toothpick inserted in center comes out clean.
  • Let cake cool in pan 10 minuts then remove from pan and cool on a rack.
  • Dust with powdered sugar.
