CHEESE CORNBREAD
This is almost like a cornbread version of macaroni and cheese¿and thus, it would be comforting and filling alongside tomato soup on a cold Fall day.

- Preheat the oven to 375 degrees F. Butter an 8-inch square baking pan and set aside.
- Combine the cornmeal, flour, sugar, kosher salt, baking powder and baking soda in a large bowl and set aside. Whisk together the butter, buttermilk and eggs in a bowl and stir to combine. Pour the buttermilk mixture into the cornmeal mixture and stir until smooth, then fold in the Cheddar cubes, grated Parmesan and 1/2 cup shredded Cheddar.
- Pour the batter into the prepared pan and bake for 25 minutes. Sprinkle the remaining 1/2 cup Cheddar on top of the batter and continue to bake until the cheese is bubbling, the cornbread bounces back when pressed with a finger and a cake tester comes out clean, 10 minutes more.

- Preheat oven to 400 degrees F. Grease a 9-inch pie dish with cooking spray or butter; set aside.
- To make the taco beef, heat the oil in a medium skillet over medium heat, then add the beef and taco seasoning and stir to combine. Cook, stirring to break up the beef, until browned and cooked through, about 6-8 minutes. Remove from heat and set aside.
- To prepare the cheddar sweet corn, in a medium bowl, stir to combine the milk, egg, 1 cup corn kernels, shredded cheddar, shredded monterey jack, breadcrumbs and sliced scallions; set aside.
- For the panko cheese topping, in a small bowl, stir to combine the panko, melted butter, cheddar cheese, monterey jack cheese, salt and pepper; set aside.
- To make the cornbread, in a large bowl, stir to combine the cornbread muffin mix, eggs, milk, cream style corn, corn kernels and scallions. Pour half of the batter into the pie plate, then top with 1/2 cup shredded cheddar cheese and 1/2 cup shredded monterey jack cheese. Pour remaining batter over and top with sliced jalapenos and another layer of 1/2 cup shredded cheddar cheese and 1/2 cup shredded monterey jack cheese.
- Bake for 5 minutes, then top the pie with the taco beef, then the cheddar sweet corn, then the panko cheese topping. Bake until the pie is set and the top is golden and crisp, about 35-40 minutes.
- Let cool 15 minutes then slice into wedges to serve.

- Place four 6 1/2-inch cast-iron skillets in the oven and preheat the oven to 425 degrees F.
- Whisk the cornmeal, sugar, baking soda and salt in a large bowl. Add the Parmesan and Cheddar and toss lightly to mix.
- Whisk the buttermilk, melted butter and eggs in a second bowl. Pour into the cornmeal mixture and mix until just combined.
- Carefully remove the skillets from the oven. Divide the remaining 2 tablespoons butter among the skillets and let it melt. Swirl the skillets to coat them with the butter and divide out the batter. Bake the cornbreads until golden on the edges and a tester inserted in the center comes out clean. 14 to 15 minutes. Let cool on a rack.

- For the cornbread topping, in a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt; set aside. In a medium bowl, whisk together the eggs, yogurt, milk, oil, honey. (Do not combine the wet and dry ingredients until ready to pour on hot meat mixture.)
- In a large (11 1/2-in to 12-in) cast-iron skillet, brown the beef until no longer pink over medium heat, about 5-8 minutes. Remove the meat from the pan to a paper-towel-lined plate and drain the fat (don’t wipe clean.) Add the onion and bell pepper and cook for 5-8 minutes until tender. Add the beans WITH the can juices, tomatoes, the corn, and the reserved cooked meat. Heat, stirring, until hot, about 3-5 minutes.
- While the meat and beans are heating, add the wet cornbread ingredients to the dry ingredients and stir 4-5 times and then add half of the grated cheese. Continue to stir until just combined. Level out the meat mixture in the skillet with a spatula and spoon the cornbread mixture over the top. Smooth so no (or only a few) spots of meat are peeking through. Bake for 20 minutes. Remove the skillet from the oven and top with the remaining cheese. Bake for 5 minutes more until the cheese is melted.
