A moist traditional cake studded with grace cherries!

175 g Butter (at room temp)
175 g Caster sugar
3 large Eggs
1 teaspoon vanilla extract
220 g Self Raising Flour
1 teaspoon Baking Powder
150 g glacé Cherries

Steps:

  • Pre-Heat the oven to Gas 4 / 180C
  • Grease and line a 2lb / 900g loaf tin - I use those loaf liners they are fantastic
  • WASH your Glace Cherries under the tap, dry and then roll lightly in self raising flour - you don't want sinking cherries!
  • Cream your butter and sugar until light and fluffy.
  • Add one egg at a time beating well, don't worry if it curdles a little just keep mixing and add a tablespoon of the flour. Then add the Vanilla extract!
  • Next add the baking powder and flour, mix well
  • Finally tip in the flour rolled cherries - mix through
  • Pop mix into tin, smooth top and bake on the middle shelf for approx. 1 hour - watch the top make sure it doesn't burn - if it browns too quickly pop a piece of foil loosely over the top
  • Test with a skewer - if it comes out clean it's baked
  • Remove from oven and cool on a wire rack! Then enjoy with a cuppa!

Easy madeira sponge loaf cake studded with cherries for a teatime treat.

175 g butter (soft)
175 g caster sugar (golden or white)
3 eggs (large)
1 tsp vanilla extract
200 g flour (self raising)
50 g ground almonds
1 tsp baking powder
200 g glace cherries (candied)
1 tsp butter (for the tin)

Steps:

  • Preheat the oven to 180 C/350 F/160 FAN/Gas Mark 4.
  • Grease the tin with the teaspoon of butter and line with baking parchment.
  • Wash the cherries, cut into halves and dry on kitchen paper.
  • In a food mixer or large bowl, cream the butter and sugar together until very soft and fluffy.
  • Beat the eggs individually and add them one by one to the cake batter, mixing well after each addition.
  • Use a tablespoon of the flour to mix with the cherries and add the rest of the flour, baking powder and the ground almonds to the batter.
  • Fold in the flour mixture with a metal spoon.
  • Put half of the batter in the bottom of the tin and spread into a layer.
  • Push half of the cherries in and repeat.
  • Bake for 50-60 minutes or until a skewer inserted into the middle of the cake comes out clean.
  • Leave it to cool for 5 minutes in the tin and then transfer to a cooling rack.
  • Wait until the cake is completely cool before slicing.

Simple easy Madeira Cake image

A simple Madeira cake that I make with my 3 year old son. He loves to help and knows this recipe of by heart. I've been making this recipe for about the last 20 years. We make this in a food processor.

Yield Makes 1 loaf cake tin

Number Of Ingredients 5

240 grams unsalted butter Or margarine. (Soft)
200 grams caster sugar (You'll need a little more at the end to sprinkle over the cake before baking)
grated zest and juice of 1 lemon
4 medium eggs (you could use 3 large, our chickens lay medium)
300 grams of self-raising flour

Steps:

  • Preheat oven to 170ºC/150ºC Fan/gas mark 3/325ºF
  • Cream the butter and sugar, and add the lemon zest and juice
  • Add the eggs a couple at a time with half of the flour each time
  • Transfer to a loaf tin (make sure you line and butter it)
  • Sprinkle a tablespoon of caster sugar over the top before putting it in the oven to bake. Bake for 1hr 15mins or until cake tester comes out clean.

Steps:

  • Pre-heat the oven to 180 C/160 C fan.Cream the 200g of butter and sugar along with the vanilla essence.
  • Crack the eggs in to the bowl and stir in, the slowly add the flour and baking powder, stir until golden.
  • Dice the glace cherries and gently fold in the glace cherries. Then grease two baking tins with the extra butter.
  • Put the tins in the oven for 50mins until risen. Then take the cake out of the oven and let it cool for 10mins. Spread the jam in onto the cake and sandwich the cake together. And sieve icing sugar on top for a nice finish.
