Provided by Girl Versus Dough

Time 2h18m

Number Of Ingredients 8

1/2 cup dry-roasted peanuts
1 1/2 cups Bob's Red Mill Gluten Free Honey Oat Granola
1/2 cup chopped dried apples
1/4 cup flax seeds
2 tablespoons chia seeds
1 cup medjool dates, pitted
1/2 cup natural creamy peanut butter
1/4 cup honey

Steps:

  • In a small saucepan over medium heat, toast peanuts 3 to 5 minutes until lightly browned and fragrant. Cool slightly, then chop coarsely. Add to a large bowl along with granola, dried apples, flax seeds and chia seeds. Stir mixture to combine, breaking up any large clusters of granola.
  • In a food processor, process dates until a smooth ball forms. Add to granola mixture along with peanut butter and honey. Use a wooden spoon or spatula to stir mixture until well combined.
  • Firmly and evenly press mixture into prepared baking pan. Cover with plastic wrap and chill at least 2 hours. Cut into bars.
  • Store bars covered in fridge for up to 2 weeks.

Chewy Apple Peanut Butter Granola Bars image

Simple, no-bake chewy apple peanut butter granola bars! Perfect as a snack or even for breakfast! Vegan and gluten free options!

Provided by Elena Tomasi

Categories     Breakfast/Snack

Time 20m

Number Of Ingredients 8

1 cup (100 g) pecans (roughly chopped)
1½ cup (150 g) rolled oats (or gluten free rolled oats)
1 cup (140 g) medjool dates (pitted)
¼ cup (75 g) honey (or agave nectar for vegan)
¼ cup (60 g) creamy peanut butter
1 cup (100 g) dried apples
1 teaspoon vanilla extract
1 teaspoon cinnamon powder

Steps:

  • Line a 8x8 inches (20x20 cm) baking pan with aluminum foil or parchment paper, leaving the foil to extend up the sides. This will make it easier to remove the granola bars from the pan. Brush lightly with oil to prevent sticking.
  • Spread the rolled oats and chopped pecans on a baking tray and toast them for 10 minutes, until they are slightly golden.
  • Transfer to a large bowl.
  • Process the dates in a food processor until they become a ball.
  • Add the cinnamon powder, crushed dates and chopped dried apples to the oats mixture.
  • In a small saucepan over low heat, warm the vanilla, honey, and peanut butter until runny.
  • Pour over the dry mixture and mix well until everything is evenly coated and the dates are disperse throughout.
  • Transfer the mixture to the baking pan and press down with a spatula or with your wet hands.
  • Cover the baking pan with aluminum foil and put it in the fridge for at least 2 hours (better overnight).
  • Remove the bars from the baking pan and cut into 12 even bars.
  • Store the chewy apple peanut butter granola bars in an airtight container in the refrigerator for up to 2 weeks.
  • Enjoy!

APPLE PEANUT BUTTER BARS

Apple Peanut Butter Bars image

Tart apples dipped in peanut butter have always been one of my favorite snacks. These peanut butter apple bars are an ode to my childhood favorite granola bars and my never-ending craving for apples and PB!

Provided by Dan Langan

Categories     dessert

Time 2h5m

Yield 12 bars

Number Of Ingredients 16

Nonstick cooking spray
5 tablespoons unsalted butter
1 medium tart apple, such as Granny Smith or Gala, cored and cut into 1/4-inch cubes (no need to peel)
1/3 cup plus 1 tablespoon granulated sugar
1 1/2 cups rolled oats
1/4 cup all-purpose flour
3/4 teaspoon fine salt
3/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/3 cup lightly packed light brown sugar
1 tablespoon pure vanilla extract
1/2 cup your favorite peanut butter
1 large egg, at room temperature
1 cup dried baked apple chips, broken into small pieces
1/4 cup white chocolate chips or semisweet chocolate chips
1/3 cup dried baked apple chips, broken into small pieces

Steps:

  • Make the bars: Preheat your oven to 350 degrees F with a rack in the center. Spray an 8-inch square baking pan with nonstick spray, line the bottom with parchment paper, then spray the parchment.
  • Melt the butter in a medium skillet and then pour into a medium heatproof bowl, reserving about 1 tablespoon of the butter in the skillet. Add the apples and 1 tablespoon of the granulated sugar to the skillet, toss and cook over medium heat until the apples are softened and slightly shrunken and most of the juice has evaporated, 3 to 5 minutes.
  • While the apples cook, whisk together the oats, flour, salt, cinnamon, and baking soda in a medium bowl and set aside.
  • In the medium heatproof bowl, stir the brown sugar, remaining 1/3 cup granulated sugar, peanut butter and vanilla into the melted butter. Add the egg and mix well to combine. Stir in the dry ingredients, mixing well, and then stir in the cooked apples and apple chips. The dough will be stiff.
  • Spread the dough into the prepared baking pan and smooth the top. Bake for 40 to 45 minutes, until evenly deep golden brown and the center feels firm to the touch. Place the pan on a wire rack and cool completely.
  • Finish the bars: Remove the cooled bar from the pan. Melt the white chocolate chips in the microwave in a small microwaveable bowl in 8 second increments, stirring well after each until melted, about 30 seconds. Transfer to a sandwich bag, snip off a small opening at the tip and drizzle the white chocolate over the surface of the baked bar. Sprinkle with the apple chip pieces. Cut in half and then cut each half into 6 bars. Store covered at room temperature for up to 4 days.

  • Preheat the oven to 350°F. Lightly grease a 9" x 13" pan., Stir together all the dry ingredients, including the fruit and nuts. (For best texture and easiest cutting, be sure the fruits and nuts are cut/chopped into small, fairly uniform pieces.) If using peanut butter, add it to the dry mixture and stir until combined. , In a separate bowl, whisk together the vanilla, melted butter or oil, syrup or honey, and water., Toss the wet ingredients with the dry until the mixture is evenly crumbly., Spread in the prepared pan, shaking the pan to evenly cover the bottom and patting down gently., Bake the bars for 25 to 30 minutes, until they're golden brown around the edges., Remove them from the oven, loosen the edges, and cool for 5 minutes., Use a knife (or bench knife) to cut the bars while they're still warm in the pan.
  • Alternatively, remove from the pan before cutting into bars; it helps to cut in half first, then loosen the bottom of each half with a turner/spatula before turning out onto a sheet of parchment to cut into bars., Wrap bars individually to store; or place in a single layer on a plate, and cover with plastic; or store in layers with parchment in between.

  • Stir the peanut butter, honey and coconut oil together in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture reaches a simmer. Continue to simmer for 1 minute, stirring often so that the bottom of the mixture does not burn. Remove from the heat.
  • Add the vanilla and salt, and stir until combined. Add in the oats and almonds, and stir until completely combined. (Optional step: If you would like the chocolate chips not to melt, I recommend chilling transferring the granola to the refrigerator at this point for about 15 minutes, or until it reaches room temperature.) Then stir in the chocolate chips until combined.
  • Press the granola firmly and evenly into the bottom of the prepared pan. (I use the bottom of a measuring cup to help press it down so that it’s nice and flat.) Sprinkle a few extra chocolate chips on top if you would like. Then cover and refrigerate the granola bars for about an hour or so, or until they are chilled.
