1 (10 ounce) package frozen broccoli, thawed and chopped coarse
2 cups shredded part-skim mozzarella cheese
2 cups shredded cooked chicken
1/4 cup pesto sauce
salt
black pepper
flour, for counter
1 lb pizza dough
2 tablespoons olive oil
kosher salt

Steps:

  • Position oven rack in middle position; preheat to 450°.
  • Pat broccoli dry and toss with mozzarella, chicken, and pesto; season to taste with salt and pepper.
  • On a floured counter, roll out dough to 12-inch round, about ¼ inch thick.
  • Mound filling over half of dough, leaving a 1-inch border around edge.
  • Brush edges of dough with water.
  • Fold other half of dough over filling and press edges to seal.
  • Grease baking sheet with 1 tablespoon oil; slide wide spatula under calzone and tranfer to baking sheet.
  • Use sharp knife or kitchen shears to cut 5 slits diagonally across top.
  • Brush remaining oil over top and sprinkle with coarse salt.
  • Bake 15-20 minutes, until golden.
  • Cool briefly, cut into slices and serve.

3 cups broccoli florets, chopped, lightly steamed
2 cups tomato sauce
1 tbsp olive oil
2 cups chicken breast(s), cooked, shredded
½ lb mozzarella cheese, grated
⅓ cup basil, fresh, chopped
1 lb frozen bread dough, defrosted
1 egg(s)
1 tbsp water

Steps:

  • In a large bowl, stir together the broccoli, tomato sauce, olive oil, shredded chicken, cheese and fresh basil.
  • On a lightly floured surface, divide dough into four pieces. Roll each piece into a 10-inch circle. Carefully place one circle on a lightly greased baking sheet. Spoon a fourth of the chicken mixture onto half of the circle. Brush edges of dough with water; fold dough over filling and pinch edges to seal. Repeat with remaining dough and filling.
  • With a sharp knife, make a small slash on each calzone; this will let any steam escape. Beat egg and water; brush over calzones. Bake at 400°F (200°C) for 18-22 minutes or until golden brown.

1 ½ cups water
1 ½ cups uncooked instant rice
2 large cooked chicken breasts, cut into 1-inch cubes
1 head broccoli, cut into florets
2 (10.5 ounce) cans condensed cream of broccoli soup
1 cup milk
1 tablespoon Progresso Italian Style Bread Crumbs PLB
1 teaspoon garlic powder
⅛ teaspoon ground black pepper
1 (8 ounce) package shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring water to a boil in a saucepan. Add rice, stir, cover, and remove from the heat. Let sit until water is absorbed, about 5 minutes. Fluff with a fork.
  • Transfer rice to a casserole dish and mix with chicken and broccoli.
  • Combine condensed soup, milk, bread crumbs, garlic powder, and pepper in a mixing bowl; mix until well combined. Add to the casserole dish along with 1/2 of the Cheddar cheese; mix to combine. Sprinkle remaining Cheddar over top.
  • Bake, uncovered, in the preheated oven until heated through and bubbly, about 30 minutes.

  • Heat oven to 375°F. Spray 2 large cookie sheets with cooking spray. Make broccoli as directed on bag. Drain on paper towels, and let cool slightly.
  • Meanwhile, unroll pizza crust, and cut in half crosswise. Place half on each cookie sheet. Press each half into 9-inch square.
  • Divide chicken between crusts, and place diagonally on half of crust leaving 1/2-inch rim, covering corners as well. Top chicken with cheese, pressing cheese down firmly. Top with broccoli.
  • Working from opposite point, gently fold and stretch dough over filling; press edges with fork to seal. Poke several holes in top of each calzone with fork. Brush top of calzone with oil, and sprinkle with salt to taste. Bake 23 to 27 minutes or until golden brown. Cut each calzone into fourths.
