CHICKEN WITH CRANBERRY SAUCE

2 tablespoons butter
1 1/2 teaspoons dried thyme
Coarse salt and ground pepper
4 bone-in chicken breasts (8 ounces each)
1 medium onion, finely chopped (about 1 cup)
1/2 teaspoon dried sage
2 cups reduced-sodium chicken broth
1 cup cranberries
1/4 cup sugar
1 teaspoon cornstarch (mixed with 1 tablespoon water)

Steps:

  • Preheat oven to 450 degrees. In a small bowl, mix 1 tablespoon butter, 1 teaspoon thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Rub evenly under chicken skin. Place on a rimmed baking sheet; roast skin side up until skin is golden brown and meat is cooked through, about 25 minutes.
  • Meanwhile, melt remaining tablespoon butter in a large saucepan over medium heat. Cook onion, stirring occasionally, until golden, about 8 minutes. Add sage and remaining 1/2 teaspoon thyme; cook 1 minute. Add broth; simmer until reduced to 1 1/2 cups, 10 to 15 minutes. Strain mixture; return to saucepan.
  • Add cranberries and sugar; boil until berries burst, 5 to 8 minutes. Whisk in cornstarch mixture; return to a boil. Cook until slightly thickened, 1 to 2 minutes. Remove from heat (sauce will thicken as it stands). Season with salt and pepper. To serve, spoon sauce over chicken.

6 skinless, boneless chicken breasts
1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
  • Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

My mom found this recipe years ago, and now it's become a cheap and easy weeknight favorite at my house.

1 tablespoon butter
1 small onion, chopped
3 pounds chicken thighs
⅔ cup ketchup
⅓ cup brown sugar
1 tablespoon apple cider vinegar
1 teaspoon dry mustard powder
1 (8 ounce) can whole berry cranberry sauce

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter and onion in a 9x13 inch baking dish, and bake in the preheated oven, stirring occasionally, until the onion is translucent, about 15 minutes. Remove the dish from the oven, push the onion over to one end, and place the chicken thighs in the dish in a single layer. Return to the oven and bake for about 25 minutes.
  • Stir together the ketchup, brown sugar, vinegar, mustard powder, and cranberry sauce in a bowl. Remove the chicken from the oven, and scoop the cooked onions into the cranberry mixture. Spoon the mixture over the chicken thighs, and return to the oven.
  • Bake until the cranberry mixture is slightly caramelized and the chicken is done, about 20 more minutes. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C).

1 cup shredded Colby-Monterey Jack cheese
2/3 cup condensed cream of chicken soup, undiluted

1/2 cup chopped sweet red pepper
1/4 cup chopped water chestnuts
1 can (5 ounces) white chicken, drained, or 3/4 cup cubed cooked chicken
2 tablespoons chopped onion

Steps:

  • Arrange crescent rolls on a 12-in. pizza pan, forming a ring with pointed ends facing the outer edge of pan and wide ends overlapping., Combine the remaining ingredients; spoon over wide ends of rolls. 2 1/2 cups cranberries, picked over
2/3 cup sugar
2/3 cup water
3/4 cup sugar
1/3 cup water
4 large egg whites
2 1/2 cups well-chilled heavy cream
1/3 cup light corn syrup
1/4 cup sugar
1/2 cup cranberries, picked over
mint sprig (for garnish)

Steps:

  • Make the cranberry mixture---------------.
  • In a heavy saucepan combine the cranberries, the sugar, and the water and bring the mixture to a boil, stirring until the sugar is dissolved.
  • Simmer the mixture, stirring occasionally, for 5 minutes, or until it is thickened, and let it cool completely.
  • Make the Italian meringue-------------------.
  • In a small heavy saucepan combine the sugar and the water and bring the mixture to a boil, stirring until the sugar is dissolved.
  • Boil the syrup, washing down any sugar crystals clinging to the side of the pan with a brush dipped in cold water, until it registers 248°F on a candy thermometer and remove the pan from the heat.
  • While the syrup is boiling, in the large bowl of an electric mixer beat the egg whites with a pinch of salt until they hold soft peaks, with the motor running add the hot syrup in a stream, beating, and beat the meringue at medium speed for 8 minutes, or until it cools to room temperature.
  • Fold the cranberry mixture into the meringue gently but thoroughly.
  • In another bowl with cleaned beaters beat the cream until it just holds stiff peaks and fold it into the cranberry mixture gently but thoroughly.
  • Spoon the soufflé into a 2 1/2-quart (8-inch diameter) freezer-proof glass serving bowl, smoothing the top, and freeze the soufflé, its surface covered with plastic wrap, overnight.
  • The soufflé may be made 3 days in advance and kept covered and frozen.
  • Make the spun sugar wreath-----------------.
  • In a small heavy saucepan combine the corn syrup and the sugar, bring the mixture to a boil over moderate heat, stirring until the sugar is dissolved, and boil the syrup until it is a golden caramel and registers 320°F on a candy thermometer.
  • While the syrup is boiling, oil lightly a 12 inch-square sheet of foil and on it arrange the cranberries in a 6-inch-wide wreath shape.
  • Remove the pan from the heat and let the syrup cool for 30 seconds.
  • Dip a fork into the syrup and drizzle the syrup over the cranberries, repeating this procedure until the cranberries are covered with the syrup and a solid wreath is formed.
  • (If the syrup becomes too thick to drizzle from a fork, reheat it over moderate heat until it is the right consistency.) Let the wreath cool completely.
  • The wreath may be made 2 hours in advance (preferably not on a damp day) and kept in a cool, dry place.
  • Pry the wreath gently from the foil, arrange it on the soufflé, and garnish it with the mint sprigs.

2 whole wheat tortillas (8 inches), room temperature

1/2 cup mayo
2 Tbsp honey Dijon mustard
1/2 tsp course black pepper
2 cups cooked chopped chicken (or turkey)
1/2 cup thinly sliced celery
3 Tbsp snipped fresh parsley
1/2 cup Craisins 4 oz. grated Mozzarella cheese (use Swiss if using turkey)
1/4 cup chopped pecans
1 egg white

Steps:

  • Preheat oven to 350 Combine all ingredients except the crescent rolls and egg white in a bowl and set aside. Separate crescent roll dough into triangles. With wide ends facing toward the center, arrange 8 triangles in a circle on a round baking stone or a pizza baking sheet. Corners of wide ends should touch. It will look like a flower. Take remaining 8 triangles and match wide end to wide ends with points facing the center of the baking stone or baking sheet. Scoop mixture onto the wide ends of the dough making a circle. Weave dough, outside piece, inside piece, alternating all the way around to make a wreath. Brush egg white over wreath. Bake at 350 20-25 minutes or until browned. Serve.
