I have been making this for over 10 years and is the most requested recipe I have! This is everyone's favorite chicken dish I make! It's a nice change from "ordinary" chicken! Goes well with steamed broccoli. (Note: This is a "Diane" recipe, therefore has a mustard taste to it!!)

4 large boneless skinless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons chopped chives
1/2 lime, juice of
2 tablespoons brandy
3 tablespoons chopped fresh parsley
2 teaspoons Dijon mustard
1/4 cup chicken broth

Steps:

  • Place chicken breast halves between wax paper and pound slightly with mallet.
  • Sprinkle with salt and pepper.
  • Heat 1 Tbsp each oil and butter in large skillet.
  • Cook chicken over high heat 4 minutes each side.
  • Do not cook longer or they will be dry.
  • Transfer to a warm serving platter.
  • Add chives, lime, brandy, parsley, and mustard to pan, whisking constantly for 15 seconds.
  • Whisk in broth.
  • Stir until sauce is smooth.
  • Whisk in remaining butter and oil.
  • Pour sauce over chicken and serve immediately.

Looks like a company meal but cooks up in a hurry. The page in my cookbook is well stained and scribbled having made this many times over the years. The final flavor of this dish really comes from the mustards choosen. I tend to like stronger flavors and look for a nice spicy whole-grain mustard. I often double the sauce when serving this with rice or couscous. Bon Appettit!

1 lb boneless skinless chicken breast
2 teaspoons oil
2 tablespoons shallots, finely minced or grated
1 teaspoon cornstarch
1 cup fat free chicken broth, divided
1 1/2 tablespoons balsamic vinegar
1 tablespoon whole grain mustard
1 1/2 teaspoons Dijon mustard
4 canned artichoke hearts, quartered
4 teaspoons fresh tarragon (chopped) or 1 teaspoon dried tarragon
salt and pepper

Steps:

  • Place the chicken breasts between 2 sheets of waxed paper and pound into 3/8 inch thickness. Make them thicker if desired, just be certain the breasts are an even thickness for cooking purposes. Season the chicken with a bit of salt and pepper.
  • Heat 1 teaspoon of oil in a large non stick skillet over medium high heat. Cook chicken until the outside is golden brown in color and the breast is cooked through, about 2-3 minutes per side. Plate the cooked chicken and cover to keep warm. You can also keep it warm in a 200 degree oven.
  • In the same pan used to cook the chicken, add the remaining teaspoon of oil and 1 tablespoon of the chicken broth. Cook the shallots until they are translucent but not browned.
  • Mix the cornstarch with a tablespoon of the chicken broth. Add the remaining broth to the pan with the scallions. Add the constarch & broth mix to the pan and bring the liquid to a boil, stirring while the mix thickens.
  • Mix in the two mustards and vinegar making sure they are well incorporated. Stir in the tarragon and artichokes. Let the sauce simmer 3 to 5 minutes until the artichokes are warmed through.
  • To plate, spoon sauce over warmed paillards.
  • Garnish with additional tarragon if desired.

4 6 ounce chicken breasts, butterflied and pounded with a meat tenderizer to 1/4inch thick
Salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
3 tablespoons chopped shallots
2 ounces fine brandy
1/4 cup white wine
1 tablespoon Dijon mustard
3/4 cup veal stock
1/2 cup heavy cream
3 tablespoons chopped fresh chives

Steps:

  • Since each pounded, flattened chicken should have a large circumference, it will be necessary to cook the four breasts one at a time, setting each aside on a warm platter as you finish those that remain or use two pans to cook two simultaneously.
  • Season the chicken with salt and pepper. Heat a large, heavy skillet over medium heat. Add 1/2 tablespoon of butter to the hot pan and heat the butter until it begins to foam. Add the first
  • breast and sear, cooking for 3 to 4 minutes on a side before turning it over and allowing another 4 minutes on the second side. Remove the chicken from the pan and place on a warm platter. Repeat for the remaining chicken breasts, adding butter to the pan and sauteeing both sides. After all the chicken has been cooked and removed from the pan, add the shallots and cook two minutes until translucent. Lower the heat, move the pan away, and cautiously add the brandy. Being careful not to flame the brandy, return the pan to the stove, and over low heat, allow it to cook off. Add the white wine to the pan, raise the heat, and bring quickly to the boil. Stir in the mustard. Allow this to cook for 1 minute before adding the veal stock. Cook for 2 to 3 minutes more. Add the cream. Bring just to the boil. Remove from the heat and stir in the chives.
  • Place the ovenproof platter of chicken breasts in a preheated 350 degree oven for 1 to 2 minutes to reheat them very quickly before placing them on individual dishes and topping with some of the Diane Sauce. Serve with garlic mashed potatoes.
