- In a large skillet, cook beef and garlic over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomato paste, chili powder, pepper sauce, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Keep hot until serving., Grill or broil hot dogs until heated through. Place on buns; top with chili. Sprinkle with onion and cheese if desired.

There is a vast difference between the chili you cook and serve on its own and the chili that you slap on a chili dog. The texture and taste have to compliment the dog using smaller amounts so it won't explode all over your face. This chili is our perfect double-dog-dare-you chili for use on hot dogs. Yes, they are hot dogs, not franks. Franks lived in France from the third to the fifth century on the banks of the Rhine River. If you must call them something other than hot dogs, try 'weinahs,' that works for us in the north.

Steps:
- Place ancho chiles into 1 cup boiling water and set aside until softened, about 15 minutes. While chiles are soaking, place bacon in a large saucepan and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain excess grease but reserve 2 tablespoons bacon drippings in the pan.
- Cook and stir white and red onion in bacon drippings with bacon over medium heat with a pinch of salt until onions are translucent, about 5 minutes; stir in garlic and cook until softened, about 1 more minute. Pour in 3 cups boiling water and stir in beef chuck, mixing the meat with the water to break it apart. Bring to a boil and reduce heat to low.
- Stir in tomato paste and beef bouillon granules until the granules dissolve; allow mixture to simmer while you complete remaining steps.
- Place soaked ancho chiles and their liquid, spicy brown mustard, chili powder, Worcestershire sauce, cumin, garlic powder, adobo seasoning, and paprika into a blender and blend until smooth; pour mixture into the chili. Use a little water to dissolve remaining mixture in blender and pour into the chili.
- Bring chili to a slow boil over medium-low heat and stir in kidney beans and masa harina. Reduce heat to low; allow to simmer until thick and the flavors have blended, at least 45 more minutes. Season with salt and black pepper. If chili is too thin, mix in more masa harina.

- Preheat the broiler.
- Brown the franks in a small skillet over medium heat. Lightly toast the buns under the broiler. Put the franks on the buns and spoon on a bunch of chili. Add the cheese all over the top, then heat in the microwave to melt the cheese, 25 to 35 seconds. (Or if you're using an ovensafe plate, place it under a low broiler until the cheese melts, about 1 minute.) Sprinkle with the onion and dive in.
- In a large, heavy pot, brown the ground beef with the garlic over medium heat until the beef is totally cooked, 8 to 10 minutes. Drain off most of the excess fat, leaving a little behind for moisture and flavor. Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally; if the liquid level seems low, add up to 1 cup water to keep it from burning.
- After an hour, stir in the kidney and pinto beans. In a small bowl, combine the masa harina with 1/2 cup water and stir together with a fork until it's smooth. Pour the masa mixture into the chili. Stir together well, then taste the chili and adjust the seasonings. Simmer the chili for another 10 minutes to thicken, then turn off the heat and let it cool.
- Fill freezer bags with 2-cup portions and freeze them flat for easy stacking (or freeze in other freezer-safe containers).

After working at A&W Hot Dogs, my husband loved their Chimi Chili Dogs, so we came up with our own version. ery simple to make, and can be stored in the freezer for when those "munchies" come to call.

- Place 1 hot dog in center of each tortilla.
- Spread 1/4 cup chili over each hot dog.
- Place 1/8-1/4 cup cheese on each (to your preference).
- Fold bottom of tortilla up over hot dog, and then fold in the sides.
- Roll up remaining tortilla.
- Place seam side down.
- Wrap each chimi chili dog in plastic wrap and place in fridge for 1-2 hours, or freeze at this point.
- Heat 1 inch of oil to 350 degrees Farenheit.
- Place chimi chili dog seam side down in hot oil and cook 2-3 minutes on each side, or until golden brown.
- To use frozen: Thaw and cook as directed above, or, for quick preparation, heat for 2-3 minutes on high in microwave.

CHILI DOGS

- Put a skillet over medium heat and drizzle in a 2-count of olive oil. When the oil gets hazy, add the onion and garlic and cook, stirring, until it is soft and translucent, about 5 minutes. Add the ground beef, breaking it up with the back of a spoon, and cook until nicely browned, about 10 more minutes. Stir in the ketchup, chili powder, and mustard and simmer for 15 minutes until thickened. Season with salt and pepper.
- While the chili is cooking, get the grill going. Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Take a few paper towels and fold them several times to make a thick square. Blot a small
- amount of oil on the paper towel. Then carefully and quickly wipe the hot grates of the grill to make a nonstick grilling surface.
- Bring a pot of water up to a simmer and parboil the dogs for about 5 minutes. Take them out of the water, pat them dry, and grill them just long enough to mark them. (That'll give them a grilled flavor too.) Brush the insides of the rolls with olive oil and lay them face down on the grill; cook until toasty. To serve, put a dog in each roll and top with the chili and some Cheddar.

- Heat oil in a large skillet over medium. Add onion and cook, stirring occasionally, until soft and golden in places, 8 to 10 minutes. Add garlic; cook 30 seconds more. Add ground beef and season with salt. Increase heat to medium-high and cook, breaking into bite-size pieces and stirring occasionally, until meat is browned in places and just cooked through, 6 to 8 minutes. Stir in cocoa, cinnamon, and allspice; cook 1 minute. Stir in tomato sauce, 1 cup water, vinegar, Worcestershire, and chili powder. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until thick and darkened slightly, 18 to 20 minutes. Remove from heat; cover to keep warm.
- Meanwhile, bring 2 inches of water to a boil in a large saucepan. Add franks, reduce heat to low, and simmer until plump and hot, about 5 minutes. Drain franks and place in rolls. Top each with chili, sprinkle with onion, drizzle with mustard, and top with cheese. Serve immediately.
CINCINNATI CHILI DOGS
My husband grew up in southern Ohio where Cinc'y Chili reigns supreme! I first became acquainted with it some 16 years ago on on honeymoon. YUM. The rest is history. Whenever we are visiting family and friends we stop for a bowl & dog, whether we are hungry or not. Authentic Cinc'y dogs are 100% pork although here in Chicago we have been known to use 100% beef, they both work but no other substitutes are quite the same. For the full on experience, all the other ingredients are NOT optional! :D We make our own Cinc'y chili at home using the Recipe #249986. Cook time does not include making the chili ahead of time (4 hours minimum). Cook & prep is enough time to cook & assemble the dogs. Enjoy!

- Make Recipe#249986, this will take several hours to reduce down to the proper consistency.
- Dice the onions and grate the finely grate cheddar cheese. TIP: place the cheese in the freezer for 15 minutes before grating and it will be easier to work with.
- Gently simmer the hotdogs until warmed through and hot, do not boil them to death! They just have to be heated through.
- Open up your hotdog bun, squirt with yellow mustard, add the hotdog, top with Chili, onions & cheese!
- Grab a bunch of napkins cuz this gets messy! Enjoy!

"CHILI DOGS"

- Combine the refried beans, chilies, 1/4 cup water, and optional cumin in a medium saucepan. Cook gently until heated through.
- Warm the hot dogs according to package directions. If you'd like, warm the rolls (not necessary if they are fresh).
- Place a hot dog in each roll and spread plenty of the chili sauce on either side of it (about 2 tablespoons per serving). If using tortillas, place a hot dog toward one edge of the tortilla, spread the rest of the tortilla with chili sauce, and roll up. You will end up with more chili sauce than you will need-save the rest for making simple burritos later in the week or use as a bean dip for tortilla chips.
