- TO MAKE CHILI MAYONNAISE:.
- Whisk together all ingredients in a small bowl, cover and refrigerate for at least 30 minutes to allow flavors to meld.
- TO MAKE SHRIMP SALAD:.
- Combine the shrimp, celery and red onion in a large bowl.
- Add the red chili mayonnaise and gently fold to combine, seasoning with salt, pepper & crushed red pepper flakes.
- *Can be made up to 8 hours in advance and stored covered in the refrigerator.
- TO MAKE SANDWICH:.
- Heat a grill, grill pan or preheat the broiler.
- Butter both sides of each roll and season with salt and pepper.
- Grill butter side down or broil butter side up until lightly golden brown.
- Divide the shrimp salad among the rolls and top with some of the blue corn chips.

- Put shrimp in a large resealable plastic bag. Whisk olive oil, lemon juice, Worcestershire sauce, garlic, oregano, salt, and black pepper in a small bowl. Reserve 1/2 cup marinade for vegetables; pour remainder over shrimp and turn to coat. Seal bag. Marinate for 10 minutes.
- Preheat oven to 450 degrees F (230 degrees C). Place 1 rack in center position and another 4 inches from broiler. Line a baking sheet with aluminum foil and spray with cooking spray.
- Toss chickpeas, tomatoes, cucumber, and onion with reserved 1/2 cup marinade on the prepared baking sheet and spread in an even layer.
- Roast on center rack until vegetables begin to pucker and brown, 15 to 20 minutes.
- Remove baking sheet from oven and turn oven to broil. Push vegetables to the middle of the pan. Remove shrimp from marinade, allowing excess liquid to drip off, brush off garlic, and set on top of vegetables. Discard marinade.
- Broil shrimp on top rack, flipping once, until bright pink and cooked through, 1 to 2 minutes per side.
- Serve shrimp and vegetables with pan juices on top of romaine lettuce; top with feta cheese and parsley.

- Preheat the oven to 325 degrees F (165 degrees C).
- Layer shrimp evenly on a baking sheet and season with 1 tablespoon seafood seasoning.
- Bake in the preheated oven until pink, 6 to 10 minutes depending on size. Remove from oven and let cool until safe to handle.
- Remove and discard shrimp shells. Chop shrimp into bite-sized pieces and place into a serving bowl. Add grapes, celery, dill, and chives.
- Combine mayonnaise, lemon juice, yogurt, and remaining 1 tablespoon seafood seasoning in a separate bowl. Add dressing to shrimp mixture as desired and stir to coat. Store in the refrigerator to cool salad before serving, about 30 minutes.
