CHRISTMAS BREAKFAST CASSEROLE



Christmas Breakfast Casserole image

This cheesy ham- and bacon-filled breakfast casserole is the perfect make-ahead breakfast for Christmas morning-or any time you need to feed a crowd.

1 (32-ounce) bag of frozen tater tots
1 pound diced ham
1/2 cup bacon bits
1 1/2 cups, plus 1/2 cup cheddar cheese (shredded)
8 eggs
1 (10.5-ounce) can of cream of mushroom condensed soup
1 cup of milk
1/3 cup sour cream
1 teaspoon ground black pepper
1 teaspoon season salt
1 teaspoon onion powder
2 teaspoons hot sauce
1 red bell pepper (diced)
1 green bell pepper (diced)

Steps:

  • Preheat the oven to 375 F. Grease a 9 x 13-inch casserole dish with cooking spray.
  • Spread the tater tots, bacon, ham, and 1 1/2 cups of cheddar cheese into the casserole dish. Toss gently with your hands or a large spoon so that all of the bacon, cheese, and ham is evenly dispersed among the tater tots.
  • In a medium-sized bowl, whisk together the eggs, cream of mushroom soup, milk, sour cream, pepper, salt, onion powder, and hot sauce.
  • Pour the egg mixture evenly over the top of the tater tot mixture. Cover with aluminum foil and place in the oven. Bake for 45 to 50 minutes or until the eggs are almost completely set.
  • Remove the aluminum foil. Top the casserole with the remaining 1/2 cup of cheddar cheese and evenly distribute the red and green bell peppers.
  • Turn the heat of the oven up to 425 F and cook for 20 more minutes, or until the cheese is melted, the eggs are completely set, and the edges have browned.
  • Serve with a nice slice of toast and some fruit for a beautiful and complete breakfast!

7 slices white bread, crusts removed and cubed
2 cups shredded cheddar cheese
6 large eggs, lightly beaten
3 cups 2% milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked and crumbled

Steps:

  • In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

This recipe is great to prepare on Christmas Eve and bake on the morning of Christmas Day.

Number Of Ingredients 12

1 pound bacon
2 onions, chopped
2 cups fresh sliced mushrooms
1 tablespoon butter
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
¼ teaspoon garlic salt
½ teaspoon ground black pepper
4 eggs
1 ½ cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Steps:

  • Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain and set aside. Add the mushrooms and onion to the skillet; cook and stir until the onion has softened and turned translucent and the mushrooms are tender, about 5 minutes.
  • Grease a 9x13-inch casserole dish with the tablespoon of butter. Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with crumbled bacon, then add the onions and mushrooms.
  • In a mixing bowl, beat the eggs with the milk and parsley. Pour the beaten eggs over the casserole and top with grated cheese. Cover and refrigerate overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven for 1 hour or until set.
